BANANA CURRY DIP
Steps:
- In saucepan, melt butter over medium heat; cook onion for 3 minutes, or until softened but not browned. Push to side of pan. Thickly slice banana. Add to pan and cook for 1 minutes. Add curry powder and cook for 1 minute, stirring all ingredients together. Add water and bring to boil; reduce heat and simmer for 10 minutes or until thickened and liquid is reduced by half. Remove from heat; stir in jam. Transfer to food processor or blender; process until smooth. Add sour cream, mayonnaise, salt, and pepper to taste; process just until combined. (Can be covered and refrigerated for up to 1 day. Let stand at room temperature for 30 minutes before serving.) Makes 2 cups.

BEAN AND BANANA DIP
This is an Ecuadorian recipe which I got from the book, "South American Cooking". The author suggests that it is good for tailgate parties. Unusual and maybe even a little "weird", but one of those combos that surprises you with how good it is. This would halve easily if you're not feeling daring and would rather make a smaller quantity. :)

Steps:
- In a large saucepan, sauté the sausage over medium-high for 5 minutes, stirring constantly to prevent sticking and break up the meat.
- Add onion and continue to sauté until onion is soft.
- Reduce heat to medium and add garlic, chiles, tomato sauce and cook for 5 more minutes.
- Add beans and bananas and enough bean liquid to make a thick dip consistency.
- Mash beans slightly with a spoon or potato masher and mix well.
- Cover and cook over low heat for 5 minutes.
- Serve warm with tortilla chips.

CURRIED BANANAS
I don't recall where I got this recipe. It is a favorite in my home plus I make it for my consumers (at work) with very ripe bananas and no sugar so it's okay for the diabetics. All the amounts are varied depending on what you have and what you want. Use green bananas for a more savory side dish. Or use greener bananas and more brown sugar for a sweet treat. Very ripe bananas don't need much cooking nor much brown sugar. This is good as a side dish, over ice cream, on pancakes, under whipped cream, with basmati rice, let your imagination wander....enjoy! You could even vary the size of banana pieces to suit your recipe.

- In heavy skillet, such as cast iron, melt butter over medium to medium high heat.
- Add bananas cut or broken into 2" pieces.
- Cook 2 to 4 minutes.
- Carefully turn.
- Sprinkle with brown sugar and curry powder.
- Cook 2 to 4 minutes.
- The bananas should be soft and warmed through, and there should be a sauce in the bottom.
- **Don't overcrowd the pan; you need to be able to turn the banana pieces without mashing them.**.
