3 slices cheddar cheese
1 tablespoon butter
tomato soup, to taste, optional

Steps:

  • Cut crust off the slices of bread. This makes the bread easier to roll and will hold the shape better.
  • Flatten slices of bread with a rolling pin.
  • Layer the slices of cheese on top of each slice of bread so that the cheese is offset from the bread by about 1 inch (2 ½ cm) vertically. Other fillings can be added here if desired.
  • Roll each slice of bread with cheese vertically as tightly as possible without cracking the bread. Gently squeeze each roll to maintain its shape and set down on its seam.
  • Melt the butter in a pan. Grill each roll starting with the seam side down on the hot pan.
  • Rotate so that all sides are evenly golden brown.

Two 8-ounce packages cream cheese, softened
4 ounces jarred salsa (hot)
4 green onions, finely sliced
4 large flour tortillas
10 slices bacon, cut into small pieces and cooked till crisp
16 thin slices deli ham

Steps:

  • In a medium bowl, mix together the cream cheese, salsa and onions until fully combined. Spread the tortillas with the mixture, leaving a 1/2-inch edge. Top each with bacon and ham, then roll into tight cylinders and wrap in plastic wrap. Refrigerate for at least one hour. Remove from fridge, discard the plastic wrap and cut each roll into 1-inch pieces, discarding the uneven ends (or eating them while preparing, like I did!). Each roll should yield eight pieces. If you like, before cutting, stick toothpicks in the rolls at 1-inch intervals; it makes serving a snap.

6 slices white bread
6 slices cheddar cheese
2 Tablespoons butter

Steps:

  • With a sharp knife, cut the crusts off each piece of bread.
  • Using a rolling pin, flatten each piece of bread.
  • Place a piece of cheese on the bread and carefully roll up the cheese inside the bread. Repeat with the remaining cheese and bread pieces.
  • In a medium skillet, melt butter over medium heat. Place roll-ups on the skillet and let cook on one side (about 2-3 minutes). Carefully flip the roll-ups over and cook on the other side for another 2-3 minutes.
  • Remove roll-ups from heat and serve.
