McCall's Cooking School Baked Macaroni, Cheese and Chicken Casse image

Yowzers. Good stuff. Complete comfort food at it's finest. Who says you can't whip up a delicious homemade mac and cheese in no time. Recipe courtesy of McCall's Cooking School.

Number Of Ingredients 14

2 quarts water
1 teaspoon salt
2 cups elbow macaroni
1/4 cup butter
1/4 cup flour
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon dry mustard
2 cups milk
1/4 cup pimiento, chopped
1/4 cup green pepper, chopped
2 cups cheddar cheese, coarsely grated
1 cup chicken, cooked and slivered
1 large tomatoes, cut into wedges

Steps:

  • Preheat oven to 375. Put water in a large sauce pot, add salt, and bring to a rolling boil over high heat.
  • Add macaroni all at once and stir with a fork. Return water to a boil and reduce heat to moderately low. Simmer for 4 to 5 minutes or until tender. Do not overcook. Drain.
  • Meanwhile, put the butter in a medium-sized saucepan and heat over medium heat.
  • When butter is melted, remove from heat and stir in flour, salt, pepper, and mustard. When mixture is smooth, gradually add milk, stirring until no lumps of flour remain.
  • Return saucepan to heat and cook over moderately high heat, stirring constantly, until milk mixture comes to a boil and thickens slightly.
  • Add chopped pimiento and chopped green pepper. Reduce heat to low and simmer 1 minute longer.
  • Stir 1 1/2 cups of the grated cheddar cheese, the cooked drained macaroni, and the slivered chicken into the milk mixture.
  • Pour into a shallow 2-quart round or oval baking dish. Sprinkle the rest of the grated cheddar cheese over the top of the macaroni mixture.
  • The casserole can be prepared to this point and covered in foil or plastic wrap in the refrigerator for a couple days or until ready to bake.
  • Or, place casserole on center rack in oven and bake for 20 minutes (longer if casserole has been chilled). Cook until macaroni is hot and bubbly and the cheese is melted.
  • Remove from oven. Arrange tomato wedges on top of casserole and serve.

1/2 lb cheddar cheese, shredded
1 (8 ounce) can tomato sauce
1 (12 ounce) can evaporated milk

Steps:

  • Cook Macaroni as directed in a stockpot and drain. Return to stockpot over very low heat. Add all ingredients and stir until cheese is melted. Pour into baking dish. Bake for 20 minutes at 350. Top will look golden brown and be crunchy. ENJOY!

I know there are a lot of mac and cheese recipes out there but this is really good and oh so creamy.

2 cups uncooked macaroni
1/2 cup butter
1/2 cup flour
1 1/2 cups milk
1 1/2 cups sour cream
1 teaspoon salt
1/2 tablespoon pepper
10 ounces cheddar cheese

Steps:

  • Heat oven to 350.
  • Cook macaroni in boiling water according to directions. Drain. Pour into a 3 quart casserole.
  • In a saucepan, melt butter and stir in flour. Gradually stir in milk and sour cream. Add salt and pepper.
  • Cook over low heat, stirring constantly,until bubbly and thicken.
  • Reserve 1 cup of cheese for the top of casserole. Toss macaroni with remaining cheese. Pour sauce over macaroni and mix.
  • Sprinkle remaining cheese.

This recipe came off of the box of Mueller's elbow macaroni and everyone loved it so I am putting it here for safe keeping. I used the Kraft three cheese crumbles (monterey jack, colby and cheddar) in place of sharp cheddar and I think that is what made it SO yummy! And I sprinkled sharp cheddar on top the last 10 minutes of cooking and did not use the croutons.

8 ounces mueller's elbow macaroni
1/4 cup margarine or 1/4 cup butter
3 tablespoons all-purpose flour
1/8 teaspoon dry mustard
1/8 teaspoon salt (optional)
1/8 teaspoon black pepper
2 cups milk
2 cups shredded sharp cheddar cheese
1 cup crouton

Steps:

  • Cook elbow macaroni for 9 minutes.
  • Drain, cover and set aside.
  • Preheat oven to 350 degree F.
  • In medium saucepan, melt margarine or butter; blend in flour, mustard, salt and pepper.
  • Cook until mixture is smooth and bubbly; gradually add milk.
  • Cook and stir over medium heat until mixture boils; simmer 1 minute, stirring constantly.
  • Gradually mix in cheese. Stir over low heat until cheese is melted.
  • Add pasta; mix together lightly. Pour into 2-quart casserole.
  • Top with croutons. Bake 25 minutes.

The Easiest Baked Macaroni & Cheese image

There may be lots of recipes out there for macaroni and cheese, but this is the first one I ever found that you don't have to cook the macaroni before you bake it. It is also really simple to put together - all in the casserole dish you are baking it in! I got this from a newsletter of an organization. I take this to potlucks all the time and I always come home with none of it left. It's a dish I'm constantly handing out the recipe for; be sure not to use cheese that has been frozen and thawed because it will ruin the consistency of the dish. You can also cut down on the butter if you would like to lose some of the fat. This is not a real creamy cheesy type of macaroni and cheese, which can sometimes be a little too rich for our tastes. I've made those, but my family prefers this kind over any other.

3 tablespoons butter, melted
1/4 teaspoon pepper

  • Melt butter in microwave.
  • Pour macaroni in 2-3 quart casserole dish. Pour butter over macaroni. Stir well to coat.
  • Add salt and pepper. Stir well.
  • Add cheese. Sometimes I may use a mixture of monterey, colby and cheddar, depending on what I have at the time. Mix well.
  • Add milk. Do not stir.
  • Bake uncovered in oven for 60 minutes. I do think this tastes best when it is still hot from the oven.
