RECIPE VIDEO ABOVE. This is the broccolli version of Cauliflower Cheese! Tender broccoli smothered in a creamy garlic-parmesan cheese sauce which is pretty much the one I use for everybody's favoure Mac and Cheese. It's nice and saucy, rather than being stodgy and so thick you can cut into it like cake, so there's extra cheese sauce to spoon over once served.

600g / 1.2 lb broccoli florets (, small to medium (2 large heads, Note 1))
60g / 4 tbsp unsalted butter
4 garlic cloves (, minced)
6 tbsp plain flour
2 cups milk (, preferably warm (full or low fat))
1 1/2 cups chicken broth/stock (, preferably warm)
1.5 cups cheddar cheese, freshly grated ((Note 2))
1/2 cup grated parmesan cheese
Salt and pepper
1/2 cup panko breadcrumbs
1/4 cup grated parmesan cheese
20g / 1.5 tbsp unsalted butter, melted

Steps:

  • Preheat oven to 180C/350F.
  • Mix Topping ingredients in a bowl with a pinch of salt and pepper. Set aside.
  • Melt butter in a large pot over medium heat. Add garlic and cook for 1 minute until it smells incredible.
  • Add flour and cook for 1 minute, stirring constantly.
  • While whisking, slowly pour in half the milk. Once fully incorporated, whisk in the remaining milk plus the chicken broth.
  • Cook for 4 to 5 minutes, whisking every now and then and more towards the end, until the sauce thickens so that it coats the back of a wooden spoon and when you draw your finger across it, the path stays (see video).
  • Turn off heat, add cheeses, stir in (don't worry if it doesn't melt fully). Then do a taste test and add a bit of salt if required.
  • Add broccoli and stir well to coat.
  • Pour into a casserole dish, pat down to fill. Sprinkle over Topping, cover with foil then bake for 25 minutes.
  • Remove foil and bake for a further 20 minutes until the topping is deep golden and the broccoli is tender.
  • Stand for 5 minutes before serving.

6 ounces fresh cauliflower
6 ounces fresh broccoli
2 tablespoons butter
2 ½ tablespoons all-purpose flour
2 ½ cups milk
1 (8 ounce) package shredded sharp Cheddar cheese
1 teaspoon English mustard
cayenne pepper to taste
salt and pepper to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a medium saucepan with enough water to cover, boil cauliflower and broccoli until tender, about 10 minutes. Drain, and transfer to a medium baking dish.
  • In a separate medium saucepan over low heat, melt butter, and stir in flour. Gradually whisk in milk, and increase heat to medium. As the mixture thickens, whisk in English mustard, cayenne pepper, salt and pepper. Continue whisking until a thick sauce has formed, being careful not to allow the mixture to boil. Sprinkle in 2/3 of the cheese, and stir until melted.
  • Pour sauce over broccoli and cauliflower. Bake in the preheated oven 30 minutes, until bubbly and lightly brown. Sprinkle with remaining cheese during the final 10 minutes of cooking.

1 large head of cauliflower , broken into florets
1 vegetable stock cube
1 large head broccoli , broken into florets
200g tub crème fraîche
1 tbsp wholegrain mustard
splash of white wine (if you have some)
generous grating nutmeg
2 slices stale bread , whizzed into crumbs

Steps:

  • Cover the cauliflower in cold water, add the stock cube, then bring up to the boil. Add the broccoli and cook for 1 min, then drain (reserving some of the stock) and allow to steam-dry for 1-2 mins. (The veg shouldn't be tender.)
  • Heat oven to 200C/180C fan/gas 6. Mix together the crème fraîche, mustard, wine (if using), nutmeg and some seasoning. Add the veg and mix well. Tip into an ovenproof dish, scatter with the breadcrumbs and bake for 30 mins until golden and crisp on the top.

2 large eggs eggs
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup shredded sharp Cheddar cheese

1 (15 ounce) package seasoned croutons, finely crushed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
  • Bring a large pot of lightly salted water to a boil. Add broccoli and cauliflower. Cook, uncovered, until tender, 3 to 4 minutes. Drain in a colander and rinse under cold running water. Transfer to the prepared casserole dish, making sure vegetables are evenly distributed.

1/4 cup butter ((55 grams))
1/4 cup all purpose flour ((33 grams))
1-2 pinches salt*
1-2 dashes pepper
1-2 stems fresh thyme or parsley (chopped)
2 1/2 cups milk ((600 grams))
3-4 tablespoons freshly grated parmesan cheese ((20-28 grams))

Steps:

  • Pre-heat the oven to 350F (180C).
  • Cook the cauliflower for about 3-5 minutes or al dente either by boiling in a large pot of water or vapour. Drain well, for approximately 10 minutes.
  • While cauliflower is draining, in a medium / large pot add the butter and melt, then whisk in the flour, salt, pepper and thyme.
  • Then slowly add the milk, stirring constantly, bring to a boil and boil for approximately 2-3 minutes until thickened.
  • Place 2-3 tablespoons of white sauce on the bottom of the 8 inch baking dish. Add the drained cauliflower and cover with remaining white sauce. Then sprinkle with the parmesan cheese. 10 ounces cream of mushroom soup or 10 ounces chicken soup

3-4 large crowns fresh broccoli, cut into large florets
1 large head fresh cauliflower, cut into large florets
1 medium onion, chopped fine
1 stick butter or margarine, melted
1 or 2 8 oz blocks cream cheese, soft
2 can(s) cream of celery soup
1 tsp powdered or granulated garlic
salt & pepper to taste
4 oz shredded 6-cheese italian blend, divided
4 oz shredded sharp cheddar cheese, divided
1 tsp paprika
panko bread crumbs (optional)

Steps:

  • 1. Preheat oven to 350 F. In a large microwave safe bowl put about 1/4 cup water, minced onion, broccoli and cauliflower pieces. Microwave on high for about 2-3 minutes, or until tender crisp. Toss to mix the onions & vegetables together then pour off excess water.
  • 2. Put the steamed veggies into a large buttered or sprayed baking dish. If using glass, reduce oven to 325 F.
  • 3. In the same bowl used to steam the veggies, mix the butter, cream cheese, soup, granulated garlic, salt & pepper, and about 3 oz each of the shredded cheeses, then pour over the vegetables.
  • 4. Bake uncovered for about 15 minutes and gently stir everything together. Taste for seasoning and adjust if needed. Top with remaining cheese then sprinkle lightly on top with paprika for color. If desired sprinkle some Panko bread crumbs over the top.
  • 5. Bake for another 15-20 minutes until hot and bubbly, and cheese has melted.
  • 6. *Note: This makes a very large dish so I usually divide the recipe in half. I only use 1/2 of one block of cream cheese, and use half of the ingredients from the original recipe. It was perfect and was more than enough for 3-4 people as a side dish.

1 cup sharp cheddar
2 cloves garlic (minced)
¼ cup heavy cream

4 oz cream cheese
¼ teaspoon dried dill

  • Preheat oven to 400°F.
  • Bring a large pot of water to a boil & add cauliflower. Cook 3 minutes. Add broccoli to the pot and cook 2 minutes more. Drain well and set aside.
  • Chop bacon and cook in a pan until crisp. Remove bacon reserving 1 tablespoon of bacon fat.
  • Add garlic to the bacon fat and cook until fragrant, about 30 seconds. Add cream cheese and dill. Cook until melted and creamy.
  • Stir in cream and broth and simmer for 3 minutes. Remove from heat and stir in ½ cup cheese.
  • Toss sauce with vegetables and chicken. Place in a baking dish, top with remaining cheese, and bake 20 minutes or until bubbly.

1 medium head cauliflower (or two 10-ounce packages frozen cauliflower florets)
1/4 teaspoon of salt (plus more, to taste)
3 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
Dash ground black pepper
Optional: dash cayenne pepper
Optional: dash of nutmeg

Steps:

  • Gather the ingredients.
  • Break the cauliflower into bite-sized florets.
  • Add water to a large saucepan to a depth of about 2 inches. Add about 1/4 teaspoon of salt, and bring the water to a boil.
  • Add the cauliflower florets to a steamer basket and place the basket in the pan. Cover and cook for 4 to 5 minutes, or until the cauliflower is just tender.
  • Drain the cauliflower and transfer to a serving bowl.
  • Melt the butter in a small (1-quart) saucepan over medium-low heat.
  • Whisk the flour into the butter until smooth and well blended. Continue cooking for 2 minutes, stirring constantly.
  • Gradually add the milk and continue cooking until smooth and thickened, stirring constantly.
  • Season to taste with salt, pepper, and cayenne or nutmeg (if using), and then pour over hot drained cauliflower. Gently mix to coat the florets.
