EASY CREAMY MASHED SWEET POTATOES



Easy Creamy Mashed Sweet Potatoes image

These easy mashed sweet potatoes are on the savory side, but you can add a few extra ingredients for a sweeter version. See our tips in the notes section below for our suggestions. You can simmer, bake, microwave, or use a pressure cooker to cook the sweet potatoes. Our preferred method is to simmer the potatoes since this takes a similar amount of time when using a pressure cooker and when microwaving them and less time than when using an oven. We have included the steps for cooking sweet potatoes in the oven, microwave, and pressure cooker in the article above.

3 pounds sweet potatoes, scrubbed clean (5 to 6 small-to-medium)
1 1/2 teaspoons fine sea salt, plus more to taste
1 bay leaf, optional or a substitute fresh thyme or rosemary sprig
3 tablespoons butter
1/8 teaspoon ground cinnamon or more to taste
3 tablespoons sour cream, heavy cream, milk or half-and-half, optional
Fine herbs and fresh ground black pepper, to taste

Steps:

  • Peel and cut sweet potatoes into 1-inch cubes. Add to a large pot and add enough water so that they are covered by about one inch of water. Add the salt and bay leaf.
  • Bring the water to a boil, reduce the heat to a simmer and cook until the potatoes are easily pierced with a fork, 10 to 12 minutes. Drain well, and then return the potatoes to the pot. Or if you plan to use a food processor, add them directly to the processor bowl. (A food processor makes extra silky mashed sweet potatoes.)
  • Add the butter, cinnamon, black pepper, and a pinch of salt. Mash the sweet potatoes with a potato masher until your desired consistency. If using a food processor, pulse until your desired consistency.
  • For extra creamy sweet potatoes, stir in sour cream or a splash of heavy cream, milk, or half-and-half. Serve with extra butter and chopped fresh herbs (optional) on top.

1 pound Yukon gold potatoes (about 3)
1 pound sweet potatoes (about 2)
Kosher salt
6 tablespoons unsalted butter, diced
1/3 cup heavy cream, warmed
1/3 cup sour cream
Freshly ground black pepper
1 tablespoon packed light brown sugar
Pinch of cayenne pepper

Steps:

  • Put the potatoes and sweet potatoes in a large saucepan and cover with cold water by 1 inch. Add a generous pinch of salt, bring to a simmer and cook until the potatoes are easily pierced with a knife, 35 to 40 minutes. Drain and let cool slightly. Peel the Yukon gold potatoes and transfer to a medium bowl. Peel the sweet potatoes and transfer to a separate bowl.
  • Divide the butter between the 2 bowls. Add the heavy cream and sour cream to the Yukon gold potatoes and mash well with a potato masher; season with salt and black pepper. Add the brown sugar and cayenne to the bowl with the sweet potatoes and mash well; season with salt and black pepper.
  • Dollop the potatoes and sweet potatoes into a warmed serving dish and swirl using a large spoon. (The potatoes can be made up to 2 hours ahead; set aside in a baking dish. Reheat, covered, at 350 degrees F, 15 to 20 minutes.)

3 pounds sweet potatoes, peeled and cut into chunks
1/2 stick butter
1 banana, sliced
1 orange, zested and juiced
1 cup chicken stock
1/2 cup brown sugar
1/2 teaspoon grated nutmeg
Salt and pepper

Steps:

  • Boil potatoes until tender, drain and reserve. Return the pot to the stove top over medium heat. Add butter and bananas to the pot. Cook bananas 5 minutes and add the juice of 1 orange to the pot, reserve the zest. Allow the juice to cook out, 1 minute. Add potatoes to the pot and the stock and sugar. Mash potatoes, banana, stock and sugar together until well combined. Season with nutmeg, salt, pepper and orange zest, to your taste. Mash to combine spices and serve.

ROASTED GARLIC MASHED POTATOES



Roasted Garlic Mashed Potatoes image

3 heads garlic, split in 1/2
3 tablespoon olive oil
2 pounds potatoes, peeled and diced
1 stick butter, cubed
1/2 to 3/4 cup heavy cream
Salt and white pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the garlic on a pie pan and drizzle with olive oil. Season with salt and pepper. Place in the oven and roast for 35 to 40 minutes, or until tender and golden brown. Remove from the oven and cool. Squeeze or remove the garlic cloves from the head and place in a small bowl. Using a fork, mash the garlic until smooth. Place the potatoes in a pot of salted water and bring to a boil. Reduce the heat to a simmer and cook the potatoes until fork tender, about 12 to 15 minutes.
  • Remove the pan from the heat and drain. Place the potatoes back in the pot and return to the heat. Stir the potatoes, constantly, for 2 to 3 minutes to dehydrate the potatoes. Remove the potatoes from the heat. Add the garlic and butter. Using a hand-held masher, mash the butter and garlic into the potatoes. Add enough cream until desired texture is achieved. The potatoes should still be sort of lumpy. Season the potatoes with salt and pepper.

Steps:

  • Place the sweet potatoes in a large pot and cover with cold water. Bring to a boil, then reduce to a simmer. Cook until the potatoes are very tender, about 45 minutes. Drain the potatoes and let them stand to release any excess water, 10 to 15 minutes.
  • Combine the sweet potatoes, cream, butter, sugar, lemon zest, nutmeg and salt in a large bowl. Mash until the mixture is light and smooth. Serve with a pat of butter.

4 large sweet potatoes
1 T vegetable oil
1/2 t salt
1/4 t white pepper
1/4 t freshly grated nutmeg
4 T sour cream

Steps:

  • Preheat oven to 350 F Rub sweet potatoes with the oil and place in an ovenproof baking dish and roast potatoes until tender, abut 1 hour, turning once after 30 minutes. When potatoes are cooked, set aside to cool for 10 minutews. Cut the potatoes in half and squeeze the potato pulp into a 3 quart saucepan. Over medium-low heat, mash gently until smooth with a potato masher. Add the salt, pepper, nutmeg, sour cream, and butter and fold together until thoroughly combined. Remove from heat and serve immediately, or keep warm, covered, until ready to serve.

2 medium sweet potatoes, peeled and cut into 2-inch chunks
1/2 cup half-and-half

  • Set a steamer basket in a large saucepan. Fill with enough water to come just below basket; bring to a boil, then reduce to a gentle simmer. Place sweet potatoes in steamer basket and cover; steam until tender, 15 to 25 minutes. Drain, and return to saucepan.

2 teaspoons coarse salt, plus more to taste
1 1/2 cups milk or cream
1/2 cup (1 stick) unsalted butter, cut into pieces
1/2 teaspoon freshly ground black pepper
1/2 teaspoon freshly grated nutmeg

Steps:

  • Peel potatoes, and cut into 1/2-inch-thick slices. Place in a medium stockpot, and cover with cold water. Add 2 tablespoons salt. Place over high heat, and bring to a boil. Reduce to a simmer, and cook until tender when pierced with the tip of a knife, about 20 minutes. Drain.
  • While potatoes are cooking, place milk in a small saucepan over medium-high heat just until it comes to a simmer. Reduce heat to low, and keep warm. Place a heatproof bowl over a pan of simmering water. Press hot, drained potatoes through a ricer into bowl. Stir potatoes with a wooden spoon until smooth, about 1 minute.
  • Stir in butter until completely melted and well incorporated. Slowly pour in hot milk, stirring continuously. Add pepper, nutmeg, and salt; stir to combine. Taste, and adjust for seasoning. Serve immediately.

  • Place the cubed sweet potatoes in a large saucepan or Dutch oven and add enough water to cover by about 1″. Add 1 teaspoon of the salt and bring the mixture to a simmer over medium-high heat. Reduce the heat and simmer, uncovered, until the potatoes are tender (in other words, it’s easy to slide a fork in and out), about 9 to 12 minutes.
  • Drain well, then return the potatoes to the pot. Mash the sweet potatoes to your desired consistency.
  • Promptly add almost all of the green onion and parsley, reserving a small amount of each for garnish. Add the garlic, and stir to combine.
