These simple, frozen fruity yoghurt pops are the perfect after-school snack.

1 1/4 cups Mountain High™ lowfat vanilla yoghurt
2 cups peeled and sliced frozen (thawed) peaches
3 tablespoons sugar

Steps:

  • In blender, add all ingredients. Cover and blend on medium speed until smooth. If necessary, stop blender and scrape down sides.
  • Divide mixture among 6 (5-oz) paper cups. Cover cups with foil; insert craft sticks into center of each pop. (Or fill ice pop molds according to manufacturer's directions.) Freeze about 6 hours or until frozen.

If you don't have any popsicle molds you can use 175 gram plastic containers or cups. Cooking time is freezing time. This is kid friendly but kids of all ages enjoy these lol! You can really make these using any canned fruit you like, I have made these using canned pears!

1 (28 ounce) can sliced peaches in juice
1/4 cup sugar (for a sweeter taste use more sugar)
1/2 cup vanilla yogurt (regular or low-fat or peach flavored)
2 cups sweetened cranberry juice

Steps:

  • Drain the peaches reserving about 1/4 of the juice.
  • In a blender or food processor puree the peaches and reserved 1/4 cup juice and sugar until smooth.
  • Using on/off turns add in the yogurt.
  • Divide the the mixture between popsicle molds or cups.
  • Freeze for about 1 hour or until partially set.
  • Insert one stick in the center of each pop.
  • Pour and divide the cranberry juice on top of each pop.
  • Cover the mold lightly with plastic wrap and freeze until completely firm (about 6 hours).

This is my interpretation of a recipe I saw on PBS Sprout ON Demand (they didn't list the recipe, so my Mom (Mommy Diva) and I played around and came up with this one). Fun for little ones. Adjust the amounts of sauce and cheeses to your personal preferences. Would be a fun idea for an Elmo themed kid's party!!

Number Of Ingredients 6

1 English muffin, split in half
4 tablespoons pizza sauce, more to taste
1/4 cup mozzarella cheese, shredded
1 slice cheddar cheese, cut out 2 ovals (can use american)
2 black olives, sliced
8 slices turkey pepperoni, 4 of these sliced in half for the mouth

Steps:

  • Lightly toast the english muffin until it just begins to crisp, then remove from oven.
  • Spread 2 tablespoons of pizza sauce on each half.
  • Sprinkle with the shredded cheese, then add two slices of pepperoni topped with black olive for eyes, an oval of cheddar cheese for a nose and 4 semi-circles of pepperoni as a smiley mouth as you build a face on each half of muffin.
  • 375 degrees for 5-10 minutes until cheese is lightly melted.

1 tablespoon fresh lemon juice
2 tablespoons light corn syrup
2 tablespoons sugar
2 cups fresh strawberries (or frozen)

Steps:

  • Have ready 8 (3or4 oz)ice pop molds with sticks.
  • Puree yogurt,lemon juice,corn syrup,strawberries in blender or food processor .
  • pours into molds,cover with tops and insert sticks.
  • freeze at least 4 hours.
  • remove tops from molds
  • dip briefly in warm water
  • gently pull Pops out of mold.

MOM'S CHILE CON CARNE (KID FRIENDLY)

I've since learned this is not a true Chile con Carne, but that's what my mom always called it. She made this recipe while I was growing up, and I still make it today for my hubby or family. The heat in this can be adjusted by using more or less Chile powder or adding some cayenne pepper for bigger kids with spicier taste buds.

1 1/2 lbs ground beef
1/2 onion (chopped)
2 (15 ounce) cans reduced-sodium diced tomatoes
2 (15 ounce) cans low-sodium kidney beans
1 -2 tablespoon chili powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon celery salt
1/4 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon oregano

Steps:

  • Cook ground beef and onions over medium heat in a large sauce pan or dutch oven until beef is browned and onions are tender. Drain and return to pan.
  • Add tomatoes and kidney beans (do not drain off juce).
  • Add spices and stir until blended.
  • Bring to boil, then reduce to low heat, cover and simmer for 30-45 minutes.
  • You can taste and adjust spices after 20-30 minutes - add more chile powder or a bit of cayenne pepper if you like it spicier - let it simmer another 20 minutes to blend flavors.
  • Serve in bowls with shredded cheese, onions, sour cream or crackers if desired. I like it with saltines broken into the chile with a little cheese on it.

1 small paper cups
wooden stick

Steps:

  • Put yogurt in mixing bowl.
  • Pour orange juice and vanilla on top of yogurt. Stir until well mixed.
  • Pour mixture into the paper cups until the cups are half full.
  • Put paper cups in the freezer. Leave in the freezer until the mixture starts to freeze.
  • Put sticks in the cups for handles. Put back in the freezer and let the pops freeze until hard.
  • Enjoy.
