12 egg yolks
2 cups white sugar
1 (750 milliliter) bottle white rum
1 quart half-and-half cream
1 quart heavy cream
12 egg whites
1 cup white sugar
¼ teaspoon ground nutmeg

Steps:

  • In a large bowl, combine egg yolks, 2 cups sugar and rum. Mix well, cover and refrigerate for 24 hours.
  • Stir half-and-half into cooled yolk mixture. In a large bowl, whip the heavy cream until soft peaks form; set aside.
  • In a separate clean bowl, with a clean whisk, whip egg whites until thick, then gradually add sugar and whip until peaks form. Fold the whipped cream into the egg whites, then fold into the yolks mixture. Sprinkle top with nutmeg.

4 egg yolks
1/3 cup sugar, plus 1 tablespoon
1 pint whole milk
1 cup heavy cream
3 ounces bourbon
1 teaspoon freshly grated nutmeg
4 egg whites*

Steps:

  • In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Add the milk, cream, bourbon and nutmeg and stir to combine.
  • Place the egg whites in the bowl of a stand mixer and beat to soft peaks. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form.
  • Whisk the egg whites into the mixture. Chill and serve.
  • Cook's Note: For cooked eggnog, follow procedure below.
  • In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Set aside.
  • In a medium saucepan, over high heat, combine the milk, heavy cream and nutmeg and bring just to a boil, stirring occasionally. Remove from the heat and gradually temper the hot mixture into the egg and sugar mixture. Then return everything to the pot and cook until the mixture reaches 160 degrees F. Remove from the heat, stir in the bourbon, pour into a medium mixing bowl, and set in the refrigerator to chill.
  • In a medium mixing bowl, beat the egg whites to soft peaks. With the mixer running gradually add the 1 tablespoon of sugar and beat until stiff peaks form. Whisk the egg whites into the chilled mixture.

2 eggs
1/4 to 1/2 teaspoon rum extract
2-3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons ground nutmeg

Steps:

  • In a large bowl, cream the butter, shortening and 1-1/2 cups sugar until light and fluffy. Beat in eggs and extract. Combine the flour, cream of tartar, baking soda and salt; gradually add to creamed mixture and mix well. , In a shallow bowl, combine the nutmeg and remaining sugar. Roll dough into 1-in. balls; roll in sugar mixture. Place 2 in. apart on ungreased baking sheets. , Bake at 400° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

For a nice, rich and creamy treat, try this eggnog recipe. You can serve it plain or add rum for adult holiday guests.

6 eggs
3/4 cup sugar
1/4 teaspoon salt
4 cups milk, divided
1 tablespoon vanilla extract
1 teaspoon ground nutmeg
1 cup heavy whipping cream
Additional whipped cream and ground nutmeg, optional

Steps:

  • In a large heavy saucepan, whisk together the eggs, sugar and salt. Gradually add 2 cups milk. Cook over low heat, stirring constantly, until a thermometer reads 160°, about 25 minutes., Pour into a large bowl; stir in the vanilla, nutmeg and remaining milk. Place the bowl in an ice-water bath; stir frequently until mixture is cool. If mixture separates, process in a blender until smooth. Cover and refrigerate for at least 3 hours. , When ready to serve, in a small bowl, beat cream on high speed until soft peaks form; whisk gently into cooled mixture. Pour into a chilled punch bowl. If desired, top with dollops of whipped cream and sprinkle with nutmeg.

12 eggs, separated
1 1/2 cups powdered sugar
1 quart milk
1 (26 ounce) bottle cognac, bourbon or 1 (26 ounce) bottle rye whiskey
1 cup dark Jamaican rum
1 quart heavy cream, whipped
1 orange
1 lemon
ground nutmeg

Steps:

  • Combine the egg yolks and sugar and beat to the ribbon stage, which is to say until lemon colored and quite thick.
  • Stir in the milk and spirits.
  • Beat the egg whites until stiff and fold inches.
  • Chill in the re frigerator four hours.
  • Whip the cream and fold it into the eggnog.
  • Meanwhile, carefully peel the orange, discarding the white pulp but reserving the extreme outer rind.
  • Cut this rind into tiny, needle like strips.
  • Grate the lemon rind.
  • Stir both the orange and lemon rind into the eggnog .
  • Grate fresh nutmeg on each serving! Enjoy!

8 egg yolks
2 cups heavy cream
1 cup half-and-half
3/4 cup sugar, plus
2 tablespoons sugar
1 pinch salt
1 vanilla bean, split
1/2 cup brandy
1/2 cup dark rum
1 tablespoon vanilla extract
fresh grated nutmeg

Steps:

  • Lightly beat egg yolks in a 2-quart, noncorrosive, stainless steel saucepan.
  • Add 1 cup of the heavy cream, the half-and-half, the sugar and the salt to the beaten yolks and mix well.
  • Add the vanilla bean.
  • Set the saucepan over medium heat and stir the custard frequently until it thickens enough to coat the back of a spoon (about 180 degrees).
  • Immediately remove the saucepan from the heat and strain the mixture through a fine strainer into a medium bowl and set over ice.
  • Add the vanilla extract and nutmeg.
  • Add brandy to the saucepan and heat over moderate heat until reduced by half.
  • Add the reduced brandy to the custard with the remaining heavy cream and dark rum.
  • Stir together.
  • Refrigerate for several hours or overnight.
  • Freeze in an icecream freezer according to the manufactures directions.
  • Makes 1 quart.
