Steps:
- Cut the celery in large dice, including the leaves, and puree in the bowl of a food processor fitted with the steel blade. Process until finely minced. In a large pitcher, combine the rest of the ingredients except the vodka. With the food processor running, pour 1/4 of the tomato juice mixture into the food processor through the feed tube. Then pour the contents of the food processor into the pitcher with the remaining tomato juice mixture. Add the vodka and chill. Serve in tall glasses over ice with a stick of celery.
SPICY BLOODY MARYS
Steps:
- Cut the celery in large dice, including the leaves, and puree in the bowl of a food processor fitted with the steel blade. Add the horseradish, onion, lemon juice, Worcestershire sauce, celery salt, kosher salt, and Tabasco and puree it again. Pour the tomato juice into a 2 1/2-quart container, stir in the celery and seasonings mixture, then add the vodka and chill. Place a few ice cubes in each glass, pour in the Bloody Mary mixture, and garnish with a celery stick.

- Purée tomatoes, celery, and 1 cup beet juice in a blender until very smooth. Strain through a fine-mesh sieve, pressing on solids to extract all of liquid (you should have about 2 cups); discard solids. Transfer to a pitcher. Stir in remaining 2 cups beet juice, lemon juice, Worcestershire, hot sauce, 1 tablespoon horseradish, and 1/4 teaspoon pepper.
- Taste; stir in more horseradish as desired. Cover and refrigerate until cold, about 2 hours, or store in an airtight container up to 5 days (or freeze up to 1 month).
- To serve, pour beet mixture into highball glasses filled with ice. Stir 1 1/2 to 2 ounces vodka into each serving (or pour on top as a floater), if using. Garnish with celery stalks, lemon wedges, hot sauce, more pepper, and salt; serve immediately.

Steps:
- Place first 6 ingredients in large pot.
- Add enough water just to cover (about 6 cups).
- Bring to boil; reduce heat to medium and simmer uncovered until vegetables are very soft, about 50 minutes.
- Discard bay leaf; add 1 tablespoon coarse salt and lemon juice; cool slightly.
- Working in batches, puree vegetable mixture in blender until smooth.
- Add enough water, if needed, to measure 8 cups.
- Cover and chill.
- Grind celery seeds with remaining 1 1/2 teaspoons coarse salt in mortar with pestle or in spice grinder.
- Add celery-seed salt, Worcestershire sauce, hot pepper sauce, horseradish, black pepper, hot chili sauce, and Guinness, if desired, to vegetable puree.
- Cover and chill Bloody Mary mix overnight.
- Stir Bloody Mary mix and vodka or gin in large pitcher.
- Fill tall glasses with ice.
- Divide Bloody Mary among glasses.
- Garnish with lime wedges and pickled vegetables.

BEST EVER BLOODY MARY
This is similar to Emerils, but a touch different. It will be the last bloody mary recipe you will ever want - I've tried several until I tweaked this one just right! Nothing like fresh.

- In a blender combine the tomato juice, lemon juice, lime juice, horseradish, Worcestershire sauce, garlic powder, pickle juice, and hot sauce and process until smooth. Transfer to a nonreactive container and add celery salt and black pepper, to taste. Refrigerate until thoroughly chilled, at least 2 hours and up to overnight.
- When ready to serve, fill each glass with ice.
- Add 1 ounce of vodka to each glass, then fill the glass with the bloody mary mix. Stir well, and garnish each glass with your favorite veggie, pickle, celery, pickled green bean, or a pickled okra.
