MEATLOAF ROLL
A wonderfully tasty recipe with an Italian slant. This meatloaf is even better a day or two after it's cooked. Great for sandwiches, too. Serve with mashed potatoes, steamed veggies, and gravy!

Steps:
- To make tomato sauce, heat olive oil in a saucepan over medium-low heat; cook and stir the onion, green pepper, and celery in the hot oil until the onion is soft, about 5 minutes. Pour the undrained whole tomatoes, tomato sauce, 1 1/2 teaspoons Italian seasoning, sugar, oregano, 3/4 teaspoon garlic powder, Worcestershire sauce, and water into a blender and blend until smooth. Pour the tomato mixture into the saucepan and simmer over low heat for 1 1/2 hours, stirring occasionally. Stir in 1/4 cup parsley. Set aside.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- In a bowl, mix together the ground beef, bread crumbs, 1 teaspoon garlic powder, Creole seasoning, cayenne pepper, and salt until the mixture is thoroughly combined; spread into the bottom of the prepared baking dish.
- Scatter the mozzarella cheese over the meat; spread 1/4 cup of the sauce over the cheese. Sprinkle the sauce with 1/4 cup chopped parsley and 2 teaspoons of Italian seasoning. Pick up one end of the meat layer (short side), and gently roll the meat around the filling. Reposition the meat roll in the center of the dish, and pour the remaining tomato sauce over the roll.
- Bake in the preheated oven until the roll is no longer pink in the center, 45 minutes to 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- In a large bowl, combine the bread crumbs, eggs, tomato juice, parsley, garlic, oregano, salt and pepper. Crumble beef over the mixture and mix well. , On a pieces of heavy-duty foil, pat meat mixture into a 12x10-in. rectangle. Place the ham and shredded cheese on loaf to within 1/2 in. of edges. - 1. Mix together hamburger,onion,cracker crumbs,salt, pepper, beaten egg. Make into 4-6 patties. Add about a spoonful of stuffing. Roll up and tuck in sides.
- 2. Cover with 1 can of mushroom soup diluted with 3/4 can of water mixed with 1 tsp soy sauce & ketchup. Bake in shallow pan 40 minutes at 350.
- 3. Serve with mashed potatoes, noodles or rice with a nice side salad. So Yummy!

- In large bowl, combine beef, crumbs, egg, onion, salt and oregano. Stir in 1/2 tomato sauce; set aside.
- Cut 2 pieces of waxed paper 15 inches long. Unroll crescent roll dough and don't separate. Lay end to end on top of wax paper and place second piece of wax paper on top. Now take rolling pin and roll the dough out till it's half the thickness that it was originally .
- Place meat mixture in center and spread out over dough. Sprinkle meat with cheese, bell pepper & mushrooms & top with remaining tomato sauce.
- Roll up meat, jelly-roll fashion, starting at narrow end; use wax paper to help.
- Place seam side down in non-stick 9-1/4-in. x 5-1/2 inches x 2-3/4-in. bread pan.

- Spread flat on a sheet of aluminum foil.
- Top with spinach; spread flat.
- Top with layer of ham; roll up mixture (don't roll up with aluminum foil) and seal foil around roll.

ROLLED MEATLOAF
This is an awesome meatloaf recipe that I just made up working with ingredients on hand. It may sound odd, but once everything is baked together it turns out delicious!

- Heat oven to 375.
- Mix meats, bread crumbs, milk, egg and seasonings together. Lay out a large piece of waxed paper, lightly sprayed with cooking oil.
- In a food processor mix onions, parsely and golden raisins. (raisins may stay whole, that's ok!) If you do not have a food processor just chop onion and parsley. Mix sauce ingredients together, set aside.
- Spread meat onto waxed paper in an 11 by 9 inch rectangle.
- Spread parsley onion mix evenly on top.
- Start on one of the 9 inch sides and begin rolling the meat tightly. (Like a jelly roll) Lift into a lightly greased loaf pan.
- Bake for 1 hour at 375. Add sauce to top of meatloaf 1/2 way through cooking time.
MEXICAN MEATLOAF ROLL
A woman I work with gave me this recipe, and it is really good. This is one of those recipes that if you like or dislike something, put it in, or leave it out. Very versatile.

- Place ground chuck in a bowl.
- Place remaining ingredients in blender and mix.
- Pour and stir into ground chuck.
- Roll out meat mixture into a rectangle.
- Spread refried beans on meat, arrange peppers and sprinkle with cheese.
- Roll up, jelly roll fashion, place seam side down in a 9 x 5 loaf pan.
- Sprinkle tortilla chips on top.
- You can add more cheese on top if desired.

Adapted from a recipe from Rachael Ray's 30 Minute Meals. Original recipe calls for raisins and pine nuts - not my thing. I have prepared it with ground beef and pork only, no veal. Easy to prepare on a weeknight!!

- Pre-heat oven to 350°F.
- Mix meat and remaining meatloaf ingredients.
- Flatten meat mixture out on a wax paper lined cookie sheet in a thin layer 1/2" thick x 12" long x 6 to 8" wide.
- Cover meat with a layer each of arugula (or spinach), prosciutto and cheese.
- Use the wax paper to help roll up the meat into a large log working across the 6 or 8" side, resulting in a 12" log.
- Seal ends, place seam side down on a cookie sheet (I line with foil). Drizzle lightly with extra virgin olive oil.

ROLLED BROCCOLI MEATLOAF

- Preheat oven to 350°F.
- Cook, steam broccoli, crumble up and set aside to cool.
- In a large mixing bowl combine ground beef, egg, soup mix and A1 sauce.
- On a large flat surface (bread board etc.) place the foil.
- Spread meatloaf mixture into a rectangle, about 1/2 inch thick.
- You want it as thin as possible because you are going to roll it like a jelly roll sprinkle broccoli then cheese over surface of meat.
- Roll up, starting at the small end of the loaf roll.
- It helps to roll with the foil under, it kinda holds it together as you roll.
- Pinch/close the small ends of the loaf.
- Bake about 1 hour.
- I like to pour more A1 over the top and right before pulling it out of the oven sprinkle a little more cheese on top.
ITALIAN ROLLED MEATLOAF
You can make this using all beef or half beef and half ground pork in place of the sausage meat, I have to say that the using the sausage meat with the ground beef is better! You can really add in any spices that you like, I prefer it with oregano, use seasoning salt for this or regular white salt

- Set oven to 375 degrees.
- Grease a 13 x 9-inch baking pan.
- Mix the first 12 ingredients together.
- On a large sheet of doubled waxed paper, pat the mixture into a 13x10-inch rectangle.
