SUNNY'S MEATLOAF BURGERS

Steps:
- For the sauce: Combine the ketchup, vinegar, sriracha and pepper in a small pot. Simmer, stirring occasionally, until reduced slightly, 10 to 15 minutes. Remove and refrigerate.
- For the patties: Add the olive oil to a small pan on medium-high heat, then add the onion, oregano, thyme, salt, pepper and 1 tablespoon water. Stir to coat everything and cook until the onions are translucent but not browned, 3 to 5 minutes.
- Meanwhile, combine the bread, egg, pesto, Worsterschire sauce, Parmesan and garlic in a medium bowl. Add the sauteed onions to the breadcrumb mixture and stir to completely combine. Break up the beef in a large bowl with your hands or a wooden spatula. Add the breadcrumb mixture and gently mix together.
- Preheat the grill for cooking with direct and indirect heat at 350 degrees F or heat a pan over medium-high heat.
- Evenly divide the mixture into 3 or 4 balls and form into patties. Place on the direct heat of the grill or into the pan. Cook on one side until the patties release, 5 to 6 minutes, then flip, transferring to the indirect heat of the grill. If using a pan, simply lower the heat and cover the patties with a lid or upside-down metal bowl. Cook until the internal temperature reaches 160 degrees F, 5 to 6 minutes more. Remove from the heat and let rest, covered, for 5 minutes.
- For the burgers: Add a patty to each bun bottom, then top with the sauce and a pile of potato chips. Top with the bun tops. Enjoy!

- 1. soak the bread and eggs in a mixing bowl. Let stand while preparing remaining ingredients. Sauté onions and garlic in the skillet in butter over medium-high heat, about three minutes. Cool five minutes. Add parsley, Worcestershire, salt and pepper into bread mixture, then mash together.
- 2. Mix bread mixture, cooled onion mixture, and ground beef. Divide evenly into four portions and shape to match bread shape. Cover and chill while preparing the relish. Preheat grill or grill pan to medium-high. Grill burgers on medium high to 160°, about 4 or 5 minutes on each side. Serve on slices of grilled French bread and top with tomato bacon relish.
- 3. Tomato bacon relish: two strips thick sliced bacon, chopped 1/2 cup onions, chopped 1/4 cup Brown sugar 1/4 cup prepared yellow mustard 1/4 cup catsup 1/2 cup tomatoes, seeded and diced sauté bacon until crisp in a frying pan. Add onion and sauté three more minutes. Stir in sugar, mustard, and catsup. Add tomatoes and simmer one minute. Makes about 1 cup.
DAD'S MEATLOAF WITH TOMATO RELISH

- Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
- Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
- This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
- Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
- Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!
CHEF JOHN'S GRILLED BACON MEATLOAF BURGERS
I love meatloaf, but not as much as I love meatloaf sandwiches. In fact, I'll make a meatloaf just for the leftovers. I'll fry the cold slice in a buttered pan until hot and crusty, and enjoy it on toast with ketchup. This recipe is basically that, plus bacon, in burger form.

- Whisk egg, ketchup, Worcestershire sauce, salt, brown sugar, onion powder, garlic powder, thyme, and cayenne pepper together in a bowl. Add breadcrumbs and chopped cooked bacon. Crumble in the ground beef. Mix with your fingers until bacon and breadcrumbs are distributed evenly.
- Form mixture into 4 burgers with your wet hands. Cover with plastic wrap and refrigerate until chilled thoroughly, about 3 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.

BACON-TOPPED MEATLOAF BURGERS
Instead of turning a meatloaf into a red-centered burger-loaf, why not turn a burger into a tender, juicy meatloaf patty? You get the inimitable meatloaf flavors of beef laced with ketchup and onion but in a far more delectable form. Simply broil the burgers until they are just past purple on the inside, and seared mahogany brown on the outside. This takes about five minutes - 55 minutes less than a traditional meatloaf. Put the patties on a potato bun and bite in. The meat is juicy enough to soak the roll, and is flavored in that meatloaf manner - brawny yet barely sweet, porky from the bacon, aromatic with herbs, onion and garlic, all commingled with a deep, beefy flavor. - Preheat broiler. Position oven rack 4 inches from heat. In a small bowl, mix together ketchup, mustard and Worcestershire sauce. In a separate medium bowl, mix together the meat, onion, thyme, garlic, salt and pepper. Mix in half the ketchup mixture, reserving other half as a glaze.
- Form meat mixture into six equal patties, about 1 1/4 inches thick. Transfer patties to a baking sheet. Brush each patty with glaze.
- For rare burgers, broil for 1 minute, then add bacon slices to tops of patties and continue broiling until bacon is browned and meat is cooked as desired, about 4 minutes longer. For medium, add bacon after 2 minutes of broiling, and for well-done, after 3 minutes. Serve with buns and trimmings if desired.

- Heat oven to 350°F. Line 9x5-inch loaf pan with foil; spray foil with cooking spray.
- In large bowl, mix bread and milk. Let stand 5 minutes to absorb milk. Add beef, all but 2 tablespoons of the bacon, the shredded cheese, relish, onion, garlic and egg. Mix until well combined. Shape mixture into 8x4-inch loaf. Place in pan.

- To make relish, cook bacon in a skillet until crisp; add in onion and cook 3 minutes.
- Stir in brown sugar, mustard, and ketchup.
- Add tomatoes; simmer for 1 minute.
- To make the burgers, soak bread in eggs in a large bowl; set aside.
- Saute onion and garlic in butter in a skillet over med-high heat, about 3 minutes; cool 5 minutes.
- Add parsley, Worcestershire sauce, salt, and pepper to bread mixture, then mash together.
- Combine bread mixture, cooled onion mixture, and ground beef.

MEATLOAF WITH CHEDDAR, BACON, AND TOMATO RELISH
Steps:
- Preheat the oven to 350°F.
- In a skillet over medium heat, sauté the onion in the oil until golden. Add the garlic and sauté for 1 to 2 minutes (be careful not to burn the garlic). Remove from the heat and set aside to cool.
- In a bowl, combine the beef, eggs, onion bread crumbs, oregano, mustard, salt, and pepper. Form a loaf (approximately 7 x 5 x 3 inches in size) and place it in a roasting pan. Cover the loaf evenly with the ketchup. Bake for about 1 hour, until it reaches an internal temperature of 145°F. Remove and allow to rest slightly, then cut into 1/2-inch slices.
- In a heavy skillet over medium-high heat, cook the bacon until golden brown and crisp on both sides. Transfer to paper towels to drain.
- Slice the ciabatta rolls in half. Top each bottom half with a slice of warm meatloaf and the cheese. Place the relish on the top halves and top with the bacon. Place all the roll pieces in the 350°F oven and remove once the cheese has melted and the relish is heated through. Close the sandwiches, cut into halves, and serve.
