MEATLESS DAIRY-FREE TACO DIP
I'm always looking for lactose-free dips because I'm lactose intolerant and, well, dips are my favorite. This one is healthy and just spicy enough, and actually tastes like a meaty taco dip with fatty refried beans. Top it off with some soy sour cream and fresh cilantro and dig in with some homemade tortillas.

Steps:
- Spread the refried beans in an even layer into the bottom of a 9x13 in baking dish. Spoon on the guacamole, smoothing into a second even layer. Pour over the salsa, smoothing into a third even layer. Sprinkle on an even layer of green onion, then iceberg lettuce, and then tomatoes.
- In a small bowl, whisk together the mayonnaise, vegannaise or sour cream with the lime juice. Drizzle the mixture over the tomato layer.
- Serve immediately or refrigerate, covered, for up to 2 days.
B'S TACO DIP (MEATLESS)
I honestly believe that this dip is the reason I get invited to get-togethers. It is extremely versatile - you can add just about any veggies you want. I've added olives (not my fave, just cuz I don't like them), jalapenos, and cilantro (delicious if you like it!) and avocado all to rave reviews. By the time you've made it once, you will easily be able to take liberties to adjust it to your taste. Enjoy! Comment with any feedback or tweeking you may have done! Served with tortilla chips. My rule of thumb is one bag of chips per pan.

Steps:
- In a medium bowl, microwave cream cheese just to soften.
- Add sour cream and taco seasoning mix to softened cream cheese. Blend the mixture well and try to get out all the lumps. Using an electric mixer makes it a much easier task, but I usually just stir it manually.
- Spread mixture into the bottom of an inch-deep baking sheet.
- Pour taco sauce over the top, spreading it lightly with the bottom of a spoon to cover entire mixture.
- Top with remaining ingredients. The order I use is: lettuce, tomato, onion, then cheese. Of course, you can do what you want but it looks really nice when the cheese is on the very top.

- 1 Large avocado, mashed with a sprinkle of sea salt and squeeze of lime juice. Or, 1 cup prepared guacamole. The real stuff, not the fake green goop.
- About 3/4 cup of a thick salsa. If your salsa seems watery then strain the liquid out through a fine mesh strainer to prevent your dip from getting soggy.

- To prepare the cheese layer, scoop out 3/4 cup of spreadable Mexican Cheese and whisk in very hot water until it resembles queso - about 1/2 cup (amounts as original recipe is written // adjust if altering batch size). Alternatively, use my Cashew-less Vegan Queso.
- Next, prepare the guacamole by mashing all ingredients together in a bowl and adjusting seasonings to preference. Do the same with the pico de gallo (or just use your favorite salsa).
- To assemble the dip: Spread out vegetarian refried beans, then top with cheese layer, then guacamole, then pico or salsa, then bell pepper, then black olives, then cilantro.
