Bright cherry tomatoes, nutrient-rich zucchini, and a quick marinara sauce are all it takes to transform convenient frozen meatballs into elegant Italian kabobs.

0.5 6 ounce can tomato paste with Italian seasonings (1/3 cup)
0.25 cup water
0.5 teaspoon Italian seasoning, crushed
16 1-inch refrigerated or frozen Italian-style meatballs,* thawed
2 small zucchini
8 large cherry tomatoes
Nonstick cooking spray
8 metal or bamboo skewers

Steps:

  • Preheat indoor electric grill or broiler. In a medium bowl combine tomato paste, the water, and Italian seasoning to make a thick sauce. Add meatballs to sauce, stirring to coat; set aside.
  • Using a vegetable peeler, cut four evenly spaced strips from zucchini. Cut zucchini into 1-inch cubes.
  • On skewers, alternately thread meatballs and zucchini; thread a tomato onto each end. Lightly coat kabobs with nonstick cooking spray. Grill or broil (3 to 4 inches from heat) for 4 to 5 minutes on each side or until meatballs are heated through and vegetables are crisp-tender. Brush remaining sauce on kabobs during the last 2 minutes of cooking.

2 large eggs, lightly beaten
2/3 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup minced fresh parsley
4 teaspoons Italian seasoning
1/2 teaspoon salt
1/2 teaspoon garlic powder
2-1/2 pounds ground beef
1 medium onion, cut into 1-inch pieces
1 medium sweet red pepper, cut into 1-inch pieces
1 medium zucchini, cut into 1-inch pieces
1/2 small eggplant, cut into 1-inch pieces
1/2 cup balsamic vinegar
1/2 cup olive oil

Steps:

  • In a large bowl, combine the first 7 ingredients. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls., On 12 metal or soaked wooden skewers, alternately thread meatballs and vegetables. In a small bowl, combine vinegar and oil., Grill kabobs, covered, over medium heat for 8-10 minutes or until meatballs are no longer pink and vegetables are tender, basting frequently with vinegar mixture and turning occasionally.

24 frozen Italian meatballs, thawed
2 medium red onions, cut into 1-inch chunks
3 green bell peppers, cut into 1-inch chunks
3 Roma tomatoes, quartered
1 loaf Italian bread, cut into 1-inch cubes
1/2 cup Italian dressing
1 cup freshly grated Parmesan
Fresh parsley leaves, for sprinkling
2 cups marinara sauce, warmed

Steps:

  • Preheat a grill pan over medium-high heat.
  • Divide and skewer the meatballs, vegetables and bread evenly on 8 large skewers. Brush each of the skewers all over with the dressing.
  • Grill the skewers on all sides until there are grill marks on all the ingredients and the meatballs are heated through, 8 to 10 minutes.
  • Remove the skewers to a platter and sprinkle over the Parmesan cheese and parsley. Pour the warm marinara into a bowl and serve on the side.

1 cup tomato juice
1 egg, beaten
1 small onion, chopped
1 tablespoon chili powder
1 tablespoon cider vinegar

Steps:

These are absolutely great, easy and fun for a holiday party. Make ahead and skewer and then wrap to and freeze until ready to use. It is simply mix all the ingredients together, and just make the meatballs and chill before grilling. That is the key. Once skewered I keep lightly frozen before cooking and just brush with olive oil as they cook. Very simple. The two dipping sauces can easily be made in just minutes and these are just crowd favorites. In fact the yogurt mint can be made ahead and so can the cheese sauce and just reheated. I like to serve 2 or 3 per wooden small skewers and grill. Options: Sometimes I will make all cherry tomato skewers or all mushrooms skewers to go along with the meatballs. Just nice to add some vegetables with it and they go great with the dip. You could do small pearl onions or even squash. Anything would work. Just keep the skewers small.

2 teaspoons garlic, minced

1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons butter
2 tablespoons flour
1 1/4 cups milk
1 cup fontina or 1 cup parmesan cheese, grated

1 lb ground lamb
2 slices bread, soaked in milk and then squeezed out
3/4 cup minced onion
2 eggs, beaten well (small, 1 if using large or jumbo)
1 tablespoon garlic, minced
1 1/2 teaspoons olive oil
1/2 tablespoon of fresh mint
1/4 teaspoon ground allspice
1/8 teaspoon cinnamon
2 tablespoons dried currants
2 tablespoons chopped pine nuts, lightly toasted (optional)
2 cups plain yogurt (greek yogurt is best if you can, but not necessary)
1/4 cup fresh mint leaves, chopped
1/2 teaspoon salt
4 -5 tablespoons olive oil, to brush on the skewers as they grill

Steps:

  • Ok -- The directions for the meatballs is identical for both versions --
  • Mix all the ingredients for either the beef or the lamb in a large bowl. NOTE: I like to mix everything except the meat, then add the meat last to combine. Over mixing the meat can cause tough meatballs.
  • Meatballs -- Form the meatballs and lightly chill in the freezer to firm up a bit, refrigerator is fine if you don't have room in the freezer. Once firm, just 30 minutes or so, then put them on wooden skewers. I do 2-3 per small wooden skewers. And remember -- don't forget to soak the skewers 10-15 minutes so they don't burn on the grill. Then once again, put back in the freezer until ready to use. I take them out about 15-30 minutes before grilling, just to take the chill off, but they are still firm which makes grilling so much easier.
  • Grilling -- brush with olive oil on each side and grill 10-12 minutes until golden brown.
  • Sauce 1: Yogurt mint sauce.
  • Just mix the yogurt, mint, salt and chill until ready to use.
  • Sauce 2: Creamy Cheese Sauce.
  • In a small pot add the butter and melt on medium heat, then add the flour and stir just a minute to make a roux. Now add the milk and bring to a medium boil to thicken the sauce. Add the cheese, salt and pepper and stir until the cheese is melted. And you are done. Enjoy!
  • Just serve the meatball skewers with the dipping sauce.
  • Don't forget, doing some separate skewers of all tomatoes on one, maybe mushrooms or onions -- is a great touch. Everyone will love them.

1 bag frozen already cooked italian meatballs, thawed
whole mushrooms, rinsed
grape or cherry tomatoes
red and green pepper chopped for skewering
vadalia onion sliced for skewering
1 zuchini or summer squash sliced slightly thick
1/2 cup honey
1 cup open pit regular barbeque sauce (no other kind)
2 tablespoons molasses
lawry's seasoned salt
wooden skewers soaked for an hour

Steps:

  • 1. Take kabob skewers and set them in water for an hour if they're wood, so they won't burn. Put all the cut up vegetables in a large bowl and season with Lawry's seasoning salt (season lightly). Stir to make sure the vege's are all seasoned. Layer the vege's and meatballs as you want on the skewers. In a small bowl, mix the 1 cup of the barbecue sauce with the 1/2 cup honey and molasses, stir together. Set aside. Place the kabobs on the grill and cook on medium flame (300 degrees?)for 30 minutes brushing on the sauce mixture and turning occasionally until the meatballs are grilled through and the vege's are tender. The sauce should be sticking to the kabobs when finished.
  • 2. Serve with a rice dish and some grilled fresh pineapple slices for a great meal.
