Steps:

  • Preheat oven to 275 degrees.
  • Remove any visible excess fat from ham.
  • Place the ham in a large turkey roasting oven bag and place in a baking dish.
  • Pour cola over ham, remove as much air as possible and seal bag.
  • Prick a few holes in bag to let steam escape and bake for 4 to 5 hours.
  • Pour off excess juice and slice.

For naughty boys and girls! Found this in my local paper years ago. From Martha Stewart. The packaging ideas are endless! (*The only thing not mentioned in the original directions is the greasing of the foil lined pan. I always spray well with cooking spray to make removing the candy easier.)

3 1/2 cups sugar
3/4 cup light corn syrup
1 tablespoon black food coloring, gel-paste
5 teaspoons cinnamon extract or 5 teaspoons anise extract
1 teaspoon baking soda

Steps:

  • Line an 8-inch square baking pan with a piece of aluminum foil large enough to overhang the sides by about 2 inches. Set aside.
  • Bring sugar, corn syrup and 3/4 cup water to a boil in a medium saucepan over medium-high heat. Stir to dissolve sugar, and wash down sides of pan with a pastry brush dipping inwater to prevent crystals from forming.
  • Once mixture comes to a boil and all the sugar has dissolved, clip a candy thermometer to pan, and raise heat to high. Continue cooking without stirring until mixture registers 300 Fahrenheit (hard crack stage). Remove from heat.
  • Carefully add food coloring, extract and baking soda; stir slowly with a clean wooden spoon until thoroughly combined and mixture no longer bubbles, about 2 minutes.
  • Pour into prepared pan, and let cool completely.
  • Lift foil to remove candy from pan, and transfer candy to a large plastic bag. use a kitchen mallet or hammer break candy into pieces.

SLOW-COOKED BLACK TREACLE HAM



Slow-Cooked Black Treacle Ham image

Nothing will ever take the place of my Ham in Coca-Cola from Bites - in my heart or on my table - but this slow-baked ham is a revelation of a different sort. Instead of being boiled and then transferred to a hot oven to be glazed, I cook it so, so slowly, in the oven, draped with black treacle, then wrapped in foil, so that it steams sweetly in the low heat. I then remove the ham from the oven and its foil, take off the rind, stud the layer of fat on top with cloves and cover with a mustardy black treacle glaze, and put the joint briefly back in a very hot oven. Cooked like this, the meat is astonishingly tender and carves into thin slices with ease; there is also very little shrinkage, and no wrangling with large joints of meat in boiling liquid. boneless pork leg, rind on (joint boneless gammon)
150 g black treacle
1 tablespoon whole cloves
4 tablespoons black treacle
4 tablespoons demerara sugar
1 tablespoon Dijon mustard

Steps:

  • Preheat the oven to 250°C/gas mark 9/450ºF, and let your gammon come to room temperature.
  • Line a large roasting tin with a layer of foil, and then sit a wire rack on top of this foil. Tear off a large piece of foil (big enough to wrap around the ham) and place this over the rack on the roasting tin. Tear off a second, large piece of foil and place on top, but in the opposite way to the first, so you have 4 corners of foil ready to wrap your ham inches Sit the gammon on the foil and then pour the black treacle over it, straight onto the rind, letting it run down both sides. Don't worry too much about spreading it over the ham, as once it's in the heat of the oven, it will coat the ham well enough.
  • Now lift up the sides and ends of the first layer of foil and make a seal at the top, leaving some room around the gammon, then seal the ends. Then take up the other piece of foil and do the same: you are trying to create a good seal around the gammon, so pinch together any open gaps that remain. Finally, tear off another piece of foil and put over the top of the whole parcel, making sure it's well sealed.
  • Put carefully into the oven and let it cook for 30 minutes, then turn the oven down to 100°C/gas mark 1/4/200°F and leave for a further 12-24 hours.
  • The following day, take the gammon out of the oven and open up the foil seal. It will have made some liquid, which you can reserve to moisten the carved meat later. Carefully lift the gammon out onto a board, snip and remove the string, and peel off the rind to leave a good layer of fat.
  • Increase the oven temperature to 200°C/gas mark 6/400ºF. Using a sharp knife, cut a diamond pattern in the fat layer, drawing lines one way and then the opposite way, about 2cm/3/4-inch apart.
  • Stud the centre of each diamond with a clove, then mix together the black treacle, demerara sugar and Dijon mustard in a bowl and spread over the fat on the ham. It will dribble off a bit, so just spoon it back over the gammon before putting back in the oven for 20 minutes, by which time the glaze will be burnished and blistered in the heat. Remove from the oven, and transfer to a board. Let it rest for 10-20 minutes before carving into thin slices.
  • NOTE FOR THE US: Fully cooked hams are more common in the US and if you use one of these, then try to choose one with the rind still on and not spiral cut. Smear the rind of the ham with 2 tablespoons of molasses then wrap it in a baggy aluminum foil package with tightly sealed edges. Sit it in a roasting pan and reheat following the producer's instructions for oven temperature and time. When the ham has heated through uncover it and reserve juices and use sparingly to moisten ham once sliced. Carefully remove the rind, leaving a good layer of fat, then follow the instructions for glazing the ham.
  • STORE NOTE: Cool leftovers as quickly as possible, then cover (or wrap tightly in foil) and refrigerate within 2 hours of making. Will keep in fridge for up to 3 days.
  • FREEZE NOTE: Freeze in an airtight container (or wrapped in foil, and then put in a resealable bag) for up to 2 months. Defrost overnight in fridge before using.

I took a photo one day on Zaar of some chicken and included a jacket potato in my meal and was asked how I got it so crispy. Sadly my only wise answer was: Lazyness !This is an ultra simple recipe where the potatoes are baked in the oven WITHOUT any tin foil in sight. Cooking time can vary from 30 minutes to one hour depending on the type and size of potato. Voila! Add the toppings of your choice.

Steps:

  • Preheat your oven at 400 F (200 C).Scrub the potatoes well but keep them whole: don't peel or slice them. Place them onto a chopping board and stab each of them with a vegetable knife 4 or 5 times in various places.
  • Put them onto the middle rack of the oven and cook for about 40 minutes or until they are soft and cooked though when tested with a knife.
  • Place the cooked potato on the chopping board and cut an X shape in the top, but not all the way though, then using a clean towel or oven gloves (these babies are HOT) push the bits between the X to make it pop up nice and decratively and to have a place to put some butter or the topping of your choice. 1 (12 to 14 pound) uncooked smoked ham, bone-in
1 cup dark brown sugar
1/4 cup Cognac
Watercress, for garnish
Parsley, for garnish

Steps:

  • Preheat oven to 325 degrees. Wrap ham completely with parchment-lined foil and place on a rimmed baking sheet or roasting pan. Transfer ham to oven and bake 1 1/2 hours.
  • Unwrap ham; discard parchment and foil. With a large, sharp knife score fat in a diamond pattern, making the lines about 3/4 inch apart. Transfer ham to a large roasting pan.
  • Reduce oven temperature to 300 degrees. In a small bowl, mix together brown sugar and Cognac. Brush ham evenly with 3/4 of the brown sugar mixture and return to oven; cook ham 1 hour. Brush ham with remaining brown sugar mixture and continue cooking 30 minutes more. Transfer to a serving platter until ready to carve; garnish with watercress and parsley.

1 Smithfield Easy Karv Ham (7 to 9-pound), rind removed
Whole cloves
1 pound dark-brown sugar
1 twelve-ounce can Coca-Cola
1 fourteen-ounce can pineapple rings, drained and juice reserved
1 cup sweet Concord grape wine, like Manischevitz
10 to 12 maraschino cherries
Fresh bay leaves, for garnish

Steps:

  • Preheat oven to 325 degrees. Using a sharp knife, score surface of ham crosswise and lengthwise, forming a crosshatch pattern about 1/4 inch deep and 1 inch apart. Place a clove in the center of each square.
  • Place ham, fat side up, in a double-layer disposable aluminum roasting pan. Pat brown sugar onto the surface of the ham (expect some sugar to fall into the roasting pan). Transfer to oven, and bake until brown sugar just begins to melt, about 30 minutes.
  • Remove ham from oven. Pour Coca-Cola over ham, letting it mix with the melted sugar in the bottom of the pan. Baste ham with sugar mixture. Return ham to oven, and bake for 20 minutes. Meanwhile, combine 1 cup reserved pineapple juice and the wine in a small bowl. Baste ham with pineapple mixture. Bake ham for a total of 16 minutes per pound, basting every 20 minutes with the juices in the bottom of the pan. During the last 20 minutes of baking time, decorate ham with pineapple rings. Use two to three toothpicks to hold each ring in place. Center a cherry in the center of each ring, and adhere with a toothpick.
  • Transfer ham to a platter, removing all toothpicks. Garnish ham with fresh bay leaves. Serve.

3 -4 lbs fully cooked boneless ham
1/2 cup packed brown sugar
1 tablespoon mustard
2 (12 ounce) cans Coca-Cola

Steps:

  • Remove ham from packaging.
  • Lightly score ham in diagonal lines first one way, then crosswise, to form a diamond pattern, being careful not to cut any deeper than about a eighth of an inch. (You can score both sides if you like).
  • Make a paste of brown sugar and mustard (I used Boar's Head Honey Mustard).
  • Rub paste into ham on sides that have been lightly scored.
  • Transfer to crock pot.
  • Pour in two cans of coca cola into bottom of pot, not pouring directly over ham to wash away brown sugar paste.
  • Cook on low 7-8 hours.

While watching Martha and her friend Jane prepare this ham for Easter a few years ago, I adapted the recipe slightly and now just eyeball the ingredients and make it with whatever I have on hand. I made it for a potluck with Dr. Pepper, forgot to baste it, dumped cloves randomly in it, and it still turned out great. Mostly foolproof, which is good for foolish college students and klutzy cooks alike. I am posting this mostly for my own reference, so I don't have to go hunting for a handwritten note every time I make this. I'm guessing at the yield, but it was enough to serve several (5-6) at a small potluck. I serve it throughout the year for special occasions, not just Easter. Steps 1-11 are for the regular way; Steps 12-18 are for the lazy adaptation of this recipe.

1 (3 -7 lb) ham (do not use a spiral-glazed ham or it will tend to dry out faster. Rind is up to you.)
1 lb brown sugar
1 (12 ounce) can Coca-Cola
1 (14 ounce) can pineapple rings
1 cup Manishevitz wine (sweet concord grape wine)
10 -12 maraschino cherries (optional)
1/2 ounce whole cloves (1 small container)

Steps:

  • Preheat oven to 325.
  • Score the ham crosswise and lengthwise, forming a crosshatch/square-cut patter about 1/4 inches deep and 1 inch apart. Place a clove in the intersection of each square.
  • Place ham in an aluminum roasting pan that you have placed on a baking/cookie sheet (for stability).
  • Load the ham with sugar. Use the whole pack and just glom it on. Some sugar will fall off, but keep on packing.
  • Bake until sugar just begins to melt (20-30 min).
  • Remove ham, pour Coca-Cola all over the ham, and baste the ham with the sugar mixture in the bottom of the pan.
  • Bake for another 20 minutes.
  • Combine 1 cup of pineapple juice and wine, and baste the ham.
  • Bake the ham for about 15 minutes per pound, basting every 20 minutes with the juices.
  • During the last 20 minutes, decorate ham with pineapple rings. Use toothpicks to hold the rings in place, and put a cherry in the center of each ring with a toothpick.
  • Prior to serving, remove all toothpicks.
  • The extremely lazy way:.
  • Pack the brown sugar on the ham.
  • Pour the Coke and Wine mixture liberally on the ham.
  • Forget about the pineapples and cherries, unless you really want pineapple, in which case, stick them randomly on the ham.
  • Stuff it in the oven and baste every 20 minutes.
  • Cover with aluminium foil after the first basting.
  • Use a meat thermometer to tell when it's done, and serve.
