Time 3h5m

Yield 8

Number Of Ingredients 11

3 tablespoons margarine
½ cup chopped onion
½ cup chopped mushrooms
2 stalks celery, chopped
3 cups torn day-old bread
salt and ground black pepper to taste
1 (4 pound) boneless pork loin roast
3 tablespoons water, or as needed
1 tablespoon ground thyme
1 tablespoon herbes de Provence
1 pinch garlic powder, or to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).

  • Cut the pork loin almost in half lengthwise, cutting to about 1 inch from the bottom; open pork loin like a book. Cover with plastic wrap and lightly pound with a meat mallet to flatten the meat. Spoon stuffing onto the pork loin, roll the meat over the stuffing, and tie pork loin together in three places using kitchen twine.
  • Place tied loin into a roasting pan and pour about 3 tablespoons water around the roast. Season roast with salt, black pepper, thyme, herbes de Provence, and garlic powder.
  • Roast stuffed pork loin until an instant-read meat thermometer inserted into the center of the stuffing reads 160 degrees F (70 degrees C), 2 1/2 to 3 hours. Rest meat for 15 minutes before untying and slicing.

Pork Loin Stuffed with Dried Fruit image

Provided by Food Network Kitchen

Categories     main-dish

Time 3h10m

Yield 6 to 8 servings

Number Of Ingredients 14

1/4 cup golden raisins
1/4 cup pitted prunes, chopped
1/4 cup dried apricots, chopped
1/4 cup brandy or apple brandy
3 tablespoons extra-virgin olive oil
1 shallot, chopped
1/2 Golden Delicious apple, chopped
1 clove garlic, minced
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh sage
1 tablespoon plus 1 teaspoon chopped fresh rosemary
Kosher salt and freshly ground pepper
3/4 cup low-sodium chicken broth
1 3-pound boneless center-cut pork loin roast

Steps:

  • Preheat the oven to 350 degrees F. Combine the raisins, prunes and apricots in a small bowl; pour in the brandy. Cover with plastic wrap and microwave until hot, about 2 minutes. Set aside until the dried fruit is plump, at least 10 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the shallot and apple and cook until softened, 3 to 4 minutes. Add the garlic, parsley, sage, 1 teaspoon rosemary, 1/2 teaspoon salt and a few grinds of pepper. Cook until the garlic is softened, about 1 minute. Add the dried fruit?brandy mixture and cook until the skillet is dry, 1 to 2 minutes. Add the chicken broth and simmer until the mixture is very soft and the skillet is almost dry, about 5 minutes. Let cool completely.
  • Push the handle of a wooden spoon into the center of one end of the pork roast; work the handle through the length of the roast to create a tunnel, widening the tunnel with your fingers or a small paring knife until about 1 1/2 inches wide.
  • Stuff the dried fruit mixture into the tunnel, firmly pressing to make sure it?s packed into the pork roast. Rub the outside of the pork roast with the remaining 1 tablespoon olive oil and sprinkle with the remaining 1 tablespoon rosemary, 1 teaspoon salt and 1/2 teaspoon pepper. If the pork has a skinny flap that runs along one side, tuck it under and tie kitchen twine around the pork in a few spots.
  • Set a rack in a large roasting pan. Place the pork on the rack and roast until golden brown and a thermometer inserted into the center registers 140 degrees F, 1 hour 15 minutes to 1 1/2 hours. Let the pork rest at least 20 minutes before slicing.

BACON WRAPPED PORK ROAST

Bacon Wrapped Pork Roast image

A savory pork roast that fills the entire home with an appetizing aroma. This dish is perfect for holidays, special dinners, and is so simple to make it can be served on any day for any occasion! The roast is not only pleasing to the taste, but it's appearance is sure to impress any guest. This dish does take a bit to cook, but the end result of slowly roasting the pork will be worth the wait!

Provided by Hungry_for_more

Categories     One Dish Meal

Time 3h20m

Yield 10 serving(s)

Number Of Ingredients 10

2 -3 lbs boneless pork loin
1 lb sliced bacon
4 garlic cloves, sliced
2 sprigs fresh thyme
1 teaspoon savory
1/2 cup vegetable oil
1/2 cup red wine
1 cup water
1 teaspoon pepper
1 pinch salt

Steps:

  • Preheat oven to 375 degrees.
  • If pork loin is thick, cut it in half vertically so that there are 2 long, but thinner pieces of meat.
  • With a knife, poke small but deep holes all throughout the meat
  • Insert sliced garlic pieces into these holes.
  • Season meat with salt and pepper.
  • Wrap bacon slices all around the meat, making sure that no part of the loin is exposed. Bacon slices should be wrapped closely together. For two pieces of roast, it should take about a pack of bacon.
  • Finely chop fresh thyme and sprinkle over meat.
  • Sprinkle savory over roast.
  • Take a large pan and pour in oil and wine, mixing them together.
  • Place roast in pan and cover with aluminum foil (do not poke holes).
  • Bake the covered roast for 2 1/2 hours, occasionally lifting cover to check liquid levels. Add water to pan as wine and oil diminishes.
  • After 2 1/2 hours, remove aluminum foil from pan and continue to cook roast for an additional 30 minutes. This will cause the bacon to become crispy. Add a little wine or water during the last 30 minutes. The end result will be a crunchy outside, with a tender, juicy inside.
  • Slice and serve with mashed potatoes, using the juices from the pan as a gravy.

BACON-WRAPPED ROAST PORK LOIN STUFFED WITH DRIED FRUIT

Bacon-Wrapped Roast Pork Loin Stuffed With Dried Fruit image

This impressive dish sounds far more complicated than it is. The oven does most of the work. Don't forget the sauce: the tang of the Dijon cream sauce is a welcome counter to the sweetness of the brandied fruit. Add a green salad (maybe some red potatoes?) and you have the perfect Sunday supper.

Provided by Molly O'Neill

Categories     dinner, project, main course

Time 2h20m

Yield 6 servings

Number Of Ingredients 11

1/2 cup brandy
1 cup (6 ounces) mixed dried, pitted fruit (for example, apples, prunes, apricots, pears)
2 teaspoons chopped sage leaves
1 1/2 teaspoons chopped thyme leaves
Salt and freshly ground black pepper to taste
1 boneless 3 1/2-pound pork loin, trimmed
8 slices (about 1/4 pound) bacon
2 shallots, peeled and finely chopped
2/3 cup red wine
2/3 cup heavy cream
1 teaspoon Dijon mustard

Steps:

  • In a small saucepan, warm, but do not boil, the brandy. Place the fruit in a small bowl, cover with the brandy and soak for 20 minutes. Drain, reserving the brandy, and coarsely chop the fruit. Return the fruit to the bowl and toss with 1 teaspoon of the sage and 1/2 teaspoon of the thyme and season it lightly with salt and pepper.
  • Preheat the oven to 450 degrees. Place the pork on a work surface. Using a long, round metal or wooden skewer about 3/4-inch thick, pierce a channel through the center of the loin. Stuff the fruit into the channel, using the skewer to pack it in. Season the loin lightly with salt and pepper and drape the bacon slices over it.
  • Use butcher's twine to tie the roast. Place the roast in a roasting pan fitted with a rack and roast for 15 minutes. Lower the heat to 350 degrees and continue to roast until the pork is cooked but, when poked with a knife, the juices at the center still run slightly pink, about 1 hour more. Transfer the roast to a serving platter and allow to rest, covered, for 15 minutes.
  • Meanwhile, remove the rack and place the roasting pan on top of the stove over medium heat. Add the shallots to the pan juices and cook, stirring, until they are softened, about 3 minutes. Add the reserved brandy and the wine and simmer until reduced by half. Whisk in the cream and mustard and continue to simmer until slightly thickened.
  • To serve, remove the twine from the roast, slice and serve with the cream sauce.

BACON-WRAPPED PORK LOIN WITH BROWN SUGAR GLAZE

Bacon-Wrapped Pork Loin With Brown Sugar Glaze image

Enjoy a flavorful pork roast recipe made with boneless pork loin wrapped in slices of bacon with a seasoned rub and a simple brown sugar glaze.

Provided by Diana Rattray

Categories     Dinner     Entree

Time 2h20m

Yield 12

Number Of Ingredients 14

5 to 6 pounds boneless pork loin
4 to 6 slices bacon
For the Rub Mixture:
1 teaspoon chili powder
1/2 teaspoon paprika
1 1/2 teaspoons salt
1/2 teaspoon black pepper (coarse ground)
1/2 teaspoon cumin (ground)
1 teaspoon cinnamon
For the Glaze:
1 cup brown sugar (light, packed)
2 tablespoons flour
2 tablespoons cider vinegar
1/2 teaspoon dry mustard

Steps:

  • Gather the ingredients.
  • Heat oven to 350 F.
  • Place the pork loin in a roasting pan.
  • In a small bowl, combine the rub ingredients: chili powder, paprika, salt, black pepper, cumin, and cinnamon. Rub this mixture over all surfaces of the pork loin.
  • Cut each strip of bacon in half crosswise and lay them over the pork loin. You can secure the bacon with toothpicks if desired.
  • Roast for about 1 1/2 to 2 hours, or until the pork registers about 150 F.
  • Near the end of the roasting time, prepare the glaze. In a saucepan, combine the brown sugar, flour, cider vinegar, and dry mustard. Bring to a simmer and simmer for about 1 minute.
  • Spoon the glaze over the pork and return the roast to the oven.
  • Roast for about 15 to 20 minutes longer, or until pork registers 160 F.
  • Remove from the oven and tent the roast with foil. Allow it to rest for 5 to 15 minutes before carving. This time allows the juices to be reabsorbed and distributed rather than run out when you cut into the roast.
  • Carve into slices of 1/4 inch to 1/2 inch.
  • Serve and enjoy. Store any leftovers , wrapped in plastic or aluminum foil, in the refrigerator. This recipe was developed at the time when the recommended minimum internal temperature for pork roasts was 160 F. This has changed. The United States Department of Agriculture (USDA) updated safety recommendations for pork in 2011 to lower the target temperature to 145 F. At this temperature the pork loin might be a little pink in the middle, but it is safe. As a bonus, it won't be overcooked and dried out. If you choose to use the new target temperature, you may be able to shorten the roasting time. Aim for 140 F before you put on the glaze.

  • Cut lengthwise the pork making sure you don't cut all the way. Fill the cut with two or three slices of bacon. Close. and secure with some kitchen string as in the photo.
  • Rub the pork with the dry rub, and then over the rub, wrap the pork with bacon (easier to do lengthwise, see pic). Tie it up.
  • Place in the oven or BBQ at about 275 F / 140 C / Gas 1. This is cooked on a low heat slowly to keep it nice and juicy, and of course delicious!

  • INGREDIENTS (about 10 Servings) For the Pork Loin and Marinade: A 3 to 4 lb pork loin (this was a 4 lb center cut half pork loin). *1/2 cup Orange Juice (I like Tropicana's 50 with 50% less sugar)
  • PREPARATION, STEP 1. STEP 1: Butterfly the pork loin; prepare the marinade, and marinate the pork for about 3 hours. *Slice the pork loin as pictured, opening it up and flattening it out.
  • PREPARATION, STEP 2. STEP 2: Soak the dried apricots and Craisins for several hours (soaking them at the same time you marinate your pork loin will work fine); then make the stuffing.
  • PREPARATION, STEP 3. STUFF AND ROAST THE PORK LOIN: PREHEAT OVEN TO 450 degrees F. Lay the pork loin flat with the inside facing up. .Cut about 8 lengths of twine a couple of inches longer than the the width of the flat roast and have them ready to use.
  • BASTING THE PORK LOIN: As noted earlier, I forgot to rub the rolled and stuffed pork loin with dried sage, thyme and rosemary before wrapping it in bacon, but I forgot to do so.
  • FINALLY, TIME TO EAT . . . I worked so hard on this recipe, I ate two slices of roast stuffed pork and a half of a big sweet potato that I baked along side the roast, and washed it all down with a (much deserved) Tequila highball!
  • NUTRITION (provided You Eat Just One Slice of Roast Stuffed Pork Loin)! I have estimated the nutrition of this recipe to the best of my ability using the MyFitnessPal Recipe Analyzer.

  • Preheat the oven to 350°. Using a small knife, make 1-inch-deep slits all over the pork. Stuff each slit with a slice of garlic. Season the pork all over with salt and pepper and wrap with the bacon. Top with the herbs, tucking them under the bacon in several spots. Tie the roast at 1-inch intervals with kitchen string.
  • Transfer the pork to a roasting pan and roast for 1 hour, or until an instant-read thermometer inserted in the center of the loin registers 130°. Transfer the pork to a cutting board, cover loosely with foil and let rest for 15 minutes. Discard the string and herb sprigs. Carve the loin into thick slices and serve.
