SWEET AND SOUR MEATBALLS WITH PINEAPPLE
First baked in an oven and then simmered in a pineapple packed sweet and sour sauce, these meatballs are great served over rice, pasta, or as an appetizer!

Steps:
- Preheat an oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the ground beef, eggs, bread crumbs, onion, ginger, salt, black pepper, Worcestershire sauce, and brown sugar.
- Shape into balls and arrange on the prepared baking sheet. Bake for 10-15 minutes. Set aside.
- In a large pot, add the reserved pineapple juice (if it's less than 1 cup, add some water), another 1/3 cup water, vinegar, soy sauce, brown sugar, cornstarch, ground ginger, and salt. Stir until smooth, cover, and cook until thickened.
- Add the pineapple chunks, carrot, green bell pepper and the meatballs. Toss to coat the meatballs with the sauce. Simmer for 20 minutes. Serve over the rice or pasta. Enjoy!

MEATBALL PINEAPPLE PASTA
I add few drops of tabasco to the sauce too and with Pineapple taste so good.

Steps:
- Put a big pot with 1/3 full of water to boil with dash of salt and 1 spoon of oil.
- Cut all the pineapple slices to smaller pcs. Hold the juice or you can drink it cold :)
- In the smaller pot empty the jar of spaghetti sauce and add all other ingredients to it plus pineapples to cook.
- Add all Meatballs total of 20 pcs to the sauce, after the sauce is ready you can cut them in half or 1/4. After 15-20 minutes the the sauce is ready.
- After the pasta boil for 10-15 minutes, to be sure is soft and cooked, drain the water rinse it with warm water.
- Clean the pot and put it back on stove and pour oil in it. Sometimes I like to put raw sliced Potatoes or pcs of pita bread at the bottom of the pot to turn golden in the oil,... bottom of the spaghetti mix.
- Pour half the portion of the cooked spaghetti or your choice to pasta inside the pot and pour the half of the sauce on top and do the same thing again.
- Steam it for 20 minutes and ready to serve and eat.
- If you put Potatoes or bread at the bottom of the pot be careful when you empty the pasta. Now Potatoes or breads are golden and crispy too and just put them in the dish and serve it.
FAMOUS MEATBALLS
These pineapple meatballs are a favorite for any occasion. I made 14 pounds of meatballs for my sister's graduation party, and I only had 1 medium container left. My mother made sloppy joes, and needless to say, they had a lot of leftovers because everyone loved these meatballs. Guaranteed favorite!

- Pour pineapple chunks with juice into a saucepan. Mix in green bell pepper, brown sugar, cornstarch, soy sauce, and lemon juice; stir until sugar and cornstarch dissolve.

- Mix together ground beef, ginger, garlic powder, and pepper until well combined. Form into 1 1/2-inch meatballs.
- Saute meatballs in a large frying pan over medium-high heat until browned, about 10 minutes. Remove meatballs to a plate, reserving the pan drippings.
- While the meatballs are cooking, pour juice from the canned pineapple into a liquid measuring cup and add enough water to make 1 cup. Mix brown sugar and cornstarch in a small bowl.
- Add pineapple juice and brown sugar mixtures to the warm pan drippings. Add vinegar and soy sauce and bring to a boil. Cook until sauce thickens, 2 to 3 minutes. Add meatballs, pineapple chunks, and green pepper. Simmer until meatballs are no longer pink inside, about 10 minutes.

MAKE AHEAD PINEAPPLE MEATBALLS
These delicious meatballs are easy to make because you don't have to brown them. They are our modified recipe from a kids cookbook. My boys love helping to make them and they always disappear at pot luck meals. These meatballs are great as a main course served over your favourite rice or as an appetizer. It also cooks up nicely in a slow cooker. I double the recipe (two pans) for potlucks as they go so fast. The do really well made ahead of time. Refrigerate up to 3 days or freeze up to 3 months. Note: I strongly recommend using extra lean ground beef. If you use regular ground beef, you should bake them ahead and refrigerate them. The fat will harden on top and can easily be taken off, then reheat the meatballs in the oven, stove top or microwave.

- Preheat oven to 350°F (180°C).
- In a small bowl, combine the first four ingredients until sugar dissolves.
- Using cooking spray or olive oil, grease a 9x13 casserole dish.

- Preheat oven to 350F degrees.
- First, make the meatballs: combine all meatball ingredients (there's 7, beef to garlic powder) in a bowl and mix well; shape into 1-inch balls.
- Brown them in a nonstick frying pan (I do it in 3 batches) until browned all over; drain on paper towel then place in a large ungreased casserole dish.
- To make sauce, combine brown sugar and cornstarch in a large saucepan, then whisk in the 1-3/4 cup pineapple juice/water combination until mixture is smooth.
- Add vinegar, soy sauce and worcestershire sauce; stir.
- Simmer, uncovered, on medium-low heat for about 8 minutes, or until thickened.
- Pour sauce over meatballs and add pineapple tidbits; stir gently to combine until meatballs are coated with sauce.
- Bake in preheated oven for 30 minutes.
- If you want a lot, this recipe doubles well.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large, shallow baking sheet.
- In a large bowl, thoroughly mix the ground beef, eggs, bread crumbs and onion. Sprinkle with ginger, seasoning salt, pepper, Worcestershire sauce and sugar. Shape into one inch balls.

- Combine ingredients for meatballs and form into balls (approx. 36).
- In oiled skillet on medium heat, brown meatballs.
- After meatballs have been browned, add all other ingredients except the green peppers.
- Reduce heat, cover and simmer for 7 minutes.
- Add green peppers and cook for an additional 6 minutes or so uncovered until meatballs are completely cooked and veggies are to desired tenderness.

- Combine ground beef, onion, egg, 1 tablespoon cornstarch, salt, and pepper in a bowl. Use a cookie scoop to shape into meatballs.
- Heat oil in a large skillet over medium heat. Add meatballs and cook, turning often, until browned and no longer pink in the centers, 7 to 10 minutes. Remove meatballs from the skillet and drain oil, reserving 1 1/2 tablespoons of drippings.
