1 can (14-1/2 oz.) diced tomatoes, undrained
1-3/4 cups water
1/4 cup KRAFT Zesty Italian Dressing
1 canned chipotle pepper in adobo sauce
2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
1/4 cup chopped fresh cilantro
2 Eggland's Best® Eggs
4 cups hot cooked long-grain white rice

Steps:

  • Blend first 4 ingredients in blender until smooth; pour into large saucepan. Bring to boil.
  • Meanwhile, mix all remaining ingredients except rice just until blended; shape into 24 meatballs, using about 1/4 cup for each.
  • Drop meatballs gently into boiling tomato sauce; cover. Simmer on medium-low heat 20 to 25 min. or until meatballs are done (165°F). Serve with rice.

1 teaspoon olive oil (or ghee, lard, avocado oil)
1 large brown onion, finely diced
800 g /1.8 lb grass-fed ground beef mince
3 medium dried chipotle chilies (tinned chipotle can also be used), seeds out
2 tablespoons chopped fresh coriander (cilantro)
2 large garlic cloves, finely diced
1 teaspoon ground coriander seed
1 teaspoon ground cumin seed
1 teaspoon sweet or mild paprika
1.5 teaspoon of sea salt
2 tablespoons olive oil (lard, ghee or avocado oil for cooking)
½ onion, mentioned above (the rest of what's used in the meatballs)
2 garlic cloves, finely diced
2 medium chipotle chilies, seeds out
½ teaspoon ground coriander seed
1 teaspoon ground cumin seed
½ teaspoon paprika
2 bay leaves
400 g / 1 can diced tomatoes or tomato puree (about 1 ½ cups)
½ teaspoon sea salt
You will need a large, deep frying pan

Steps:

  • If using dried chipotle chilies, place them in hot water to rehydrate, for at least an hour before using.
  • Heat a teaspoon of cooking fat or oil in a large frying pan over medium heat and add the onion. Sauté the onion for 3-5 minutes until translucent. Remove to a bowl. Use half of the onion for the meatballs mix and reserve the rest for the sauce.
  • While onion is cooking, pre-chop other ingredients for the meatballs. Slice the chipotle chilies in half and remove the seeds. Chop with a knife or grind with mortar and pestle into a paste-like consistency.
  • Combine ground beef with half of the cooked onion, chopped garlic and chipotle chilies, paprika, cumin, coriander seed, and salt. Mix and knead through using your hands. Using clean, wet hands roll the mix into small balls (somewhere between a walnut and a golf ball size). Set aside until ready to cook.
  • Preheat a dollop of olive oil or other cooking fat in the same large frying pan until sizzling hot. Cook the meatballs on medium-high heat for 3 minutes on each side, until well browned.
  • Add the rest of the cooked onion, garlic, two chopped chilies and the sauce spices to the pan with the meatballs. Stir through and add the diced tomatoes/puree. Combine and cook for 8-10 minutes uncovered, stirring frequently to make sure the meatballs cook evenly and the sauce is well combined.
  • Taste for salt. Drizzle with a little lime juice before serving.

1 pound ground pork
3/4 cup panko breadcrumbs
1/2 cup freshly grated Parmesan
1/2 cup ricotta cheese
1/4 cup fresh flat-leaf parsley, minced
1/2 teaspoon crushed red pepper
1/4 teaspoon salt
3 cloves garlic, grated on a rasp grater
2 whole eggs
Splash of milk
Freshly ground black pepper
1/2 cup olive oil, for frying
3 cloves garlic, minced
1 onion, diced
Two 28-ounce cans tomato sauce
1/4 cup fresh flat-leaf parsley, minced
3 tablespoons tomato paste
2 tablespoons sugar
1/4 teaspoon salt
Crushed red pepper, as needed
Freshly ground black pepper

Steps:

  • For the meatballs: Combine the ground beef, pork, breadcrumbs, Parmesan, ricotta, parsley, crushed red pepper, salt, garlic, eggs, milk and black pepper in a bowl. Mash with your hands until thoroughly combined. Form into small balls and place on a baking sheet. Set in the fridge for 1 hour.
  • Heat the oil in a large skillet over medium-high heat. Brown the meatballs in batches until nice and deep golden, then move them to a plate.
  • For the sauce: Into the same skillet, add the garlic and onions and cook for 2 to 3 minutes. Add the tomato sauce, parsley, tomato paste, sugar, salt, crushed red pepper and black pepper. Reduce the heat to medium low and cook for 15 to 20 minutes.
  • Add the meatballs back to the skillet and simmer another 15 minutes. Keep warm until serving.
  • Transfer to a chafing dish and serve with frilly toothpicks.

500g minced chicken , turkey, lamb, beef or pork
1 medium onion
2 garlic cloves , crushed or chopped
2 tsp mild or medium curry powder
2 tsp ground cumin
1 tsp garam masala
½ tsp paprika or cayenne pepper
2 tbsp fresh coriander , chopped
1 egg , beaten
50g fresh breadcrumb
1 tbsp olive oil

Steps:

  • Heat oven to 180C/fan 160C/gas 4.
  • Put the mince into the mixing bowl. Add the onions, garlic, curry powder, cumin, garam masala, paprika or cayenne pepper and coriander, then mix well. By adding these spices, you'll get a delicious flavour without having to add any salt.
  • Add the beaten egg and breadcrumbs, then mix again.
  • Divide the meat mixture into 15-18 evensized pieces and shape into balls (they should be about the size of a walnut). Always wash your hands thoroughly after handling raw meat so you don't transfer any germs that may be on the meat to other food or equipment.
  • Heat the oil in the frying pan over a medium heat and add the meatballs using a spoon. Cook them for 5 mins, turning until golden brown. Remove from the pan and place them on to the tray. Bake in the oven for 15-20 mins.
  • Remove from the oven. Remember to use oven gloves! Allow to cool slightly and serve with a fresh, crisp green salad, some pitta bread and tomato salsa.

4 cups fresh ground pork or beef, or a combination
1 cup bread crumbs from crusty bread
1 large onion, finely chopped
1 large clove crushed
2 tbsp. fresh parsley, finely chopped
1 egg, beaten
pinch nutmeg
salt and pepper
flour for coating meatballs
2 tbsp olive oil
sauce:
2 tbsp. olive oil
1/2 cup chopped almonds
1/4 cup bread crumbs
1 garlic clove, crushed
2/3 cup white wine
1 1/2 cups beef broth
3 tbsp. green onions, chopped

Steps:

  • 1. In large mixing bowl, put the bread crumbs and sprinkle with enough water to moisten. Mix well. Add ground pork or beef, chopped onion, garlic, parsley. Mix thoroughly. Add beaten egg, nutmeg, salt and pepper. Mix well. Form mixture into small balls. Roll each of them in a little flour. In large skillet, add a little oil and cook a few meatballs at a time for 4 to 5 minutes or so til brown. Work in batches.
  • 2. To make spicy sauce, heat 2 Tbsp. olive oil in same skillet in which the meatballs were cooked.. Add almonds, bread crumbs, sauté a few minutes. Add garlic and green onions, cook for a few more minutes. Add white wine, beef broth and the spices. Simmer a few more minutes. Return meatballs to the sauce n skillet and cook on low heat for 0 minutes or so. Season with salt and pepper. Put 2 to 3 meatballs on each small plat and add a teaspoon of sauce over the meatballs. These make a delicious and tasty little appetizer.
