Steps:
- Preheat broiler to high.
- Season chops with salt and pepper. Broil chops for 3 1/2 minutes on each side, 7 minutes total, turning once. Transfer chops to a platter.
- Whisk together remaining ingredients and pour over cooked chops.
GREEK LAMB WITH YOGURT MINT SAUCE

- Place the garlic, rosemary, oregano, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper in the bowl of a food processor fitted with the steel blade and pulse until the herbs are finely minced. Add the lemon juice, olive oil, and red wine and combine. Place the chops in a glass or ceramic dish just large enough to hold them in a single layer. Pour the marinade over the chops, turning to coat both sides. Cover with plastic wrap and refrigerate for at least 2 hours but preferably overnight.
- When ready to cook, prepare a grill with one layer of hot coals or turn a gas grill to medium-high heat. Remove the lamb from the marinade, sprinkle generously with salt and pepper, and grill for 4 to 5 minutes on each side. Remove to a platter, cover tightly with aluminum foil, and set aside to rest for 10 minutes. Serve hot with the cold Yogurt Mint Sauce.
- Place the scallions, mint, dill, red pepper flakes, olive oil, and lemon juice in the bowl of a food processor fitted with the steel blade and puree until it's a coarse paste. Add the yogurt, salt, and pepper and pulse until combined. Transfer to a bowl, cover, and refrigerate for a few hours to allow the flavors to develop.
GREEK ROAST LAMB

- Heat oven to 240C/fan 220C/gas 9. Pound the garlic, half the oregano, lemon zest and a pinch of salt in a pestle and mortar, then add the lemon juice and a drizzle of olive oil. Stab the lamb all over with a sharp knife, then push as much of the herb paste as you can into the holes.
- Tip the potatoes into a large roasting tin, then toss in the remaining olive oil and any remaining herb paste. Nestle the lamb amongst the potatoes, roast for 20 mins, then reduce the temperature to 180C/fan 160C/gas 4. Roast for 1 hr 15 mins for medium-rare, adding another 15 mins if you prefer your lamb medium. Baste the lamb once or twice with the juices and toss the potatoes. When the lamb is done to your liking, remove from the tin and let it rest. Throw the rest of the oregano in with the potatoes, scoop from the tin and keep warm.
- Place the roasting tin over a medium flame, add the canned tomatoes and olives to the pan juices, then simmer for a few mins. Serve the lamb with the potatoes and sauce and a simple salad.

- Zest the entire peel of the lemon and extract the juice. Put in a bowl and mix with the olive oil and melted butter and whisk to mix thoroughly.

- To prepare this Greek lamb chops recipe (paidakia) start by preparing the marinade. In a shallow glass baking dish add all the marinade ingredients and blend. Add the lamb chops (paidakia) and rub the meat with the marinade. Cover with plastic wrap and place in the fridge for a least 3 hours (if you have the time leave overnight).
- Cut the potatoes into wedges and place them on a large metal roasting pan. Into a bowl add the remaining ingredients and blend. Pour the mixture over the potatoes and season well with salt and pepper. (The potatoes and the ‘paidakia’ cook at different times, so you should add the lamb chops later, about 20-30 minutes before the end of cooking time).
- Bake the potatoes in the preheated oven for 40 minutes, until a nice golden crust has formed on the potatoes. Turn them out of the oven, toss them a little bit to bring them upside down, sprinkle with a pinch of oregano and put back into the oven for another 30 minutes. If all of the liquid has been absorbed and the pan appears to be getting dry, add 1/4 of a cup hot water into the pan, before they have fully browned.

- Using a mortar and pestle, pound the bay leaves, lemon zest, garlic, oregano or savory, pepper, and 1 Tbsp. olive oil together into a paste. Rinse and pat dry the lamb. Rub the lamb chops with the mixture and wrap each chop tightly in plastic wrap. Let stand at room temperature for 1 hour. Remove the plastic wrap.
- In a medium skillet over medium heat, warm 2 tablespoons of olive oil and add the scallions and garlic. Sauté for 6-7 min., until soft. Pull away from heat and pour in the liqueur. Place back on heat. When the alcohol steams off, pour in the chicken broth. Simmer until slightly thickened, 6-7 min. Add the cayenne and stir. Pour in the heavy cream and heat it through, simmering until thick. Stir in the lemon zest and capers. Season to taste with salt and pepper. Set aside, covered.
- Set the grill to medium. Oil the grill rack. Grill the lamb chops for 3 minutes on each side for medium-rare, 5 minutes for medium, and about 7 minutes for well done. Remove and set aside, covered.
- Alternatively, you can cook the lamb chops in a grill pan: Heat 1 Tbsp. olive oil in a heavy nonstick skillet over high heat. Sear the lamb chops, in 2 batches of necessary, for 3-4 min. per side for medium-rare, 5-6 min. per side for medium, and about 8 min. per side for well-done. Remove and set aside, covered, to keep warm.
