SOUTHWEST CHICKEN SALAD
This is a copycat from McDonalds..I went in a hunt for this recipe since I became obsessed with it. My obsession started because I added a chopped avocado to my McDonalds purchased salad and it was heaven. I got this from recipelink.com, the avocado is optional since it's not in MD's salad but sooo recomended. The dressing that the salad comes with is Paul Newman's Natural Southwest dressing, so sub that if you find it at the store if you don't want to make it from scratch.

Steps:
- Mix together marinade ingredients in a small bowl -- add chicken and coat it in the marinade. Set aside.
- In a pan spritzed with nonstick spray, cook tomatoes and corn over high heat until slightly charred.
- Place lettuce in a bowl, and top with marinated chicken, tomatoes and corn, chopped pepper, and black beans. Sprinkle with cheese and chips. Add the chopped avocados.
- In a small dish, combine all of the dressing ingredients with 1 teaspoons water.
- Mix in the dressing, squeeze some lime and enjoy!

Unfortunately, McDonald's has phased out its Southwest Salad. However, I don't have to live without it thanks to this recipe. This is supposed to be an exact replica of it for you to make at home. Feel free to take it to work in a plastic container and make your co-workers jealous. The points value for Weight Watchers is 7 points. I got this recipe from an email from the Hungry Girl web site. That's what the "HG" stands for! Enjoy! - Preheat oven to 425 F. Crack egg into a large bowl, then coat chicken in it. Mix panko and regular breadcrumbs in a large bowl, then coat chicken in the mixture.
- Place chicken tenders on a parchment-lined baking sheet and spray with cooking spray then season with salt if desired. Bake for 6-7 minutes per side until chicken is fully cooked.
- Meanwhile, mix ingredients together for salad dressing and assemble ingredients for salads while chicken is cooking.
- When chicken is done, remove from oven and let cool. Slice into strips then top each salad with chicken and toss in 2 tbsp of dressing (or less) per salad. Serve and enjoy!
