Great way to have the favorite meal of meat loaf and mashed potatoes in one. This is great for the kids. Serve with green beans.

- Preheat oven to 350 degrees F (175 degrees C).
- In a skillet over medium heat, cook and stir the ground beef and onion until beef is evenly brown. Drain, and allow to cool slightly.
- In a bowl, mix the cooked beef and onion, egg, ketchup, and Worcestershire sauce.
- Spread the corn in the bottom of the pie crust. Layer with the beef mixture. Spoon the mashed potatoes over the beef, and top with cheese.
- Bake 30 minutes in the preheated oven, until cheese is bubbly and lightly browned.

- Heat oven to 350°F. Line 9x5-inch loaf pan with foil; spray foil with cooking spray.
- Place vegetables in food processor. Cover; process 5 to 7 times or until vegetables are broken up into small pieces. Set aside.
- In large bowl, mix together vegetables and remaining meatloaf ingredients until well combined. Shape mixture into 8x4-inch loaf. Place in pan.
- In small bowl, stir together Balsamic Glaze ingredients. Spread mixture over meatloaf.
- Bake uncovered 1 hour to 1 hour 10 minutes or until meat thermometer inserted in center of loaf reads 160°F. Drain; let stand 10 minutes. Cut into slices to serve.

MEATLOAF SHEPHERD'S PIE
Steps:
- Gather the ingredients.
- Preheat the oven to 375 F. In a large skillet, melt the butter over medium heat.
- Add the onion and garlic and sauté for 4 to 5 minutes, or until the onions are turning translucent.
- Add the carrots and sauté for 4 minutes, or until the carrots thaw.
- Add the crumbled meatloaf and sauté for 4 to 5 minutes longer until the mixture is hot and combined.
- Add the flour and sauté for 3 more minutes.
- Add the broth, ketchup, mustard, Worcestershire sauce, marjoram, and salt and pepper to taste. Stir. Simmer the mixture for 10 minutes, stirring occasionally.
- Meanwhile, heat the refrigerated potatoes as directed on the package, or use leftover mashed potatoes, if available.
- Add the peas and sour cream to the beef mixture in the skillet and stir to combine.
- Pour into a 2 1/2-quart casserole dish and spread the mixture level.
- Top with the mashed potatoes and spread to cover, then run a fork over the potatoes to make small peaks that will brown in the oven. Sprinkle with the Parmesan cheese.
- Bake the shepherd's pie for 25 to 35 minutes or until the filling is bubbly and the potatoes are golden brown on top. Let cool for 10 minutes before serving.

- Press meat mixture into a 9-inch pie plate coated with cooking spray. Stir together vinegar and remaining 2 tablespoons ketchup in a small bowl. Spread vinegar mixture evenly over meatloaf, and bake in preheated oven until golden and cooked through, 25 to 30 minutes.
- While meatloaf bakes, prepare Cauliflower Puree: Place cauliflower in a microwavable bowl, and cover with plastic wrap. Microwave on high until very tender, about 5 minutes. Drain cauliflower on paper towels. Place steamed cauliflower in a food processor, and pulse until finely chopped. Add Cheddar, Parmesan, cream, salt, pepper, and 2 tablespoons of the butter, and process until smooth and creamy.
- When meatloaf is cooked through, remove from oven, and carefully drain any excess liquid from bottom of pie plate. Turn oven broiler to low broil. Spread cauliflower mixture evenly over meatloaf, and dot with remaining 1 tablespoon butter. Broil on low until lightly golden, about 10 minutes. Let stand 5 to 10 minutes. Sprinkle with parsley, and serve.
