Mincemeat image

Mincemeat is a traditional English treat that is usually used as filling for mince pies during Christmas, but it tastes great mixed with vanilla ice cream, as well. This recipe uses butter instead of the traditional suet, which makes this mincemeat suitable for vegetarians. Store in the refrigerator for up to 6 weeks.

1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 large green apple, peeled and finely chopped
1 ¼ cups sultana raisins
1 ⅛ cups white sugar
½ cup dried currants
½ cup raisins
½ cup butter
½ cup chopped almonds
1 ½ tablespoons grated orange zest
½ teaspoon ground cinnamon
1 cup brandy

Steps:

  • Combine cinnamon, cloves, ginger, nutmeg, and allspice in a bowl. Reserve 1 heaped teaspoon for the mincemeat. Store the rest in a small jar for a later use.
  • Inspect two 12-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until mincemeat is ready. Wash new, unused lids and rings in warm soapy water.
  • Combine apple, sultanas, sugar, currants, raisins, and butter in a saucepan. Cook over low heat and stir gently until butter has melted. Stir in chopped almonds, orange zest, 1 teaspoon of mixed spice, and cinnamon. Bring mixture to a simmer and cook, stirring occasionally, 5 to 10 minutes.
  • Remove from heat and set mincemeat aside to cool down for 30 minutes. Stir in brandy. Spoon into sterilized jars.

One of these days Michele and I will travel to the south of France, where we'll eat this amazing tomato tart at least once a day. It's going to be hot, since we'll have to go in the middle of summer to enjoy best possible tomatoes, but that's fine, as long as there's chilled rosé. One layer of tomato is plenty, since more than that will make for an overly wet tart, which means your pastry will not stay crispy.

1 sheet frozen puff pastry, thawed and cut into quarters
2 ½ tablespoons Dijon mustard
1 large ripe tomato, sliced into 1/4-inch rounds
salt and freshly ground black pepper to taste
3 pinches herbes de Provence
1 tablespoon freshly grated Parmigiano-Reggiano cheese
2 tablespoons extra-virgin olive oil, divided
1 pinch chopped fresh oregano
1 pinch chopped fresh parsley
1 pinch chopped fresh thyme

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place 2 pieces of puff pastry onto a silicone-lined baking sheet. Press the short seam of 1 piece onto the other to form the rectangular base of the tart. Cut seams off the other 2 pieces of puff pastry and press them into the edges of the base to act as the border.
  • Freeze dough until firm, about 10 minutes.
  • Score border with a knife, making shallow cuts 1/4-inch apart. Press the bottom of a fork onto the seam in the middle and poke holes all over the base.
  • Bake tart shell until lightly golden and partially puffed, about 10 minutes. Press down on the base using the bottom of a fork. Avoid pressing border. Let cool for 10 minutes.
  • Spread mustard over the inside of the tart. Arrange tomato slices into a single layer on top and cut a few slices in half to fill in the gaps. Season with salt and pepper. Generously sprinkle herbes de Provence on top. Add Parmigiano-Reggiano cheese and drizzle most of the olive oil on top.
  • Bake in the preheated oven until pastry is well browned and crispy, 25 to 30 minutes. Cool to room temperature on the baking sheet or transfer to a wire rack using 2 spatulas. Drizzle remaining olive oil over the tart and sprinkle fresh oregano, parsley, and thyme on top.

  • Trim crusts from bread and butter.
  • Place butter side down in tart tins.
  • Brown beef and add onion, worcestersauce and soup.
  • Slowly stir in cheese.
  • Mix well.
  • Fill tart shells with mixture.
  • Bake 350 for 35 minutes.
  • These freeze well. After removing from freezer, cook 10 minutes before serving.

This year I used frozen tart shells for my baking. I didn't have any spare pastry and I needed something to top my Mincemeat tarts... this is what I came up with -- and they are GREAT!

1/3 cup butter
3/4 cup flour
1/2 cup white sugar
15 frozen tart shells (3 inch size)
500 g mincemeat

Steps:

  • Preheat oven to 400'.
  • Using a fork; Combine Butter, Flour and Sugar. Blend until the mixture looks like small peas (flour will be totally incorportated).
  • While the tart shells are still frozen, spoon about 1 tbsp of Mincemeat into each one. Using the back of a spoon, smooth over the Mincemeat to create a flat surface.
  • Spinkle the top of each tart with approximately 1 tbsp of the Crumble. Do NOT press down.
  • Bake at 400' for 15 minutes or until edges of the pastry shell are lightly browned.

1 large onion, chopped
2 tablespoons butter or 2 tablespoons ghee
3 large tomatoes, chopped
2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon allspice
1/4 teaspoon cayenne pepper
2 tablespoons ground sumac
3 tablespoons tahini
2 tablespoons pomegranate molasses
2 tablespoons lemon juice
2 tablespoons parsley, chopped
2 sheets puff pastry

Steps:

  • Saute onions in butter until soft. Remove from pan and set aside.
  • Cook ground beef in pan until brown and fully cooked. Drain and put back in pan.
  • Add onions to pan. Add tomatoes, spices, tahini and molasses and cook over low heat for a few minutes until tomatoes almost disappear.
  • Cut each pastry sheet into 25 squares. Lay each square in a well of the muffin tin (there will be one leftover; you can make a tiny turnover :).
  • Spoon meat mixture into each tart.
  • Bake at 400 degrees for 10 minutes or until edges of pastry are browned.
  • Top with parsley.

Tourtiere is a French Canadian meat pie that is traditionally served on Christmas Eve. I first ever had these at the home of a French Canadian friend..I have been making them at Christmas time as a make ahead appetizer for years now. It can be made into one individual pie, but I prefer the individual tarts..I freeze these individually on cookie sheets and then vacuum seal in my bagger or can be stored in a plastic container.

1 lb ground beef
1/2 lb ground pork
1 small onion, finely diced
2 garlic cloves, finely minced
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon poultry seasoning or 1 teaspoon sage
3/4 cup water
1/2 cup previously cooked and mashed potatoes

Steps:

  • Combine first 8 ingredients in large saucepan. ( I do mine in microwaveable casserole dish).Simmer.
  • If doing on stove top bring to boil, then simmer for about 15 minutes, stirring to prevent sticking.
  • Remove from heat and add mashed potatoes. Mixture should be moist and thick. Cool completely.
  • Line muffin tins with tart shells. Spoon meat mixture to fill.
  • Bake at 400 degrees F until browned.
  • To reheat from freezer, about 10 t0 20 minutes in oven or toaster oven 350 degrees F.
