SWEET AND SOUR MEATBALLS WITH PINEAPPLE



Sweet and Sour Meatballs with Pineapple image

First baked in an oven and then simmered in a pineapple packed sweet and sour sauce, these meatballs are great served over rice, pasta, or as an appetizer!

2 lb (900g) lean ground beef
2 eggs
1 cup bread crumbs
1/2 cup finely chopped onion
1/2 teaspoon ground ginger
1 teaspoon salt
1/2 teaspoon ground black pepper
2 teaspoons Worcestershire sauce
2 teaspoons brown sugar
1 20 oz. (600ml) can pineapple chunks (drained, juice reserved)
1/3 cup water
1/3 cup vinegar
2 tablespoons soy sauce
1 cup brown sugar
1/3 cup cornstarch
1 teaspoon ground ginger
1 teaspoon salt
1 carrot (, diced)
1 green bell pepper (, diced)

Steps:

  • Preheat an oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the ground beef, eggs, bread crumbs, onion, ginger, salt, black pepper, Worcestershire sauce, and brown sugar.
  • Shape into balls and arrange on the prepared baking sheet. Bake for 10-15 minutes. Set aside.
  • In a large pot, add the reserved pineapple juice (if it's less than 1 cup, add some water), another 1/3 cup water, vinegar, soy sauce, brown sugar, cornstarch, ground ginger, and salt. Stir until smooth, cover, and cook until thickened.
  • Add the pineapple chunks, carrot, green bell pepper and the meatballs. Toss to coat the meatballs with the sauce. Simmer for 20 minutes. Serve over the rice or pasta. Enjoy!

1 bag(s) pasta or spaghetti of your choice
1 jar(s) pasta sauce original (or with basil and garlic)
1 bag(s) meatballs
1/4 can(s) pineapple cocktail sliced (or cut them smaller)
1/2 small lemon juice, fresh
2 dash(es) allspice, ground
1 teaspoon(s) garlic and herb seasoning
1/2 teaspoon(s) basil, dried
1/2 cup(s) olive oil (your choice)

Steps:

  • Put a big pot with 1/3 full of water to boil with dash of salt and 1 spoon of oil.
  • Cut all the pineapple slices to smaller pcs. Hold the juice or you can drink it cold :)
  • In the smaller pot empty the jar of spaghetti sauce and add all other ingredients to it plus pineapples to cook.
  • Add all Meatballs total of 20 pcs to the sauce, after the sauce is ready you can cut them in half or 1/4. After 15-20 minutes the the sauce is ready.
  • After the pasta boil for 10-15 minutes, to be sure is soft and cooked, drain the water rinse it with warm water.
  • Clean the pot and put it back on stove and pour oil in it. Sometimes I like to put raw sliced Potatoes or pcs of pita bread at the bottom of the pot to turn golden in the oil,... bottom of the spaghetti mix.
  • Pour half the portion of the cooked spaghetti or your choice to pasta inside the pot and pour the half of the sauce on top and do the same thing again.
  • Steam it for 20 minutes and ready to serve and eat.
  • If you put Potatoes or bread at the bottom of the pot be careful when you empty the pasta. Now Potatoes or breads are golden and crispy too and just put them in the dish and serve it.

1 green bell pepper, sliced
½ cup brown sugar
2 tablespoons cornstarch

½ teaspoon ground ginger
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
1 (8 ounce) can pineapple chunks, juice reserved
⅓ cup water, or as needed
¼ cup brown sugar
2 tablespoons cornstarch
¼ cup white vinegar
1 tablespoon soy sauce
1 green bell pepper, chopped

Steps:

  • Mix together ground beef, ginger, garlic powder, and pepper until well combined. Form into 1 1/2-inch meatballs.
  • Saute meatballs in a large frying pan over medium-high heat until browned, about 10 minutes. Remove meatballs to a plate, reserving the pan drippings.
  • While the meatballs are cooking, pour juice from the canned pineapple into a liquid measuring cup and add enough water to make 1 cup. Mix brown sugar and cornstarch in a small bowl.
  • Add pineapple juice and brown sugar mixtures to the warm pan drippings. Add vinegar and soy sauce and bring to a boil. Cook until sauce thickens, 2 to 3 minutes. Add meatballs, pineapple chunks, and green pepper. Simmer until meatballs are no longer pink inside, about 10 minutes.

MAKE AHEAD PINEAPPLE MEATBALLS



Make Ahead Pineapple Meatballs image

These delicious meatballs are easy to make because you don't have to brown them. They are our modified recipe from a kids cookbook. My boys love helping to make them and they always disappear at pot luck meals. These meatballs are great as a main course served over your favourite rice or as an appetizer. It also cooks up nicely in a slow cooker. I double the recipe (two pans) for potlucks as they go so fast. The do really well made ahead of time. Refrigerate up to 3 days or freeze up to 3 months. Note: I strongly recommend using extra lean ground beef. If you use regular ground beef, you should bake them ahead and refrigerate them. The fat will harden on top and can easily be taken off, then reheat the meatballs in the oven, stove top or microwave.

175 ml ketchup
15 ml Worcestershire sauce
15 ml vinegar
30 ml brown sugar
398 ml pineapple slices, drained
125 ml sweet onions, chopped
500 g extra lean ground beef
125 ml cooked rice, we prefer brown rice
50 ml milk
1 ml sea salt

Steps:

  • Preheat oven to 350°F (180°C).
  • In a small bowl, combine the first four ingredients until sugar dissolves.
  • Using cooking spray or olive oil, grease a 9x13 casserole dish.
  • In a large bowl, combine the last five ingredients, mixing well with your hands.
  • Roll into 2 cm balls and place, single layer into the casserole dish.
  • Lay drained pineapple slices over the top of the meatballs, single layer.
  • Pour sauce over meatballs & pineapples.
  • Bake for 60 minutes.
  • Serve immediately or let cool and refrigerate or freeze.
  • Enjoy!

This is a family favourite; my teenage son eats at least 2 servings himself. Cooking time includes the browning of the meatballs, although you can brown them in the oven on a cookie sheet and make the sauce at the same time, saving yourself a little time.

2 lbs lean ground beef
2 large eggs
1/2 cup fine dry breadcrumb
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/2 teaspoons Worcestershire sauce
1/4 teaspoon garlic powder
1 cup packed brown sugar
3 tablespoons cornstarch
1 3/4 cups reserved pineapple juice, plus water if necessary to measure (it will be)
1/4 cup white vinegar
1 1/2 tablespoons soy sauce
1 1/2 teaspoons Worcestershire sauce
1 (14 ounce) can pineapple tidbits, juice drained and reserved (see above)

Steps:

  • Preheat oven to 350F degrees.
  • First, make the meatballs: combine all meatball ingredients (there's 7, beef to garlic powder) in a bowl and mix well; shape into 1-inch balls.
  • Brown them in a nonstick frying pan (I do it in 3 batches) until browned all over; drain on paper towel then place in a large ungreased casserole dish.
  • To make sauce, combine brown sugar and cornstarch in a large saucepan, then whisk in the 1-3/4 cup pineapple juice/water combination until mixture is smooth.
  • Add vinegar, soy sauce and worcestershire sauce; stir.
  • Simmer, uncovered, on medium-low heat for about 8 minutes, or until thickened.
  • Pour sauce over meatballs and add pineapple tidbits; stir gently to combine until meatballs are coated with sauce.
  • Bake in preheated oven for 30 minutes.
  • If you want a lot, this recipe doubles well.

½ teaspoon seasoning salt
1 large carrot, diced
1 large green bell pepper, cut into 1/2 inch pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large, shallow baking sheet.
  • In a large bowl, thoroughly mix the ground beef, eggs, bread crumbs and onion. Sprinkle with ginger, seasoning salt, pepper, Worcestershire sauce and sugar. Shape into one inch balls.
  • Place meatballs in a single layer on prepared baking sheet. Bake in preheated oven for 10 to 15 minutes; set aside.
  • To make the sauce, mix enough water with the reserved pineapple juice to make 1 cup. In a large pot over medium heat, combine the juice mixture, 1/3 cup water, vinegar, soy sauce, and brown sugar. Stir in cornstarch, ginger and seasoning salt, until smooth. Cover and cook until thickened.
  • Stir pineapple chunks, carrot, green pepper and meatballs into the sauce. Gently stir to coat the meatballs with the sauce. Simmer, uncovered, for about 20 minutes, or until meatballs are thoroughly cooked.

1 large egg
1/4 cup dry bread crumbs

GLAZE:
1/4 cup packed brown sugar
1/4 cup ketchup
1/4 cup white vinegar
1/4 cup water
2 tablespoons Dijon-mayonnaise blend

Steps:

  • Drain pineapple, reserving juice. Place pineapple and 2 tablespoons juice in a large bowl (set the remaining juice aside for glaze). Add the egg, bread crumbs and pepper to pineapple. Crumble sausage and beef over mixture and mix lightly but thoroughly. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 450° for 12-15 minutes or until a thermometer reads 160°., Meanwhile, in a large skillet, combine glaze ingredients and reserved pineapple juice. Add meatballs. 1 lb ground beef or 1 lb pork
2 tablespoons steak or 2 tablespoons Worcestershire sauce
1 egg (lightly beaten)
1/2 cup soft breadcrumbs
1/2 teaspoon garlic powder
1 teaspoon salt
1 (8 ounce) can pineapple chunks in juice
1 cup carrot (sliced)
1 cup celery (sliced)
3/4 cup beef broth
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1 tablespoon cider vinegar
1/4 teaspoon ginger powder
1 teaspoon cornstarch
1 large green pepper (cut in strips)

Steps:

  • Combine ingredients for meatballs and form into balls (approx. 36).
  • In oiled skillet on medium heat, brown meatballs.
  • After meatballs have been browned, add all other ingredients except the green peppers.
  • Reduce heat, cover and simmer for 7 minutes.
  • Add green peppers and cook for an additional 6 minutes or so uncovered until meatballs are completely cooked and veggies are to desired tenderness.
  • Serve over rice or egg noodles.
  • Enjoy!

1 pound ground beef
2 tablespoons finely chopped onion
1 large egg, beaten
3 ½ tablespoons cornstarch, divided
¾ teaspoon salt
1 dash ground black pepper
1 tablespoon vegetable oil
1 (8 ounce) can pineapple chunks, undrained
1 cup pineapple juice, or as needed
¾ cup white sugar
½ cup water
1 tablespoon water
¼ cup white vinegar
2 tablespoons white vinegar
1 ½ tablespoons soy sauce
2 green bell peppers, cut into thin strips
2 cups hot cooked white rice

Steps:

  • Combine ground beef, onion, egg, 1 tablespoon cornstarch, salt, and pepper in a bowl. Use a cookie scoop to shape into meatballs.
  • Heat oil in a large skillet over medium heat. Add meatballs and cook, turning often, until browned and no longer pink in the centers, 7 to 10 minutes. Remove meatballs from the skillet and drain oil, reserving 1 1/2 tablespoons of drippings.
  • Drain pineapple chunks from the can, reserving juice; set pineapple aside. Add enough additional pineapple juice to make 1 1/2 cups total.
  • Combine pineapple juice, sugar, 1/2 cup plus 1 tablespoon water, 1/4 cup plus 2 tablespoons vinegar, soy sauce, and remaining 2 1/2 tablespoons cornstarch in a bowl; mix well. Stir into drippings in the skillet.
  • Cook over medium heat, stirring constantly, until smooth and thickened. Add meatballs, pineapple chunks, and bell peppers. Cook until thoroughly heated, coating well, about 5 minutes. Serve over hot cooked rice.
