3 lbs red potatoes
1 tablespoon salt, divided
2 teaspoons salt, divided
1 1/4 cups vegan mayonnaise (use Vegenaise)
2 tablespoons white wine vinegar
2 jalapeno peppers, chopped and sauteed in a pan with a little oil
1/4 teaspoon ground black pepper
6 green onions, thinly sliced
1/4 cup fresh cilantro, chopped

Steps:

  • Cover potatoes with water in a 4-quart saucepot. Bring to a boil over medium-high heat. Add 1 tablespoon salt. Reduce heat to low and simmer 20-30 minutes or until potatoes are tender. Drain and cool slightly. Slice into 1/4-inch thick slices.
  • Combine Vegenaise, vinegar, jalapeno peppers, 2 teaspoons salt, and black pepper in a large bowl. Stir in remaining ingredients and toss gently to coat. If desired, season with additional salt and pepper. Serve chilled or at room temperature.

1 ball Best Pizza Dough (or Thin Crust Dough)
4 green onions
3/4 cup shredded mozzarella cheese
1/2 cup shredded Pecorino Romano cheese
2 eggs
Olive oil
Kosher salt

Steps:

  • Follow the Best Pizza Dough recipe to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)
  • Place a pizza stone in the oven and preheat to 475°F. OR preheat your pizza oven (here's the pizza oven we use).
  • Slice the green parts off of the scallions so they form long ribbons. In a small skillet, heat 1/2 tablespoon olive oil. Add the scallions and sauté until slightly tender, stirring, for 1 minute. Remove from the heat.
  • When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don't have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see How to Stretch Pizza Dough for instructions. Then gently place the dough onto the pizza peel.
  • Brush olive oil over the dough and sprinkle with kosher salt. Sprinkle with the mozzarella cheese, then the Pecorino cheese. Top with scallions. Carefully crack two eggs on top and sprinkle with a bit of kosher salt.
  • Transfer the pizza to the pizza stone using the pizza peel, and bake until the egg white is set and the yolk is still runny, about 7 minutes.

2 Tbsp soy sauce
1 Tbsp raw sugar
1 Tbsp sesame oil
1 Tbsp toasted sesame seeds
2 tsp Korean chili powder ((gochugaru))
2 tsp white vinegar
1 tsp minced garlic

Steps:

  • Rinse thoroughly the thinly sliced green onion in running cold water for 2 to 3 mins. (This is to remove the slimy surface). Drain/Remove the excess water on the green onion. (I just shook the strainer over the sink a couple of times).
  • Mix the green onion with the dressing lightly but thoroughly. (You will want to wear a food handling glove).
  • Serve it on a plate.

1/2 cup olive oil
1 bunch green onions (scallions), trimmed, white bottoms and green tops separated
1 small clove garlic, chopped
1 1/2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
2 tablespoons sour cream
Salt and freshly ground black pepper
Pasta Salad
12 ounces bow tie pasta, cooked according to package directions
3 teaspoons vegetable oil
1 red onion, cut into 1/4-inch thick rings
1 red pepper, seeded and diced
1 yellow pepper, seeded and diced
1 orange pepper, seeded and diced
1 cup chopped fresh parsley
1 cup shredded unsweetened coconut, toasted

Steps:

  • For the green onion dressing: Heat a grill. Drizzle 1/2 teaspoon of olive oil over the white portion of the green onions. Place the white bottoms of the green onions on the hot grill and grill until they are slightly softened and charred. Put the grilled whites of the green onions, the green onion tops, garlic, white wine vinegar, Dijon mustard and remaining olive oil in a blender, puree until smooth. Transfer the mixture to a bowl and stir in the sour cream. Season the dressing with salt, and black pepper, to taste. Set the dressing aside.
  • For the pasta salad: Heat a grill. Place the cooked pasta in a large bowl, toss with 2 teaspoons of vegetable oil. Drizzle the remaining 1 teaspoon of vegetable oil over the red onion rings and season with salt.
  • Place the red onions on the hot grill and grill until softened, approximately 10 minutes, remove the onions from the grill. Coarsely dice the grilled red onions. Add the chopped red onions, red pepper, yellow pepper, orange pepper, chopped parsley, and green onion dressing to the pasta. Mix to incorporate all ingredients. Season the pasta with salt, and pepper, to taste. Garnish with toasted coconut.

  • Yellow onions. Yellow onions are the so-called staple onion. Usually, when a recipe calls for onion without any specification about the type, it’s a subtext that you should use yellow onions.
  • Red onions. Red onions have a high sugar content and are considered the sweetest variety of onions. They also have a somewhat peppery taste, which makes their flavor profile all the more intriguing.
  • Sweet onions. Sweet onions closely resemble yellow onions but have a sweeter taste. They’re often used to make onion rings because they’re perfect for frying and caramelizing.
  • Chives. Chives are technically an herb and not a vegetable, but they’re so similar to green onions that sometimes it’s hard not to confuse the two. They have a rather sweet flavor and are a lot milder than green onions.
  • Green garlic. Green garlic is the young version of garlic, just as green onions are the young version of onion. This type of garlic is harvested when the plant is still immature, and it’s composed of the green stalks that grow above the ground, while the common garlic, or garlic salt, we use in the kitchen is taken from the bulbs.
  • Garlic. As we’ve already mentioned, garlic and onions have different flavor profiles, but we felt like including it in this list because both garlic and green onions are used for the same reason: adding an additional layer of flavor to your dishes.
  • Leeks. Leeks are probably the less known and less appreciated members of the onion family. Many people don’t even know that leeks are actually an onion variety.
  • Ramps. Ramps are like a jolly card because they are hard to find in stores but when you do, you got your hands on a fine green onions substitute, that can also work as a garlic substitute.
  • Green bell peppers. The most hated or most loved bell pepper brother: the green pepper. Unlike red or yellow bell pepper, the green pepper has an almost completely different flavor profile, that’s why people usually either love it or hate it.
