This is a versatile pie; add garlic, fennel, chard, and/or herbed feta for tasty variations.

2 pounds spinach, washed and chopped
1 onion, chopped
½ pound fresh mushrooms, sliced
3 tablespoons vegetable oil
2 cups ricotta cheese
2 tablespoons dried basil
2 eggs
1 cup feta cheese
¾ cup butter, melted
1 (16 ounce) package phyllo dough

Steps:

  • Steam the spinach until just wilted.
  • In a medium skillet heat the oil until hot and saute the onions and mushrooms. Stir together with the spinach.
  • In a medium bowl, beat the eggs well. Stir in the ricotta, feta, and basil.
  • Butter a deep dish pie pan. Place a sheet of phyllo on the bottom of the pan, and brush melted butter over the sheet. Repeat until there are 5 or 6 sheets in the pan. Spread the ricotta mixture over the phyllo. Layer 5 or 6 more sheets of filo brushed with butter on top of the cheese. Spread spinach mixture over the phyllo. Top the pie with 5 or 6 more sheets of phyllo brushed with butter. Trim dough to the edge of the pie dish.
  • Bake at 375 degrees F (175 degrees C) for about 1 hour, or until pie is golden brown.

Irresistible Savory Cheese and Spinach Pie Recipe - This herb and cheese pie is similar to a Spanakopita Recipe, yet is packed with fresh herbs and three cheeses!

2 tablespoons ghee (+ more for brushing (or use half olive oil and half melted butter))
16 ounce fresh baby spinach ((or swiss chard))
1 large sweet onion (peeled and chopped)
1 cup chopped celery
1 cup chopped scallions
1 cup chopped parsley
1/2 cup chopped mint leaves
3 tablespoons chopped dill
8 ounces ricotta cheese
6 ounces shredded cheddar cheese ((off the block))
4 ounces crumbled feta cheese
2 large eggs
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
12 sheets filo dough (thawed (about 9 ounces))

Steps:

  • Preheat the oven to 400 degrees F. Set a large sauté pan over medium-low heat, and set out a 9X13 inch baking dish.
  • Add the ghee to the sauté pan. Once melted, add the onions and celery. Sauté for 5-8 minutes to soften and release the moisture.
  • Next add the spinach. Sauté another 5-8 minutes until the spinach has completely wilted down. Then add the scallions, parsely, mint, and dill. Sauté another 2-3 minutes.
  • Move the cooked greens to a fine mesh strainer. Press the greens down to remove as much moisture as possible. Then use a paper towel to press again until the greens seem dry. *Too much moisture in the filling will make it difficult for the pasty sheets to stay crisp.
  • Place the dried greens back in the pan. Add in all cheese, eggs, and seasonings. Mix well.
  • Prepare a small bowl of melted ghee. Brush a thin layer of ghee across the bottom of the baking dish. Place a filo sheet out on a clean work surface. Brush the top of the filo sheet with ghee. Then lay another filo sheet across the top. Continue to layer and brush the filo until you have 6 sheets stacked. Move the stack to the baking dish.
  • Spread the spinach and cheese filling evenly over the pastry sheets.
  • Then prepare a second filo stack for the top crust. However, this time overlap the filo sheets so they are wider than the top of the baking dish. You want to have a wide enough stack to be able to create wrinkles in the top crust. Brush and overlap 6 filo sheets with a 2-inch lip on either side, so the final stack is 4 inches wider than the bottom stack.
  • Move the filo stack to the top of the baking dish. Tuck the edges into the corners and sides. Gently press the top down, just a little, to create wrinkles in the top crust. Brush the top with ghee.
  • Bake the spinach pie for 35-40 minutes, until golden brown. If the crust starts to look brown too early, cover the top loosley with a piece of foil, and continue baking.
  • Allow the pie to cool for at least 5 minutes. Then cut into 12 pieces and serve.

1 -15oz. pkg pilsbury refrigerated pie crust (unbaked)
4 eggs
1-15 oz. ricotta cheese
4 oz asiago cheese, finely shredded
1/4 c grated parmesan cheese
dash(es) pepper
1 tsp basil
1-10 oz. pkg frozen chopped spinach, thawed & well drained
1/4 c seasoned breadcrumbs

Steps:

  • 1. Preheat oven: 375 degrees... Let pie crusts stand at room temperature. ** unless making your own crust. Place spinach in a strainer to drain. Lightly beat 1 egg; set aside.
  • 2. In large bowl-light beat remaining eggs. Add cheeses, pepper & basil; stir well. Stir in well drained spinach & bread crumbs.
  • 3. Line a pie plate with one crust; brush generously with some of the reserved egg. Spread cheese/spinach mixture evenly in crust. Top with second crust. Fold edges under to seal & flute edges as desired.
  • 4. Brush top crust with remaining reserved egg. Cut slits in top. Bake for 45 minutes...if necessary to prevent over-browning, cover edges with foil the last 20 minutes of baking. Cool for 15 minutes

2 very large bunches of spinach, about 36 - 40 stems (leaves washed stripped from stalk)
Olive oil
1 onion finely chopped
2 leeks, washed, trimmed, and finely chopped (white and pale green part only)
2 fennel stalks (and a few leaves) finely chopped
3 large garlic cloves, minced
1 tsp dried dill or 2 tsp fresh (finely chopped)
Finely grated zest from half a lemon plus its juice
½ cup cream cheese (about 125gm)
110gms halloumi cheese - grated (about 1 heaped cup)
30 gms of finely grated Parmesan or Pecorino cheese (about a 1/3 cup)
Large bunch of parsley, chopped (about 20-25gms)
10 mint leaves, finely chopped
Salt & pepper
4 sheets of phyllo pastry
About 3 Tbs butter, melted
1 Tbsp (aprox) white and or black sesame seeds

Steps:

  • Preheat the oven to 180C/350F
  • Wash the spinach leaves that have been stripped from the stalk and roughly chop. Drain in a colander.
  • Heat a large nonstick frying pan and add a generous splash of olive oil. Fry the onion, leeks, and fennel until translucent over medium / low heat (about 5 minutes). Add the garlic and cook for a further minute or so.
  • Add the chopped spinach in parts, wilting it as you go and until you can fit it all into the pan. add the dill, lemon zest, and juice and cook for about 5 - 8 minutes until soft and cooked through. Allow to cool slightly.
  • Once cooled, stir through the cream cheese, grated halloumi, Parmesan, chopped parsley, and mint. Adjust seasoning to your taste adding salt and black pepper as required.
  • Remove 4 sheets of phyllo from the roll quickly seal the remainder of the pack and either re-freeze or refrigerate until further use (I just refreeze).
  • Roughly divide the mixture into 4 parts. Place the first sheet on a work surface with the thinner side at the bottom and spread one-quarter of the mixture along the bottom in a log shape. Lightly brush the whole top side of the sheet with butter. Roll the log of spinach up and place it in a. lined baking pan.
  • Repeat with the remaining 3 sheets of phyllo, joining and twirling it into the pan. Allow a little space between the rolls although it should be snug. It does expand slightly when baked. Brush the tops generously with melted butter and sprinkle white and or black sesame seeds over the top.
  • Bake for 40 minutes and until golden.
  • Serve on its own or with tzatziki.

1 loaf (8 oz) prepared cheese product, cut into cubes
2 cups shredded Cheddar cheese (8 oz)
1 package (3 oz) cream cheese, softened
1 cup chopped pitted kalamata olives
1 can (10 oz) diced tomatoes with green chiles
1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain
1 clove garlic, finely chopped
1 round loaf (l lb) pumpernickel bread

Steps:

  • Spray 4-quart slow cooker with cooking spray. In slow cooker, place cheese product, Cheddar cheese and cream cheese. Cover; cook on High heat setting 1 hour, stirring occasionally, until cheese is melted.
  • Stir in olives, tomatoes, spinach and garlic. Reduce heat setting to Low. Cover; cook at least 20 minutes but no longer than 2 hours.
  • Cut thin round slice from top of bread loaf. Hollow out loaf by cutting along edge with serrated knife, leaving about 1-inch shell, and pulling out large chunks of bread. Cut top slice and hollowed-out bread into bite-size pieces.
  • Place loaf on serving plate; fill with hot cheese dip. Arrange bread pieces around loaf for dipping.

1 package rapid-rising dry yeast
3/4 cup warm water
1 tablespoon sugar
3 cups flour
1/4 cup olive oil
1 teaspoon salt
Egg wash
Cornmeal, for dusting
2 tablespoons olive oil
2 garlic cloves, minced
1 pound baby spinach, washed and dried
Salt and pepper
15 ounces ricotta
1 cup grated Parmesan
1/2 cup shredded fontina
1 egg
1/2 teaspoon red pepper flakes

Steps:

  • For Dough: In the bowl of a standing mixer fitted with a dough hook, bloom the yeast by combining it with warm water and sugar. Stir gently to dissolve, then let stand 5 minutes until foam appears. Turn mixer on low and slowly add the flour, 1 cup at a time. Pour in 1/4 cup olive oil and add salt. When the dough starts to come together, increase the speed to medium. Stop the machine periodically to scrape the dough off the hook. Mix until the dough pulls away from the sides of the bowl, about 10 minutes.
  • Turn the dough out onto a lightly floured work surface and fold over itself a few times. Form dough into a round and place in an oiled bowl, turn to coat the entire ball with oil so it doesn't form a skin. Cover with plastic wrap or damp towel and let rise in a warm place until doubled in size, about 45 minutes. Test the dough by pressing 2 fingers into it. If indents remain, the dough is adequately risen. When ready, knead the dough gently and divide in 4 balls. Sprinkle the rounds lightly with flour, cover, and let rest for 15 minutes. This will relax the dough, making it easier to stretch. In the meantime prepare filling.
  • For Calzones: Place a pizza stone in the oven and preheat to 400 degrees F. If you don't have a stone, simply grease a baking pan. Roll or spread the dough discs into 10-inch circles, leave the dough slightly thick so that the filling will not ooze out. Spoon a quarter of the filling onto 1 side of the dough round and brush the outer edge with egg wash to help form a seal. Fold dough over to enclose the filling and form a large turnover. Roll up the edges with your fingers to close tightly and prevent leaking. Cut a few slashes in the top to allow steam to escape during baking and brush with egg wash. Repeat with remaining rounds. Sprinkle a pizza peel (or prepared baking pan) with cornmeal and carefully transfer the calzones. Bake directly on pizza stone for 25 to 30 minutes until golden brown. Let the calzones rest 10 minutes before cutting to allow the cheese to set. Serve with basic tomato sauce if desired.
  • For Filling: In a saute pan, heat oil over medium heat. Add garlic and cook 2 minutes until lightly browned. Add the spinach, season, and continue to cook until wilted, about 5 minutes. Transfer to a colander and squeeze out the excess liquid. If necessary, drain the ricotta in a sieve to remove excess moisture also. Calzone filling should be fairly dry, because it may leak out or make the dough mushy. Combine spinach, cheeses, egg, and pepper in a large bowl.

This was passed on to me by a friend who is a celiac sufferer. It uses rice as the crust and is great for brunch or as light summer meal...not sure where she got it but it tastes great. (I sometimes add a touch of nutmeg to the filling for a bit of variety) ETA (7/2/2014): I have seen that folks are having issues with the cooking time, so have adjusted accordingly.

1 1/2 cups Minute Rice
1 1/2 cups boiling water
1 teaspoon salt
1/2 cup mozzarella cheese
1 egg, beaten
10 ounces frozen spinach or 10 ounces fresh spinach, cooked and drained
3 eggs
1 cup grated feta cheese
2 -3 tablespoons chopped onions, sauteed
1 tomatoes, sliced
2 tablespoons parmesan cheese

Steps:

  • Combine rice and boiling water in a 9" plate.
  • Cover and let stand 5 minutes.
  • Stir in salt, mozzarella and egg and use spoon to press and form into a pie shell.
  • Combine spinach, feta cheese, onion and eggs.
  • Mix well.
  • Pour mixture into rice shell.
  • Top with tomato slices and sprinkle with parmesan.
  • Bake at 400 degrees for 45-60 minutes, depending on oven.
  • OR microwave at HIGH for 10 minutes and let stand for 3 minutes before serving.

4 extra-large eggs, lightly beaten
2 cups crumbled feta cheese

8 sheets frozen phyllo dough, thawed

Steps:

  • For the spinach and cheese mixture: Preheat the oven to 375 degrees F. Grease a 13-by-9-inch baking dish with cooking spray or butter.
  • In a large dry skillet over medium heat, lightly toast the pine nuts. Remove and reserve. In the same skillet, melt the butter with the olive oil. Add the onions and saute until translucent, about 10 minutes. Add the garlic and saute 2 to 3 minutes. Stir in the spinach. Cook until tender and any excess water evaporates, about 5 minutes. Remove from heat and let cool.
  • In a large bowl, mix the eggs, feta, ricotta, Parmesan, pine nuts, pepper, salt and nutmeg. Add the reserved spinach mixture and stir to combine. Transfer to the baking dish, pressing to make sure it is even.
  • For the phyllo dough crust: Layer sheets of phyllo onto the spinach mixture, brushing each sheet with melted butter before adding the next. Fold the edges to make a crust and brush with butter. Sprinkle with za'atar or sesame seeds. Bake until golden brown, 55 to 60 minutes.

1/4 lb diced bacon
1/4 lb diced ham
12 ounces sliced fresh mushrooms

Steps:

  • Preheat oven to 325 degrees. In a large skillet, cook bacon and ham for 5 minutes, until done, stirring occasionally. Add chopped mushrooms and continue to cook for another 8 minutes, until mushrooms start to release some liquid.
  • Add chopped garlic and spinach. Stir and cook until the spinach is wilted, about 2 or 3 minutes. Set the skillet off the heat to cool a few minutes while the egg mixture is being prepared. In a large mixing bowl, beat eggs until well blended. Mix in the cheeses, one at a time. Add nutmeg, salt and pepper. Mix all together well.
  • Slowly add the cooled mushroom-spinach mixture to the eggs and cheese. Combine all of this well and pour into the 9 inch deep dish pie shell.
  • Place pie on a cookie sheet that is lined with foil and bake for 30 minutes at 325 degrees.
  • Remove from oven and cool 15-20 minutes before slicing.

  • Pre heat oven to gas mark 6.Rinse the spinach and cook briefly in the water that it holds. Drain well - I put it in a small colander with a dish on top with a set of old weights in. Get rid of as much liquid as possible.
  • In a bowl combine the soft cheese, grated cheddar. egg and spinach.
  • Add grated nutmeg and salt and pepper to taste. Leave to cool slightly whilst you roll the pastry.
  • Put rolled pastry onto a 30cm enamel pie plate - I find that the pastry cooks better on these.
  • Add the filling. Use the second egg to brush round the edge before adding the top.
  • Crimp the edges to seal, glaze with beaten egg then sprinkle the crushed walnuts on top.
  • Bake for 30minutes until the top is golden.

  • In a large mixing bowl, add the flour and salt and pour in the olive oil. Using a dough hook attachment, mix to combine the ingredients for 10-15 seconds. Add one cup of water (*2). If the dough is still crumbled, add a teaspoon of water and mix for one minute. Add a few more drops of water until the dough looks like an elastic ball. Then beat for about 5 minutes or until the dough pulls away from the sides of the bowl. The dough should be soft and elastic. If it is not, beat for a few more minutes.
  • FRESH SPINACH: If you use fresh spinach, rinse it thoroughly, then cut and discard the tougher ends of the stems. In a colander, massage the fresh spinach leaves with a good sprinkle of salt. RINSE WELL, drain and then gently squeeze out the excess water. Alternatively, blanch the spinach for 1 minute, drain and squeeze out excess water. Set it aside to cool.
