If you have some fresh red raspberries, this quick and easy French dessert can be made with ingredients you likely have on hand in your kitchen.

½ cup all-purpose flour
¼ cup white sugar
2 tablespoons white sugar
3 eggs
3 tablespoons butter, melted
¼ cup milk
2 tablespoons milk
1 squeeze lemon juice
2 cups fresh raspberries
2 tablespoons confectioners' sugar, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk flour and 1/4 cup plus 2 tablespoons sugar together in a bowl. Whisk in eggs and butter. Add 1/4 cup plus 2 tablespoons milk and lemon juice; whisk until batter is very smooth, about 3 minutes.
  • Pour batter into a 9-inch oval or round baking dish. Scatter raspberries on top.
  • Bake in the preheated oven until puffy and golden, about 30 minutes. Let cool, about 15 minutes. Dust with confectioners' sugar.

Clafoutis is a French dessert which combines fresh fruit and custard. Just like a souffle, it rises beautifully then it deflates once cooled. It's best made in a cast iron skillet but any oven-proof skillet will work. Sprinkle with powdered sugar just before serving.

4 large eggs
¾ cup brown sugar
⅓ cup all-purpose flour
¼ teaspoon salt
1 ½ cups milk
1 tablespoon vanilla extract
5 tablespoons salted butter
⅓ cup brown sugar
¼ cup water
6 cups apples, peeled and sliced into 1/2-inch wedges
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix eggs and brown sugar in a bowl until smooth. Whisk in flour and salt. Slowly add milk, stirring constantly until well combined. Stir in vanilla extract and set aside to rest.
  • Melt butter, brown sugar, and water in a 10 1/4-inch cast iron skillet over medium-high heat. Stir frequently until mixture starts to boil. Reduce heat to medium; swirl skillet, but do not stir, until mixture starts to thicken, about 2 minutes. Add apples and cinnamon. Cook and stir until apples are crisp-tender and starting to brown, 15 to 18 minutes. Remove from heat.
  • Stir egg mixture and pour over the apples in the skillet.
  • Bake in the preheated oven until edges are golden brown and custard is set, 28 to 35 minutes.

1/2 cups milk
1 cup heavy cream
1/2 vanilla bean
2 cinnamon sticks
1 heaping tablespoon all-purpose flour
3/4 cup sugar
6 eggs
1 teaspoon minced lemon zest
1 pint raspberries
1 pint blueberries
1 prebaked tart shell (recipe follows)

Steps:

  • Heat milk and cream with vanilla bean and cinnamon sticks. Scald and let cool, then strain out vanilla bean and cinnamon sticks. Into strained mixture, whisk in flour, sugar, eggs and lemon zest and transfer mixture to a pitcher or a pour spout.
  • Assemble berries in pre-baked, room-temperature tart shell. Raspberries should be top down (with opening down). Tightly packed but only one layer of fruit.
  • Pour just enough batter over berries to almost come up even with fruit. Be careful not to put too much, but enough to fill in all the spaces and come 5/6ths of the way up the berries.
  • Bake 15 to 20 minutes at 350 degrees until set and slightly brown on top.

3 bananas
1/2 pineapple
4 pinches cinnamon
100 g sugar
4 eggs
70 g sugar
100 g flour
1/4 liter chocolate milk
1/4 liter milk
50 g butter
1 pinch salt
20 g butter
1 tablespoon sugar

Steps:

  • Preheat the oven to 200 celsius.
  • Butter a cake mold and tap in 20 grams of sugar.
  • Peel the bananas and pineapple, then cut into small pieces. Add the cinnamon and sugar and let sit for 20 minutes.
  • In a separate bowl, beat the eggs and 70 grams of sugar until light and fluffy. Add the flour and a pinch of salt.
  • Slowly add the chocolate and regular milk - blend well.
  • Add the fruit to the milk mixtureand dot the top of the cake with butter.
  • Cook for 40 minutes.

1/4 cup cornstarch
1 1/4 cups whole milk
2 large eggs
2 large egg yolks
1 cup tsps kosher salt
1 pinch cayenne
1/2 cup crumbled cheese (divided)
1 -2 tablespoon of finely chopped fresh herbs (such as basil, chives, dill) or 1 -2 tablespoon flat leaf parsley

Steps:

  • Position rack in the top third of the oven and preheat to 450°; butter muffing tins.
  • Put the cornstarch in a medium bowl.
  • Whisking steadily, slowly pour in 1/2 cup of milk, mixing until quite smooth. Whisk in whole eggs and yolks, mixing again until smooth and gradually rest of the milk, the cream, salt and cayenne.
  • Put 1/2 tsp of the grated or crumbled cheese and and pinch of the fresh herbs into each of the muffing cup; add 2 tbsp of the batter.
  • Bake for 15 to 18 minutes.

1 (800 g) can plums, halves drained
3 eggs
1/4 cup sugar
1/4 cup all-purpose flour
1 teaspoon vanilla essence
600 ml milk, warmed

Steps:

  • Grease a shallow 18x28cm ovenproof dish with butter.
  • Place the plum halves, evenly over the base of the dish.
  • Place eggs and sugar in a food processor and blend until pale.
  • Add the flour and essence and process until smooth.
  • Add the milk.
  • Process until well mixed.
  • Pour the batter over the plums.
  • Bake in a moderately hot oven (190°C) for 25 to 30 minutes or until the custard is set and golden.

1 tablespoon milk
1 large egg
1 1/2 tablespoons cognac
3 tablespoons sugar
3 1/2 tablespoons all-purpose flour
1/2 lb apricot, fresh or canned,sliced ¼ inch thick (if using canned, drain first)
icing sugar

Steps:

  • With a whisk, blend milk, egg, Cognac and sugar until combined.
  • Add flour and blend until smooth.
  • Preheat oven to 350 degrees F.
  • Arrange apricots in a buttered 3 cup shallow baking dish (I use a quiche dish).
  • Pour custard mixture over and bake for 30-35 minutes or until golden and puffed.
  • Let cool for 5 minutes.

2 eggs
1/3 cup sugar
3 tablespoons flour
2/3 cup half-and-half
3 tablespoons butter, melted
3 -4 pears, peeled and cored
1/2 cup cranberries
sugar, for dusting (optional)
cinnamon, for dusting (optional)

Steps:

  • Preheat oven to 375. Butter a 9 inch glass pie plate.
  • In a medium bowl, whisk together eggs and sugar till lightly colored.
  • Whisk in the flour and half and half. Stir in the melted butter.
  • Pour the mixture into the prepared pie plate.
  • Arrange the pears in the batter (you can leave the pears in halves, but I cubed mine) and surround with cranberries.
  • If desired, dust top with sugar and cinnamon (or whatever spices you like - I added in some allspice as well).
  • Bake for 25 to 30 minutes, or till the pears are tender and the custard is lightly browned.
  • Cool slightly and serve.
  • (The original recipe says this serves 6-8, but 3 of us polished it off at breakfast quite easily).

500 g strawberries, hulled (1 lb 2 oz)
75 g caster sugar (3 oz)
125 g all-purpose flour (4 oz)
1 pinch salt
3 eggs, lightly beaten
300 ml milk (1 1/4 cup)
30 g powdered sugar (1 oz)

Steps:

  • Lightly grease a 25cm/10in round or a 25x20cm/10x8in rectangular pan (ceramic or metal) with softened butter.
  • Rinse the strawberries, leaving them a little wet.
  • Toss with 1/3 of the caster sugar, then spread them evenly in the bottom of the dish.
  • Sift the flour, salt and the remaining sugar into a mixing bowl.
  • Make a well in the middle and pour in the beaten eggs.
  • Mix well, drawing in the flour from the sides.
  • Stir in the milk gradually until you have a smooth batter (You can use a food processor to make the batter).
  • Pour the batter into the dish over the strawberries, and bake in a preheated oven at 180°C/350°F for about 35 minutes until lightly browned and puffed up.
  • Clafouti is at its best eaten lukewarm; dust with the icing sugar just before serving.
  • Serve plain or with some lightly sweetened whipped cream if you're feeling decadent.
