8 ounces shredded Cheddar cheese
1 cup mayonnaise
1 (2 ounce) can chopped black olives
1 (4 ounce) can diced jalapeno peppers
¼ teaspoon garlic powder
1 dash hot pepper sauce
1 tomato, chopped
½ cup chopped green onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large mixing bowl, combine Cheddar cheese, mayonnaise, half of the olives, jalapeno peppers, garlic and hot pepper sauce. Spread the mixture into a 9-inch pie pan.
  • Bake for 20 minutes, or until heated through. Sprinkle over the dish the remaining olives, chopped tomatoes and green onions.

Baked Southwestern Chile Dip is a super easy dip that can be prepped up to 4 hours in advance. Throw in the oven for only 20 minutes before topping with fresh tomatoes and green onions.

2 cups shredded sharp cheddar cheese ((prefer freshly shredded))
1 cup mayonnaise
1 (4 1/2 oz) can chopped ripe olives, drained
1 (4 1/2 oz) can chopped green chiles, drained
1/4 tsp garlic powder
dash of hot sauce
About 1 cup chopped grape tomatoes
1/4 cup sliced green onions

Steps:

  • Combine the cheese, mayonnaise, three-quarters of the olives, chiles, garlic powder and hot sauce in a large bowl. Stir until evenly blended. Spread into a lightly greased 9-inch pie plate or small baking dish. (At this point, you can cover the dish with plastic wrap and refrigerate up to 4 hours. Bake as directed, increasing baking time). Bake at 350 degrees F for 20 minutes or until heated through. Sprinkle the tomatoes, remaining olives, and green onions evenly on top. Serve warm with chips, peppers, crackers, crusty bread, etc.

I came up with this recipe the first week of October, when I was participating in a chili cook-off in Mountain Home, ID. Came out great and every judge and taster enjoyed it. It will have the authentic chili flavor with a little 'twist.' This recipe should be started the night before you wish to serve it.

3 tablespoons cooking oil
1 large green bell pepper, chopped
1 onion, chopped
2 tablespoons minced garlic
2 pounds sirloin roast, cut into 1/2-inch cubes
3 (15 ounce) cans chili beans
2 (15 ounce) cans diced tomatoes
2 (8 ounce) cans tomato sauce
3 cups water
2 tablespoons mild chili powder
3 tablespoons ground cumin
½ teaspoon ground nutmeg, or more to taste
2 tablespoons salt
1 tablespoon ground black pepper
lime, juiced
6 drops Worcestershire sauce

Steps:

  • Heat the oil in a large pot over medium heat. Cook and stir the green bell peppers, onion, and garlic in the hot oil until soft, 5 to 7 minutes. Add the sirloin roast to the pepper mixture and continue cooking until the beef is completely browned, 25 to 30 minutes.
  • Stir the chili beans, diced tomatoes, tomato sauce, water, chili powder, cumin, nutmeg, salt, black pepper, lime juice, and Worcestershire sauce into the pot; reduce heat to medium-low and cook 3 to 5 hours. Remove from heat and allow to cool slightly before chilling in refrigerator overnight.
  • Before serving, return pot to stove over medium-low heat; cook another 3 to 4 hours.

1/2 lb bacon, chopped and fried to crisp
1 lb ground beef
1 cup chopped onion
1/2 cup chopped red bell pepper
2 ears fresh corn, cut off cob
4 tablespoons chili powder
2 tablespoons Worcestershire sauce
1 teaspoon salt
2 tablespoons honey
1 (10 ounce) can tomatoes and green chilies
6 ounces tomato paste
1 1/2 cups shredded monterey jack cheese
1 (10 count) can refrigerated biscuits
melted butter
sour cream
green onion, chopped
Reynolds Wrap Foil

Steps:

  • Brown Chopped bacon till crisp, drain and set aside.
  • Use same deep skillet to brown ground beef, then drain.
  • Add onions and red peppers and brown 5 minutes.
  • Stir in Corn, Chili Powder, Worstershire, Salt, Honey and Tomatoes with green chilis, and tomato paste.
  • Transfer to Deep Dish Pie Pan or casserole and top with foil.
  • At this stage you may put in fridge 1-3 days and then finish and bake.
  • Bake covered chili in low 315 degree oven for 1 hour.
  • Remove chili from oven and turn heat up to 350.
  • Open foil and top with montery jack cheese and crumbled bacon.
  • Dip the top of refridgerator biscuits in melted butter then cornmeal and place cornmeal side up on top of chili to cover of pie pan or casserole.
  • Leave uncovered and bake an additional 20 minutes at 350.
  • Remove from oven and let rest 10 minutes.
  • Serve with sour cream and fresh green onions.

Combined a few of my favorite spices and added it to a sourcream and mayonaise base and Viola, a spicy southwestern dip was born. Served with several different kinds of chips and vegies or topping for burritos or anything you add sour cream to.... this will be a repeat!

2 (11 ounce) cans corn mixed with chopped peppers (drained)
7 ounces green chilies (diced)
6 ounces jalapenos (chopped or drained-reserve juice)
1/2 cup green onion
1/4 cup red bell pepper (chopped)
1 cup mayonnaise
1 cup sour cream
1 teaspoon fresh ground pepper
1 garlic clove (minced)
1 cup monterey jack cheese (shredded)
1 cup cheddar cheese (shredded)

Steps:

  • Combine ingredients, do a taste test, if it needs more spice, add 1 teaspoons of the jalapeno juice or if you really like it hot, add 1/4 teaspoons cayenne pepper or more jalapenos.
  • Flavor is better if allowed to set overnight or up to two days.
  • Serve with corn chips.
