2-INGREDIENT NEVER-FAIL CREAM BISCUITS RECIPE
These two-ingredient biscuits have one of the lowest effort-to-greatness ratios of any recipe I can think of. They take practically no effort or practice to pull off, yet produce some of the lightest, tenderest, tastiest biscuits around.

- Adjust oven rack to center position and preheat oven to 450°F. Place flour in a large bowl. If making sweet biscuits, whisk in sugar. Stirring with a wooden spoon, drizzle in cream. Stir until a lumpy dough is formed. Do not over mix.
- For Drop Biscuits: Using a 1-ounce cookie scoop, scoop balls of dough onto a parchment-lined baking sheet, spacing them 2 inches apart. Brush tops with cream and bake until golden brown, about 12 minutes. Let cool slightly and serve.
- For Flaky Rolled Biscuits: With a rolling pin, roll the dough into a 12-inch square. Using a bench scraper, fold the right third of the dough over the center, then fold the left third over so you end up with a 12-by-4-inch rectangle. Fold the top third down over the center, then fold the bottom third up so the whole thing is reduced to a 4-inch square. Press the square down and roll it out again into a 12-inch square. Repeat the folding process once more, then roll the dough again into a 12-inch square. Use a 3- to 4-inch biscuit cutter to cut out rounds and transfer to a parchment-lined baking sheet, spaced 2 inches apart. Press together scraps to form additional biscuits. Brush tops with cream and bake until golden brown, about 12 minutes. Let cool slightly and serve.

NANNY'S NEWFOUNDLAND TEA BISCUITS
My nanny used to make these tea biscuits all the time. One of my favorite memories of visiting Newfoundland is standing at the kitchen table as she made these and gave us a little bit of the raw dough to taste. They're light and delicious! Serve hot with butter and jam.

- Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
- Whisk flour and baking powder together in a bowl; stir in raisins. Whisk milk and eggs together in a bowl.
- Beat butter, sugar, and salt together in a bowl with an electric mixer until light and fluffy, about 1 minute. Beat egg mixture into butter mixture; stir in flour mixture until dough is just mixed.
- Turn dough out onto a lightly floured surface and pat or roll out about 1-inch thick. Cut dough with a biscuit cutter or juice glass; place biscuits onto the prepared baking sheets.

- Combine water, yeast, and sugar in a large bowl. Let stand until bubbly and frothy, about 10 minutes.
- Stir in milk, egg, salt, and enough flour to make a soft dough. Knead dough on a lightly floured surface until smooth, 6 to 8 minutes. Place dough into a well oiled bowl, cover with a damp cloth, and set aside to rise until the dough has doubled in volume, about 1 hour.
- Punch down dough and knead well. For garlic naan, knead in garlic at this point.
- Pinch off small handfuls of dough about the size of golf balls. Roll into balls, cover with a clean cloth, and allow to rise until doubled in size, about 30 minutes.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Roll out 2 balls of dough into elongated ovals. Place on an ungreased baking sheet and cook under the broiler until lightly browned, about 2 minutes. Brush butter on both sides and flip. Continue broiling until the second side is firm and golden, 2 minutes more. Repeat with remaining dough.

Heaven knows that I can't make a biscuit. But whenever my mother-in-law gave me this recipe, she said that there was no way that I couldn't make these!! She was right. I made them on the first try & they were delicious!!

- 1. Preheat oven to 400', Mix all ingredients until it forms a ball in your container. Turn the dough onto a floured surface. Knead the dough 6 to 7 times. Roll out with a floured rolling pin and cut into biscuits. (I use a small drinking glass)

- In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Brush uncooked side with butter, and turn over. Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.

NEVER-FAIL YEAST BISCUITS
A high-rising yeast biscuit that still tastes like a baking powder one. If I want biscuits for breakfast, I make up the batter the night before and let it rest in the bowl, covered, on the counter overnight. In the morning, I just flop it out on a floured surface, fold it a few times, pat it out, cut and bake.

- Dissolve yeast in water, set aside.
- Mix dry ingredients in order given, then cut in shortening until it's the size of small beans.
- Stir in the buttermilk and yeast mixture. Dough will be very sticky.
- Cover bowl with towel and let sit until ready to use. (At least 1 hour, but it is fine if it sits for a couple hours.)
- Scrape out onto well floured board. Flip the dough over and knead or fold lightly (4-6 times).
- Roll out about 1/2" thickness and cut with sharp biscuit cutter. (Cutting with a dull cutter or water glass "seals" the dough and won't let the biscuit rise as they should.)
- Place on lightly greased baking sheet and let raise slightly (10-30 minutes).
- Bake at 400º F until light brown, 10-12 minutes.

- Mix flour, sugar, bk powder, cream of tartar, salt and soda in a bowl. Mix well.
- Then add shortening by hand and then milk.
- Knead well. Cut out ( I use a small tomatoe paste can with bottom cut out) and place on greased cookie sheet ( I use partchment paper or stone).
- Bake at 400 for 20 minutes ( sometimes on a hot day will only be 15 minutes).
- I have used my kitchenaid mixer with dough hook and they have turned out ok.

- Preheat oven to 400 degrees.
- Mix flour, salt, baking powder and cream of tartar.
- Cut shortening into dry ingredients till it resembles coarse cornmeal.
- Whisk egg into milk and then add milk mixture to dry ingredients just till combined.
- Pat out dough on floured surface till about 3/4" thick - try to handle as little as possible.
- Cut into biscuits.
- I bake mine in a preheated cast iron skillet.
- Bake for 20-25 minutes or till light brown.
- Makes 12-15 biscuits (depending on what size glass you find to cut them with!).
- Variations:.
- *add 1/2 cup sugar and 1 teaspoons cinnamon to dry ingredients and 1 teaspoons vanilla extract to milk mixture for sweet biscuits. Its also REALLY good to add about 1/2 cup of frozen blueberries to these - leave out the cinnamon and they taste a lot like scones. Just add berries before the wet ingredients. Great with butter and honey or jelly.
- *add 1/2 cup shredded sharp cheddar cheese, 1/2 teaspoons dry italian herbs and 1-2 teaspoons minced garlic to dry ingredients. Brush tops with melted butter and sprinkle parmesan cheese on top before baking for a quick Italian side bread in place of breadsticks/garlic bread.
- *add 1/2 cup shredded cheese, 1 cup cooked meat (sausage, bacon or ham), and 2 eggs (cooked/scrambled) for take-and-go breakfast biscuits. Mix the cheese, meat and eggs with the flour before adding the wet ingredients. The meat, egg and cheese are baked right into the biscuits. These freeze really well in small ziplocks and can be microwaved for about 1 minute for instant breakfast.
