GREEN GODDESS DRESSING
This bright and vibrant dressing has evolved since it originated in 1920s California. Earlier versions contained tarragon, anchovies, Worcestershire or avocados. Our reimagined classic is full of fresh, tender herbs, lemon and a balanced blend of yogurt and mayonnaise.

Steps:
- Add the yogurt, mayonnaise, basil, dill, parsley, chives, garlic, lemon zest, juice, vinegar, 1 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper to a blender. Puree until smooth, scraping down the sides with a rubber spatula as needed. Season with salt and pepper to taste. Refrigerate in an airtight container for up to 5 days; stir well before using.
RITA'S FAMOUS DRESSING BALLS
These are a tradition in my mother-in-law's family. I never liked dressing until I had these. They get a nice golden brown on the outside and taste great with gravy.

Steps:
- Place bread in a large bowl and let sit overnight.
- Preheat oven to 350°.
- Sauté onions and celery in butter or margarine tender. Pour over bread and toss with hands to mix.
- Add chicken broth and mix with hands again. Add salt and pepper to taste.
- Add eggs and celery seed and mix thoroughly.
- Form into 2" balls and put in a baking dish.
- Bake for about 45 minutes or until golden brown.

- Combine the first 6 dressing ingredients and stir to dissolve the sugar.
- Add remaining dressing ingredients and mix well.
- Combine the ham, turkey, cheese and pickles together in a large bowl.
- Toss together with the dressing.
- Divide the lettuce among plates, top with salad and garnish each plate with 2 olives.

COPYCAT DURKEE FAMOUS SAUCE
Eugene R. Durkee created the first prepared and packaged salad dressing called Durkee Famous Sauce in 1857. To appreciate his endeavor, it is important to remember this was created prior to refrigeration. His creation was carried west by the pioneers. Historians have found old, discarded Durkee dressing bottles along covered-wagon trails. Durkee Famous Sauce was even purported to be stocked in Mary Todd Lincoln's pantry and served to Abraham Lincoln in the White House during the Civil War.

Steps:
- Whirl all ingredients in blender on high speed until smooth, about two minutes.
- Transfer to top of double boiler and cook over gently boiling water, stirring often for 12 to 15 minutes or until thickened and smooth.
- Replace mixture back into blender and whirl 30 seconds or until smooth, using high speed.
- Refrigerate in covered container 24 hours before using.
- Keep covered in the refrigerator for up to 3 months.
