These marinated red onions pair perfectly with grilled fish or chicken - or you could add them to salads or wraps!

1 medium red onion, approx 8oz
¾ cup white wine vinegar
2 tbs lemon juice
2 tsp dried oregano
½ tsp dried thyme
½ tsp low carb sweetener, granular
½ tsp salt

Steps:

  • Peel and halve the onion, then cut into thin slices.
  • Place them in a saucepan, cover in water, and bring to the boil. Cook for 5 minutes, then drain and let cool.
  • Mix the remaining ingredients together and stir well.
  • Place the onions in a container, and pour over the vinegar mixture.
  • Leave to marinate overnight. Store in the fridge.

1/4 cup sliced green onion
2 garlic cloves, minced
1 teaspoon sugar
1 teaspoon sweet Hungarian paprika
1 teaspoon dry mustard
1/2 teaspoon dried tarragon, crumbled
1/2 teaspoon dried thyme, crumbled
1/2 teaspoon dried oregano, crumbled
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 cup vegetable oil
1 lb red onion, peeled and cut into thin rings

Steps:

  • Mix first 11 ingredients in large nonaluminum bowl; whisk in oil in thin stream.
  • Add onions and toss well.
  • Cover and refrigerate up to 7 days before serving.

Avocado may not be an authentic addition, but we like it - change the vegetables to suit what you have and what you like. You may have to adjust the salt, depending on whether you use olives and feta cheese or not.

4 green onions, chopped

1/4 cup feta cheese, crumbled (optional)
1/2 cup canned artichoke heart, drained and chopped (optional)
