SMOKED MACKEREL PâTé



Smoked mackerel pâté image

A jar of this fresh-tasting smoked mackerel pâté is great to serve as a starter or to pack for a picnic. This no-cook starter is unbelievably easy to whizz up and costs very little.

Number Of Ingredients 9

2 whole smoked mackerel (or 4 fillets)
1 tsp freshly grated horseradish (or 2 tsp horseradish sauce)
2 tsp Dijon mustard
freshly ground black pepper
2 tbsp crème fraîche
½ lemon, juice only
100g/2½oz unsalted butter, chopped
spring onions, chopped
sourdough bread, cut into slices

Steps:

  • Remove the skin from the fish - the odd bone is fine as the mixture will be blended. Add the fish to the blender.
  • Add the horseradish, mustard, black pepper, crème fraîche and lemon juice and blend to a paste. Add the butter and blend until smooth. Season to taste with salt.
  • Serve with spring onions or sourdough bread.

1 pound flaked smoked trout
3 ounces reduced-fat cream cheese
1/2 cup half-and-half cream
1 tablespoon horseradish sauce
1 tablespoon lemon juice
1/8 teaspoon pepper
2 teaspoons minced fresh parsley
Cucumber slices
Assorted crackers

Steps:

  • Pulse the first 7 ingredients in a food processor until blended. Refrigerate, covered, until serving. Serve with cucumber slices and assorted crackers.,

KIPPER PâTé



Kipper pâté image

Whizz up sustainable smoked fish with horseradish, lemon and cream cheese, plus a little spinach for colour, then serve with toast as a light starter

Number Of Ingredients 8

pair of kippers or 350g kipper fillets (once prepared you want to have 225g flesh)
1 spring onion , sliced
zest and juice 1 lemon
75g full-fat cream cheese
1 tsp grated horseradish
handful baby spinach leaves
small bunch parsley
sourdough toast (or gluten-free alternative) and lemon wedges, to serve

Steps:

  • Put the kippers in a bowl and pour over boiling water so that they are completely covered. Leave for 8 mins, then drain. Meanwhile, put the remaining ingredients, except the sourdough and lemon wedges, into a food processor. Add a good grind of black pepper and whizz until everything is chopped and combined.
  • Cut the heads off the kippers and remove the skin, then fillet and discard the bones. Add the kipper flesh to the processor and whizz again until you have a smooth pâté. Pack in a suitable container and chill. Serve with sourdough toast and lemon wedges.

100g gravadlax, or use 200g smoked salmon
100g smoked salmon
150g cooked prawns, shells on
crackers, sliced sourdough, sliced rye bread or shop-bought blinis, lemon wedges and caperberries, to serve
120g hot smoked trout
100g full-fat soft cheese
2 tsp capers, drained
1⁄2 tsp Dijon mustard
1 lemon, juiced
100ml soured cream
1 tbsp mayonnaise
1⁄2 small red onion, finely chopped
1 tbsp chopped dill, plus extra to serve
1⁄2 lemon, juiced
1 tsp hot sauce
250g cooked prawns, shelled

Steps:

  • For the pâté, blitz the trout, soft cheese, capers and mustard in a food processor, then season with salt, pepper and the lemon juice. Will keep covered in the fridge for up to two days. For the prawns, mix the soured cream, mayo, red onion, dill, lemon juice and hot sauce in a bowl, then toss in the prawns to coat. Will keep covered in the fridge for a day.
  • Spoon the pâté into a small bowl and the prawns into another. Place these on a large platter with the gravadlax, smoked salmon, whole prawns, crackers, bread, blinis, lemon wedges and caperberries. Sprinkle over dill fronds, then serve.

SMOKED SALMON, DILL & LEMON PATé



Smoked salmon, dill & lemon paté image

Five minutes is all you need to whip up this creamy fish dish, great served as a dip or starter

Yield Serves 4 as a starter, 8 as a dip

Number Of Ingredients 6

150g smoked salmon, trimmings are fine
200g tub soft cheese
1 tbsp crème fraîche, only if you have some
juice half a lemon
small bunch dill or chives, chopped
breadsticks or granary toast, to serve

Steps:

  • If you aren't using smoked salmon trimmings then chop the salmon into small pieces. Tip the soft cheese, crème fraîche (if using) and lemon juice into a food processor, season generously with black pepper and blitz to your liking. Add the smoked salmon and pulse a few times if you want the paté chunky or blitz some more if you want the paté smooth and pink.
  • Stir the herbs into the paté and spoon into a large or four smaller bowls and serve with warm toast as a starter or with breadsticks as a dip.
