9 inches unbaked pie shells

Steps:

  • In a mixing bowl, cream butter and sugar.
  • Add eggs; mix well.
  • Add milk, sweet potatoes, vanilla, cinnamon, nutmeg, and salt; mix well.
  • Pour into pie shell.
  • Bake at 425 degrees for 15 minutes.
  • Reduce heat to 350 degrees; bake 35-40 minutes longer or until pie tests done.
  • Cool; Store in refrigerator.

2 large sweet potatoes (2 cups mashed)
1 unbaked pie crust
1/2 cup butter, room temperature
1 cup granulated sugar, divided
1/2 cup evaporated milk
2 large eggs, lightly beaten and room temperature
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 400°F.
  • Clean the sweet potatoes and bake for 45-55 minutes until very soft. Allow the potatoes to cool.
  • Reduce heat on the oven to 350°F.
  • Roll out your pie dough to 12-inches in diameter. Place the dough in a 9×2-inch (deep dish) pie plate. Set aside or into the refrigerator if not ready to bake yet.
  • Once cooled, peel the skin from the potatoes and mash until smooth. You will need 2 cups of mashed sweet potatoes. Set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment, mix the butter and 3/4 cup of granulated sugar together for 1 minute. Add in the mashed sweet potatoes, evaporated milk, eggs, vanilla, cinnamon, nutmeg and salt and mix for another minute until smooth, scraping the sides of the bowl as necessary.
  • Pour the pie filling into the unbaked pie crust. Sprinkle the top of the filling with the remaining 1/4 cup of granulated sugar. Allow the pie to sit for 10 minutes to allow the sugar time to dissolve/melt.
  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Pie will puff up and then sink back down as it cools.
  • Allow the pie to cool completely on a wire rack.

4 to 5 medium sweet potatoes, cooked
1 cup heavy cream
4 tablespoons unsalted butter, softened
1 teaspoon ground coriander
1 teaspoon ground ginger
2 large egg yolks
Kosher salt and freshly ground black pepper
1/4 cup grated Parmesan
1/4 cup grated Pecorino-Romano
1/4 cup breadcrumbs
1 teaspoon fresh thyme leaves
4 strips bacon or pancetta, diced
2 pounds ground dark meat turkey
1 Spanish onion, chopped
1 leek, washed and small diced
6 sage leaves, minced
1/4 cup pine nuts
1 1/2 tablespoons all-purpose flour
1 tablespoon tomato paste
1/2 teaspoon ground coriander
1/2 teaspoon ground ginger
2 cups chicken stock
1 cup frozen diced carrots, thawed
Kosher salt and freshly ground black pepper
1/2 cup chopped fresh parsley

Steps:

  • For the mashed sweet potatoes: Scoop sweet potato flesh into a large bowl and mash with a fork or potato masher. Mix in the cream, butter, coriander, ginger and egg yolks. Season to taste with salt and pepper. Scrape into a pastry bag and set aside.
  • For the topping: Mix the cheeses, breadcrumbs and fresh thyme together in a bowl. Set aside.
  • For the shepherd's pie: Preheat oven to 375 degrees F.
  • Render down the bacon in a large saute pan or braiser over medium heat until crispy. Remove to a paper towel-lined plate, leaving the fat in the pan. Add the ground turkey to the pan, and cook, stirring often and breaking apart with a wooden spoon, until evenly browned, 5 to 7 minutes. Remove from pan and set aside. Add the onion, leek and sage, and cook until caramelized, another 7 to 10 minutes.
  • Stir in the pine nuts, flour, tomato paste, coriander and ginger and cook for 2 more minutes. Add the chicken stock, carrots and meat, then return to a simmer and cook until reduced and nappe (when it thickly coats the back of a spoon), another 10 to 15 minutes. Taste for seasoning.
  • Top with an even layer of the sweet potato mixture. Sprinkle evenly with the breadcrumb topping. Bake until golden brown, about 1 hour. Sprinkle with chopped parsley and serve.

2 tablespoons dark amber maple syrup, grade A or B
1/2 teaspoon grated orange zest
1/2 teaspoon balsamic vinegar

Steps:

  • Preheat the oven to 400 degrees F. Pierce the sweet potatoes 2 or 3 times with a fork. Bake in a roasting pan for 45 to 60 minutes, until tender. Cut the potatoes in half, lengthwise. Hold the sweet potatoes with a potholder or towel and scoop out the potato flesh into a food mill or ricer.

I skipped the crust and poured the filling into a well-buttered pie pan and baked as usual. Not only is it easier, there are less fat and carbs too! ½ cup butter, softened
1 cup white sugar
½ cup milk
