M&M cookies, but we call them the chocolate chipper champs because these beat regular chocolate chip cookies any day. You can subsitute the mini M&M candies for the larger M&M candies. You can also make this into bars or one giant cookie. Have fun.

1 1/2 cups brown sugar
3/4 cup butter, softened
2 teaspoons vanilla
2 eggs
2 1/4 cups flour
2 cups M&M's plain chocolate candy
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Heat oven to 350 degrees.
  • Mix brown sugar, butter, vanilla and eggs in large bowl until well blended.
  • Stir in remaining ingredients.
  • Drop dough by rounded tablespoonfuls, about 3" apart, onto lightly greased cookie sheet.
  • Bake for 10-12 minutes.

4 lbs potatoes, peeled and cubed
1/2 lb green onion, chopped (scallions)
1 cup milk
2 teaspoons salt
4 ounces butter

Steps:

  • Boil the potatoes until cooked, about 10 minutes.
  • Simmer the green onions in milk for about 5 minutes
  • Drain potatoes and mash.
  • Add the hot milk and scallions, salt, pepper and half the butter and mix.
  • Dot with the rest of the butter and serve immediately.
  • HINT: The secret of success to this Irish potato recipe is making sure all the ingredients are kept very hot while you're preparing it.

1 cup butter
1 1/2 cups firmly packed light brown sugar
1 egg
2 teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
1 (12 ounce) package semi-sweet chocolate chips
1 cup pecans or 1 cup walnuts

Steps:

  • With a mixer, cream the butter; add brown sugar, egg and vanilla.
  • Combine the flour, baking soda, ginger, salt and cinnamon.
  • Blend into the butter mixture.
  • Stir in the chocolate chips and nuts.
  • Cover and chill until firm (can be refrigerated over night).
  • Between palms of hands, roll small pieces of dough into 1-inch rounds and dredge in powdered sugar.
  • Place on lightly greased cookie sheets--about 2 inches apart.
  • Bake in 375 degree oven for 10 minutes.
  • Remove from oven, cool 5 minutes on cookie sheets before removing to racks.
  • Store in airtight container.

Lower fat cookie where prunes replace some of the butter. My children actually prefer these to regular chocolate chip cookies. I always have a batch of these in the freezer for a quick snack. If you want to use white flour use 2 1/4 cups. Be careful how many you eat they can be dangerous!

1/2 cup prune puree (12 prunes blitzed with 3 tbsp hot water until smooth)
3 tablespoons butter (softened)
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups whole wheat flour
1 teaspoon baking soda
1 1/2 cups chocolate chips

Steps:

  • Preheat oven to 375.
  • Line baking sheets with parchment paper.
  • In a large bowl beat puree, butter, both sugars, eggs and vanilla until smooth.
  • In a small bowl combine flour and baking soda.
  • Stir dry ingredients into wet and mix completely.
  • Stir in chocolate chips.
  • Drop tsps of dough onto baking sheets and flatten slightly with a fork and milk.
  • Bake for 10 -12 minutes until liight brown around the edges.
  • Transfer to wire rack to cook.
  • Store in air tight container or freezer.

1/2 cup semi-sweet chocolate or 1/2 cup milk chocolate chips
1/4 cup chopped nuts

Steps:

  • Heat water on High for 2 to 2 1/2 minutes in microwave oven.
  • Add baking soda.
  • Let cool 5 minutes.
  • In Mix-N-Pour bowl or large mixing bowl, blend together oil and sugar.
  • Beat in egg and vanilla.
  • Stir in warm date mixture.
  • Add flour, cocoa, salt.
  • Mix until just smooth.
  • Lightly grease a 9-inch glass cake pan.
  • Pour batter into pan and microwave at 50% (Medium) for 7 to 8 minutes.
  • Top with chocolate chips and nuts.
  • Microwave on High for 2 to 3 minutes or until center is set.
  • Serve warm or cold.
