CHEESY BACON MEATLOAF

Coat this Cheddar-and-bacon meatloaf with a sweet-and-savory glaze.

1 1/2 pounds ground meatloaf mix
1 cup dried plain breadcrumbs
1 cup shredded sharp Cheddar
3/4 cup chopped cooked bacon
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-4 loaf pan with parchment paper.
  • Combine the meatloaf mix, breadcrumbs, Cheddar, bacon, chives, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands to mix together until combined well. Transfer the mixture to prepared loaf pan. Bake the meatloaf for 30 minutes.
  • Meanwhile, stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl.
  • Remove the meatloaf from the oven and brush the top and sides all over with the ketchup glaze. Bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 45 minutes more. Let rest for 10 minutes before slicing and serving.

1 teaspoon garlic powder
1 teaspoon onion flakes

Steps:

  • Mix together all ingredients except cheese slices.
  • Bake at 375% for one hour.
  • For last 5 minutes, top with the cheese slices to melt.
  • Let stand for a couple of minutes for easy slicing.

2 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
  • Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

2 eggs
1 1/3 cups seasoned dry bread crumbs
1/2 cup chili sauce
1 (8 ounce) package shredded monterey jack cheese, divided

Steps:

  • Spray 5-quart oblong slow cooker with vegetable cooking spray.
  • Make foil handles in slow cooker.
  • Combine beef, eggs, chili sauce, and breadcrumbs and mix well.
  • With your hands, shape half of the beef mixture into flat loaf and place in bottom of slow cooker sprayed with vegetable cooking spray.
  • Sprinkle half of the shredded cheese over meat loaf and press into meat.
  • Form remaining meat mixture in the same shape as the first layer and place over cheese.
  • Cover and cook on low for 6-7 hours.
  • When ready to serve, sprinkle remaining cheese over loaf and leave in cooker until cheese melts.
  • Carefully remove loaf with foil handles and place on serving plate.

½ cup rolled oats
1 cup shredded Cheddar cheese
¾ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish with cooking spray.

1 1/2 lbs ground beef
1 (120 g) package Stove Top stuffing mix or 1 (120 g) package dry bread cubes, if you prefer
1 cup water
1 teaspoon italian seasoning
1/2 cup pasta sauce
1/2 cup mozzarella cheese, shredded
2 teaspoons chili powder
1/2 cup salsa
1/2 cup monterey jack cheese, shredded
1 teaspoon dried oregano
1/2 cup roasted red pepper
1/2 cup feta cheese, crumbled
1 teaspoon garlic powder
1/2 cup barbecue sauce
1/2 cup cheddar cheese

Steps:

  • Preheat oven to 375 degrees.
  • Mix meat, stuffing mix, or bread cubes,water, and seasoning (choose one: italian seasoning, OR chili powder, OR oregano OR garlic powder) until well blended.
  • Press evenly into 12 greased muffin tins.
  • Make a small indentation in the middle of each with the back of a spoon.
  • Fill the indentation with your choice of filling. (Choose one: pasta sauce OR salsa OR roasted red peppers OR BBQ sauce following the version of your choice.).
  • Bake for 30 minutes or until loaves are cooked through. Top with the cheese specified in the recipe of your choice and bake 5 minutes or until cheese is melted.
  • Let stand 10 minutes before removing from baking pan.
  • For OAMC: Remove from baking pan and let cool. Flash freeze on a cookie sheet until frim. Transfer to a labeled ziploc bag. To serve: Defrost overnight, then reheat in oven or microwave until heated through.

8 slices bacon, divided
1 pound ground beef
¼ cup dry bread crumbs
1 egg, beaten
1 clove garlic, minced
1 teaspoon Worcestershire sauce

⅓ cup ketchup
¼ cup brown sugar
¼ cup crushed pineapple, drained
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Chop 4 bacon strips; set remaining 4 bacon strips aside.
  • Cook chopped bacon in a large skillet over medium heat, stirring often, until bacon is browned and crisp, 8 to 10 minutes. Set chopped bacon aside.
  • Lightly mix ground beef, bread crumbs, beaten egg, garlic, 1 teaspoon Worcestershire sauce, salt, and black pepper together in a bowl until thoroughly combined. Spread meat mixture out on a piece of waxed paper, forming a rectangle about 10 inches square. Spread Cheddar cheese and cooked chopped bacon over the meat, leaving a 1/2-inch edge all around. Carefully lift an edge and roll the meat around the filling. Place into a loaf pan with the seam side down.
  • Bake meat loaf in the preheated oven until hot and beginning to brown, about 30 minutes. Mix ketchup, brown sugar, pineapple, and 1 teaspoon Worcestershire sauce together in a bowl, stirring to dissolve brown sugar. Remove meat loaf from oven and place remaining 4 bacon strips onto meat loaf, weaving them together. Spread pineapple mixture over woven bacon and top of loaf.
  • Return meat loaf to oven and bake until bacon topping is crisp and pineapple mixture has baked into a glaze, about 20 more minutes. An instant-read meat thermometer inserted into the center of the meat loaf should read 160 degrees F (70 degrees C).

My daughter and I came up with this meat loaf. It is a kind of a combo of several different recipes with our own special twists ... it calls for oats instead of saltines or bread and we used 95% lean ground beef. Next time we are going to double the sauce and serve it on the side. YUM!

2/3 cup oatmeal
3 eggs
1/3 cup onion, finely chopped
1 (10 1/2 ounce) can French onion soup

  • Make several cuts in the loaf (but do not cut all the way through.).

4 slices white bread, torn into pieces
2 1/2 lbs lean ground beef
1 medium onion, peeled and quartered
2 garlic cloves
2 celery ribs
2 carrots, peeled and cut into 2 inch chunks
1/2 cup fresh parsley leaves (fresh)
1 large egg
1/2 cup ketchup
2 teaspoons dry mustard
1 tablespoon salt
2 teaspoons fresh ground pepper
1/2 cup ketchup
4 teaspoons dry mustard
4 tablespoons brown sugar

Steps:

  • Heat oven to 400°.
  • Place bread in food processor and pulse to make fine bread crumbs, add to meat and mix.
  • Place onion, garlic, celery, carrots, and parsley into food processor and pulse till finely chopped.
  • Add to meat mixture.
  • Add ketchup, mustard, salt, and pepper.
  • Mix well w/ your hands and shape into approx 8 small loaves and place on an oven broiler pan.

1 1/2 lbs ground beef
1/2 lb ground pork
1 onion, diced
1/2 cup chili sauce
1/2 cup corn flake crumbs
2 eggs, slightly beaten
1/4 cup milk
1 tablespoon fresh minced garlic (or use 1-1/2 teaspoons garlic powder)
3 tablespoons Worcestershire sauce
1 tablespoon garlic plus seasoning
4 tablespoons apple cider vinegar
2 -4 tablespoons brown sugar, packed firm (to taste)
1/2 cup ketchup

Steps:

  • Set oven to 350°F.
  • Prepare a 9 x 5-inch baking pan and a baking sheet covered with foil to place underneath to catch any drippings.
  • In small mixing bowl add the eggs, milk, garlic, Worcestershire sauce & Garlic Plus seasoning, stirring constantly until blended well.
  • Using a large mixing bowl, dump in the mixed ingredients from the small bowl and add the diced onion, corn flake crumbs and chili sauce, mixing well.
  • The apple cider vinegar, brown sugar and ketchup are for the sauce. DON'T mix them in with meatloaf.
  • Last, using clean hands mix the beef and pork into the bowl, continuing until all ingredients are well combined.
  • Pack the mixture into prepared pan.
  • Place the pan on a foil-lined baking sheet to catch any spills.
  • Bake for 1 hour.
  • While baking, mix together the apple cider vinegar, brown sugar and ketchup for the sauce.
  • After the 1 hour of baking, remove the meat loaf (at this point you can carefully drain off some of the fat if desired) and spread the sauce over the top.
  • Place back in the oven and bake for another 20-30 minutes, or until the meat loaf is pulling away from the sides of the pan. (Meatloaf should be 140°F at centre.).
  • Enjoy!
