This soup is a variation of the wonderful Greek avgolemono soup. Using ready-made meatballs makes it a quick and easy supper dish, but it doesn't shortcut the hearty soup's delicious flavor.

4 (14 ounce) cans chicken broth
2 (14 ounce) packages frozen cooked meatballs, thawed
1 small zucchini, shredded
¾ cup orzo pasta
1 teaspoon ground black pepper
1 teaspoon dried parsley flakes
¼ cup lemon juice
2 eggs

Steps:

  • Pour chicken broth into a large pot and mix in meatballs, zucchini and orzo. Season with pepper and parsley. Bring to a boil, reduce heat to low and simmer uncovered 30 minutes.
  • In a bowl, beat together lemon juice and eggs. Mix 1/4 cup hot soup into bowl, then stir entire mixture into the pot. Serve soup hot.

1 Cup diced yellow onion (1 medium onion)
1 Cup diced carrots (2 medium carrots)
3 cloves garlic (minced)
6 Cups chicken broth
1 15-oz can fire roasted tomatoes
2 tsp dried oregano
1 tsp dried basil
2 bay leaves
1 Pound fresh or frozen meatballs (about 1 inch diameter)
1 2-inch square parmesan rind (or ¼ cup shredded parmesan, plus more for garnish)
1 Cup orzo pasta (dry)
¼ Cup chopped italian parsley (plus more for garnish)
¼ Cup chopped basil (plus more for garnish)

Steps:

  • Add the olive oil, onions, carrots and garlic to a large pot and heat over medium heat until vegetables are beginning to soften, 5-7 minutes.
  • Add the chicken broth, tomatoes, oregano, basil, bay leaves, meatballs and parmesan rind. Increase heat to medium high and bring to a boil.
  • Once the liquid is boiling add the pasta and reduce heat to medium low. Cover and simmer for about 12 minutes, until pasta is el dente.
  • Remove the bay leaves and parmesan rind, add the chopped herbs and stir to combine. Season with salt and pepper to taste.
  • Serve immediately topped with additional chopped herbs and shredded parmesan.

Three 4-ounce mild Italian sausage links
2 1/2 cups chicken stock
1 cup orzo pasta
4 cups chopped kale
1 lemon
Coarse salt
Freshly grated Parmesan, for garnish
Parsley leaves, for garnish
Crusty bread, for serving

Steps:

  • Remove the casings from each sausage link, then pinch about 1 teaspoon sausage with your fingers and roll it into a mini meatball. Repeat with remaining sausage. (Each link should yield 10 to 13 meatballs.) Brown the meatballs in a large cast-iron, enameled cast-iron or nonstick skillet over medium heat, until nicely browned all over, about 6 minutes total.
  • Add the chicken stock to the pan along with the orzo. Cover and simmer on medium heat for 5 minutes. Lift the lid and give it a stir, making sure no pasta is sticking to the pan. Add the kale, nestle it in, then cover and simmer another 2 minutes. Lift the lid and add the juice from half the lemon (cut the remaining half into wedges). Stir and simmer until the orzo is just al dente, an additional minute or so. Season to taste with a pinch of salt if needed.
  • Divide among shallow bowls and garnish with plenty of grated Parmesan, along with extra lemon wedges and parsley. And crusty bread. Always.

While the name indicates that the soup might be served at an Italian wedding, it is actually a mistranslation of minestra maritata, which refers to the "marriage" of greens and meat in the soup.

Steps:

  • For the meatballs, combine beef, pork, bread crumbs, parsley, Parmesan, garlic, oregano, salt, pepper, egg, nutmeg, and paprika in a large bowl and use your hands to mix well.
  • Use a teaspoon to measure out meat for even sized meatballs.
  • With damp hands, shape them into 1-inch balls and transfer them to a large plate.
  • Cover and refrigerate until ready to cook.
  • For the soup, melt butter in a large soup pot over medium heat.
  • Add onion, carrots, garlic, salt and pepper and cook until translucent and fragrant, about 4 minutes.
  • Stir in broth, tomatoes, and 2 cups water.
  • Cover and cook 10 minutes over medium heat or until soup comes to a boil.
  • Add meatballs and orzo to the boiling soup and stir to make sure they are fully submerged.
  • Cover and simmer until the meatballs and orzo are fully cooked, about 15 minutes over medium heat.

3 cloves garlic, minced
1 onion, diced
3 carrots, peeled and diced
2 stalks celery, diced
1/2 teaspoon dried thyme
8 cups chicken stock

1/2 cup uncooked orzo pasta
1 sprig rosemary
Juice of 1 lemon
2 tablespoons chopped fresh parsley leaves
1 pound ground chicken
1/3 cup Panko
1/4 cup freshly grated Parmesan
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried parsley
1/4 teaspoon garlic powder
1/4 teaspoon crushed red pepper flakes, optional
Kosher salt and freshly ground black pepper, to taste

Steps:

  • In a large bowl, combine ground chicken, Panko, Parmesan, oregano, basil, parsley, garlic powder and red pepper flakes, if using; season with salt and pepper, to taste. Using a wooden spoon or clean hands, stir until well combined. Roll the mixture into 3/4-to-1-inch meatballs, forming about 25-30 meatballs. Heat 1 tablespoon olive oil in a large stockpot or Dutch oven over medium heat. Add meatballs, in batches, and cook until all sides are browned, about 2-3 minutes. Transfer to a paper towel-lined plate; set aside. Add remaining 1 tablespoon oil to the stockpot. Add garlic, onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes.
