CLASSIC MARTINI
Here's how to make a classic dry martini: that crystal clear cocktail that oozes sophistication! Gin and vermouth are all you need for this iconic drink. Dirty martini variation listed below.

Steps:
- Combine the gin and vermouth in a cocktail mixing glass (or any other type of glass). Fill the mixing glass with 1 handful ice and stir continuously for 30 seconds until very cold.
- Strain the drink into a cocktail or martini glass (purists chill the glass first).
- Use a knife to remove a 1″ wide strip of the lemon peel. Squeeze the lemon peel into the drink to release the oils. Gently run the peel around the edge of the glass, then place it in the glass and serve.

ORIGINAL MARTINI
Steps:
- In mixing glass or cocktail shaker filled with ice, combine gin, vermouth, bitters, and simple syrup. Stir well, about 20 seconds, then strain into cocktail coupe or martini glass. Twist lemon peel directly over drink to release essential oils, garnish with green olive, and serve.

Steps:
- Bash 6 cardamom pods in a pestle and mortar until they split.
- Melt the marmalade in a pan, then whisk in the vodka. Add the crushed pods. Don't boil the mix, simply warm it for a few mins. Leave to infuse off the heat for 20 mins, then strain.
- Add the Cointreau and lemon juice and chill (or keep in the freezer). Serve in glasses with a little more marmalade in the bottom, ice and a cardamom pod floating on top.

- Pour all the ingredients into a cocktail shaker, add cubed ice and shake for 10-15 seconds.
- Double strain by using the regular strainer in your cocktail shaker and holding a fine mesh strainer over your glass. Pour through both strainers into a martini coupe glass.
- Release the oils from the lemon by pinching the skin and spraying over the glass. Place within the glass.
