Steps:
- Slice the bread in half lengthwise, forming two flat halves. Spread the goat cheese on each section of bread. Layer arugula on the bottom half and then ham over the greens. Fold and crumple the ham as you layer it on the bread. Form piles of ham across the bread to create the best texture.
- Spoon the jam over the goat cheese on the top half of the bread. Close the sandwich and slice into smaller sections. Serve immediately.

- Mash the goat cheese, pepitas and 2 to 3 teaspoons hot sauce in a bowl with a fork until combined. Spread the mixture evenly on 4 slices of bread, then top with the ham and avocado.
- Toss the arugula with the olive oil, a few dashes of hot sauce, and salt and pepper to taste in a bowl. Add the arugula to the sandwiches and cover with the remaining bread. Serve with potato salad.

- Arrange 4 bread slices on work surface. Layer each with 1/4 cup mozzarella cheese, 2 tablespoons peppers, 1 teaspoon thyme, 2 tablespoons Parmesan cheese, 1 tablespoon goat cheese, and 1 ham slice. Top each with bread slice.
- Melt 1 tablespoon butter in heavy large skillet over medium-low heat. Add 2 sandwiches to skillet. Cover and cook until bottoms of bread are golden and cheeses are melted, about 2 minutes. Add 1 tablespoon butter to skillet. Turn sandwiches over; cook until bottoms are golden, about 2 minutes longer. Transfer sandwiches to plates. Repeat with remaining butter and sandwiches.
BAREFOOT CONTESSA'S ROASTED PEPPER AND GOAT CHEESE SANDWICHES
I had seen Ina Garten prepare this sandwich on one of her Barefoot Contessa episodes. It looked to die for, and when I finally had time to try it, my suspicions were confirmed. It is so flavorful and just down right yummy. She also prepared a Fresh Pea soup to pair with it, I can't wait to try that, too.

- Preheat the oven to 500 degrees F.
- Place the whole peppers on a sheet pan and place in the oven for 30 to 40 minutes, until the skins are completely wrinkled and the peppers are charred, turning them twice during roasting. Remove the pan from the oven and immediately cover it tightly with aluminum foil. Set aside for 30 minutes, or until the peppers are cool enough to handle.
- Meanwhile, combine the olive oil, balsamic vinegar, garlic, salt, and pepper in a small bowl. Set aside.
- Remove the stem from each pepper and cut them in quarters. Remove the peels and seeds and place the peppers in a bowl along with any juices that have collected. Discard the stems, peels, and seeds. Pour the oil and vinegar mixture over the peppers. Stir in the capers. Cover with plastic wrap and refrigerate for a few hours to allow the flavors to blend.
- To assemble the sandwiches, spread the bottom half of the loaf with the goat cheese. Add a layer of peppers and then a layer of basil leaves. Separate the onions into rings and spread out on top. Sprinkle with salt and pepper. Cover with the top half of the ciabatta and cut into individual servings.

- Slice loaf into 16 equal slices, cutting to but not through bottom of loaf.
- In a small bowl, combine butter, mustard and horseradish.
- Spread every other slice of the bread with this mixture, beginning with first slice, so the coated slices are facing each other. Imagine cutting the loaf to make sandwiches, and that will help you figure out which sides of the bread slices to coat.
- Fill the coated slices with one slice of ham, one slice of cheese and green pepper rings. Wrap well in plastic wrap and chill. To serve, cut between unfilled slices to form sandwiches.
