TURKEY-MEATLOAF BURGERS



Turkey-Meatloaf Burgers image

Using dark meat makes these burgers extra-juicy and flavorful.

2 jars (12 ounces each) red-pepper relish, such as Fourth Creek
1 small onion, chopped
2 cloves garlic, chopped
1 tablespoon plus 1 teaspoon extra-virgin olive oil, plus more for brushing
2 tablespoons low-sodium soy sauce
2 pounds ground dark turkey
4 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1 slice soft white bread, torn into pea-size pieces (1 cup)
Coarse salt and freshly ground pepper
3 tablespoons Heinz Chili Sauce, plus more for brushing
1/2 cup mayonnaise
2 cups packed finely shredded kale
1/2 teaspoon balsamic vinegar
8 potato rolls, split
4 tablespoons unsalted butter, melted

Steps:

  • Drain 1 jar relish in a sieve; discard liquid. Pulse 2/3 cup drained relish with onion and garlic in a food processor until finely chopped.
  • Heat 1 tablespoon oil in a skillet over medium-high; add relish mixture. Cook, stirring, until a thick paste forms, about 7 minutes. Stir in soy sauce. Transfer to a bowl; let cool 5 minutes. Stir in turkey, Worcestershire, mustard, bread, 1 1/2 teaspoons salt, and pepper to taste. Form into 8 patties, each about 4 inches in diameter. Refrigerate, covered, at least 1 hour and up to 8 hours.
  • Preheat grill to medium. Brush both sides of burgers with oil, then brush grates. Grill 5 minutes. Flip; lightly brush tops with chili sauce and grill until a thermometer inserted into centers registers 165 degrees, 5 to 6 minutes more.
  • Combine chili sauce and mayonnaise. Drizzle kale with vinegar and remaining 1 teaspoon oil; season with salt and pepper. Brush split sides of rolls with butter; grill until lightly toasted. Sandwich burgers in rolls with chili-sauce mixture, remaining relish, and kale.

The creamy chipotle sauce complements the smoky flavor from the grill in these turkey burgers. White meat could be substituted for dark, but the burgers won't be as juicy. Serve these with our Wild Rice Salad as a side dish.

1 1/2 pounds ground turkey, dark meat only
1 small red onion, minced
3 tablespoons finely chopped cilantro
2 teaspoons Dijon mustard
Coarse salt and freshly ground pepper
1/2 cup mayonnaise
1/4 cup sour cream
1 canned chipotle chile en adobo plus 1 teaspoon adobo sauce
Vegetable oil, for brushing
8 thin slices Swiss cheese
4 sesame seed buns, split
4 red-leaf lettuce leaves
8 slices cooked hickory-smoked bacon
2 dill pickles, thinly sliced diagonally

Steps:

  • Place turkey, onion, cilantro, mustard, and 1 teaspoon salt in a medium bowl. Season with pepper, and mix gently. Shape into four 1/2-inch-thick patties, cover, and refrigerate until cold and firm, about 30 minutes.
  • Puree mayonnaise, sour cream, chile, and adobo sauce. Cover, and refrigerate for up to 1 day.
  • Preheat grill to medium-high. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds.) Brush grill with oil. Season both sides of patties with salt and pepper. Grill, flipping once, until cooked through, about 5 minutes per side. Top each burger with 2 cheese slices during final 30 seconds of cooking.
  • Grill buns, flat sides down, until toasted, about 30 seconds. Spread chipotle mixture on cut sides of bun halves. Divide lettuce, burgers, bacon, and pickles among bottom halves of buns. Sandwich with top halves.

1 pound ground turkey (85 percent lean)
3 tablespoons chopped parsley, plus whole leaves for serving
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
Kosher salt and freshly ground pepper
1/2 cup plain yogurt (not Greek)
2 tablespoons fresh lemon juice, plus 1/4 teaspoon grated zest
2 teaspoons extra-virgin olive oil, plus more for drizzling
4 flatbreads (each 6 inches), such as pitas
Hummus, cucumber spears, and arugula, for serving

Steps:

  • Combine turkey, parsley, Worcestershire, Dijon, 1 teaspoon salt, and 1/4 teaspoon pepper. Cover; refrigerate 20 minutes. Stir together yogurt, lemon juice, and zest; season with salt and pepper.
  • Set a steamer basket in a wide pot containing 1 inch water. Bring to a boil, then reduce heat to medium. Form turkey mixture into eight 1/2-inch-thick patties. Steam, covered, until a thermometer inserted into patties reads 165 degrees, 3 to 5 minutes. Transfer to a plate; pat dry. Heat a large skillet over high; swirl in oil. Sear burgers, flipping once, until golden, about 2 minutes total. Cook breads over an open burner or under the broiler, turning occasionally, until charred in spots, 30 seconds. Spread with hummus; top each with 2 patties, cucumber, arugula, and parsley leaves. Drizzle with sauce and oil, season with salt and pepper, and serve.

1/2 cup finely grated Gruyere cheese
4 scallions, thinly sliced
1/4 cup dried breadcrumbs
1/4 cup Dijon mustard
1 garlic clove, minced

Steps:

  • Heat grill to high. In a medium bowl, use a fork to gently combine ground turkey with Gruyere, scallions, breadcrumbs, mustard, and garlic; season generously with salt and pepper. Gently form mixture into four 1-inch-thick patties.
  • Lightly oil grill. Place patties on hottest part of grill; sear until browned, 1 to 2 minutes per side. Move patties to cooler part of grill; continue grilling until cooked through, 5 to 10 minutes per side.

2 tablespoons extra-virgin olive oil, plus more for brushing the grill grates
2 cups cremini mushrooms, finely chopped
1/4 cup finely chopped shallots
2 garlic cloves, chopped
1 1/4 pounds ground turkey (dark meat preferred)
1/2 cup Greek yogurt, plus extra for the buns
1/2 cup dry breadcrumbs
1 large egg, beaten
Kosher salt and freshly ground black pepper
4 brioche buns, split and toasted
4 slices ripe tomato
16 thin cucumber slices

Steps:

  • Add the oil to a medium skillet over medium-high heat. When the oil is hot, add the mushrooms and cook, without stirring, until the undersides are browned, 2 to 3 minutes. Stir and let brown on the other side, about 2 minutes, then reduce the heat to medium and add the shallots and garlic. Cook and stir until the shallots are softened, about 5 minutes. Remove from the heat, then cool the mixture.
  • Combine the turkey, yogurt, breadcrumbs, egg and cooled mushrooms in a large bowl. Season with salt and pepper. Mix together lightly with a wooden spoon just to combine; don't overmix. Form into four 1-inch-thick patties. Refrigerate for 2 to 3 hours and up to overnight.
  • Preheat a grill or grill pan to medium-high heat. Sprinkle the outsides of the patties with salt and pepper. Brush the grill grates with oil and grill the burgers until nicely marked, cooked through and the internal temperature reads 155 to 160 degrees F, about 6 minutes per side. Serve on the buns with additional yogurt, tomato and cucumber slices.
