Steps:
- Preheat oven to 350 degrees F; line jelly roll pan with foil; coat with cooking spray.
- In bowl, mix beef, eggs, 1/2 cup pizza sauce, onion, breadcrumbs, Parmesan and parsley.
- Place mixture on pan; shape into 8x4 inch loaf.
- Bake until meat thermometer inserted into center registers 160 degrees F, about 55 minutes.
- Spread remaining pizza sauce over meatloaf; sprinkle with mozzarella.
- Bake until cheese is melted, about 5 minutes.
- Let stand 10 minutes before serving.
- If desired, serve with pasta and garnish with parsley sprigs.

GRILLED ITALIAN MEATLOAF SANDWICHES

- Lightly mix the ingredients together in a large bowl.
- Form the meatloaf on a grilling plank.
- Place the grilling plank over medium direct heat (or indirect heat if not using a Big Green Egg)
- The meatloaf is cooked when the meat registers 165 degrees F in the center.
- Serve on a Cobblestone Bread Co (TM) Toasted Onion Roll and melt mozzarella cheese over top.
LEFTOVER MEATLOAF PARMESAN
I have meatloafs in the freezer. Nothing goes to waste. I have to either slice up the leftover meatloaf and place it back in the freezer as a meal or come up with something do with it. Here is one idea....I'm sure their are 100's

Steps:
- Place your slices of meatloaf flat on the bottom of a 9 X 13 cooking dish (smaller if you have less pieces), touching but not overlapping.
- Mix together tomato sauce, garlic, seasoning and pour over the meatloaf.
- Place a slice of cheese over each meatloaf slice (you can use shredded cheese if you want).
- Warm in a 350F over until the cheese is browned and the sauce is bubbly.
ITALIAN MEATLOAF ROLL-UP
Adapted from a recipe from Rachael Ray's 30 Minute Meals. Original recipe calls for raisins and pine nuts - not my thing. I have prepared it with ground beef and pork only, no veal. Easy to prepare on a weeknight!!

- Pre-heat oven to 350°F.
- Mix meat and remaining meatloaf ingredients.
- Flatten meat mixture out on a wax paper lined cookie sheet in a thin layer 1/2" thick x 12" long x 6 to 8" wide.
- Cover meat with a layer each of arugula (or spinach), prosciutto and cheese.
- Use the wax paper to help roll up the meat into a large log working across the 6 or 8" side, resulting in a 12" log.
- Seal ends, place seam side down on a cookie sheet (I line with foil). Drizzle lightly with extra virgin olive oil.
- Roast meat roll for approximately 40 minutes.

ITALIAN ROLLED MEATLOAF
You can make this using all beef or half beef and half ground pork in place of the sausage meat, I have to say that the using the sausage meat with the ground beef is better! You can really add in any spices that you like, I prefer it with oregano, use seasoning salt for this or regular white salt

- Set oven to 375 degrees.
- Grease a 13 x 9-inch baking pan.
- Mix the first 12 ingredients together.
- On a large sheet of doubled waxed paper, pat the mixture into a 13x10-inch rectangle.
- Arrange the ham slices on top of the beef mixture, leaving about 1-inch space around the edges.
- Sprinkle the mushrooms over the ham.
- Sprinkle the mozza cheese over the mushrooms, then sprinkle the Parmesan cheese over the mozza cheese.
- Starting at the smaller side, roll the meat up jelly roll style (using the wax paper to lift up the beef mixture).
- Lightly press together edges the best that you can (they don't have to be closed completely).
- Place seam-side down in a 13 x 9-inch baking pan.
- Brush with remaining 1/2 cup (or more of pizza sauce).
- Bake for 1-1/2 hours (THE LAST 10 MINUTES OF BAKING, sprinkle with about 1-1/2 cups grated mozzarella cheese).

THE REVISITATION OF THE MEATLOAF (HOT SUB SANDWICH)
I developed this recipe to use some leftover meatloaf because my son does not appreciate the cold meatloaf sandwich with all the fixings that the rest of the family enjoys. There always has to be one person who doesn't conform; it is a little known, unwritten rule. But as long as every family has one, I don't feel bad. This one's for you Adam, love you! By the way, he thought this sandwich was great! (Amounts are estimated, just wing it as you go and use what you have. Zaar won't accept leftover meatloaf so had to call it meatloaf mixture.)

- Preheat oven to 300 degrees Fahrenheit.
- Slice leftover (cold) meatloaf into 1/4" slices and layer in glass baking dish beginning with sauce, then meat, topping each layer with spaghetti sauce.
- Cover with foil and heat for 25 minutes or until heated through.
- Meanwhile, in a non-stick skillet, heat the 2 teaspoons olive oil; add the green peppers and onions, saute until lightly browned; add Italian seasoning and set aside to keep warm.
- Slice submarine rolls and open out flat; using a pastry brush, lightly oil both sides of the open roll; sprinkle with garlic salt and celery salt to taste.
- Place in preheated broiler and lightly toast the rolls.
- Layer the meatloaf, sauce, peppers, onions and mozzarella cheese onto each roll and place back under broiler to melt the cheese.

Steps:
- Preheat oven to 375°F.
- Lightly grease a large broiler pan.
- Combine beef, bread crumbs, 1/2 cup spaghetti sauce, eggs, 3 tablespoons parmesan cheese and dried onion; mix with fork.
- Shape meat mixture into 8 (1-inch thick) oblong patties.
- Place on prepared pan.
- Brush patties with remaining spaghetti sauce.
- Bake 20 minutes or until internal temperature reaches 165°F.
- Meanwhile, cook noodles according to package directions; drain.
- Toss with butter and remaining 1 tablespoon parmesan cheese.
- Serve patties with noodles.
ITALIAN MEATLOAF FILLED WITH CAPICOLA ROLL
Meatloaf filled with Cappicola and Mozzarella roll is seasoned with spices and store bought pesto and sundried tomatoes in oil which you puree. Please take note that the pesto and sundried tomatoes have seasoning and garlic added so adjust to taste.

- Preheat oven to 350 degree`s.
- In a large bowl add the bread crumbs and broth and let soften.
- Add the next 8 ingredients mix in well(Pesto to pepper flakes).
- Add the meats and eggs mix together.
- On a damp counter place plastic wrap down. Then the meat mixture in one layer 9 x 12.
- Lay the ham & cheese roll in one row across the long lenght of the meat. Press the Cappicola into the meat.
- With the aid of the plastic wrap pull up the long side meat over the cheese and continue to roll sealing in the cheese.
- Roll onto a large baking pan. Adjust the roll so seam is down and cheese is seal inches. removing the plastic wrap, add discard wrap.
- Place the bacon slices over meat if using.
- Bake in oven for 40-50 minutes. Or until internal temp is 160 degrees when inserted in center of loaf.
- Let the meat rest room temp for 15-20 minutes. Important for the juices to redistribute.
- Serve with your favorite tomato sauce.

- Heat your oven to 200C. Combine the breadcrumbs and milk and allow to soften. Heat a small frying pan over medium heat, add the oil and fry the onion and garlic for about 3 minutes until softened and fragrant. Pour the mixture into the breadcrumbs.
- Combine the breadcrumbs with the beef and pork mince, egg, mustard, Vegemite (if using) and season well with salt and pepper. Grease a large loaf tin and line with overlapping slices of prosciutto laid at right angles to the length of the tin. Fill the tin with the meat mixture and fold any overlapping ends of prosciutto over the top. Bake for 1 hour until the meatloaf is cooked through, then remove from the oven and turn the oven onto a high grill setting.
- While the meatloaf is cooking, make the tomato sauce. Heat a small frying pan over medium heat, add the oil and fry the onion and garlic for about 3 minutes until softened and fragrant. Add the tomato passata and season well with salt and pepper. Cover and simmer for 30 minutes, then stir through the tomato sauce and butter.
- Turn out the meatloaf onto a lipped, ovenproof serving dish and pour over the tomato sauce. Scatter liberally with the cheese and grill until the cheese is browned and bubbling. Sprinkle over the parsley to serve.
