NO-BAKE STRAWBERRY CHEESECAKE
No-Bake Strawberry Cheesecake - this fluffy mousse cake is made with fresh strawberries! A perfect cake for special occasions.

Steps:
- Line the bottom of a 9-inch springform pan with parchment paper.
- Combine graham cracker crumbs and melted butter. Press the mixture into the bottom and 1 inch up the sides of the springform pan. Chill the crust for 30 minutes.
- Blend the strawberries in a food processor or blender until smooth.
- In a small saucepan whisk together strawberry puree and sugar. Bring to a boil and cook over medium heat for about 10 minutes until the mixture is thick and reduced.
- Combine cornstarch and 2 Tbsp of water to make a slurry, take strawberry puree off the heat and whisk in the slurry. Bring mixture to a boil and let cook for 1-2 minutes until thickened. Let cool to room temperature.
- Melt the white chocolate in the microwave or use a double broiler. Set aside and let cool slightly.
- In the bowl of a stand mixer fitted with the whisk attachment, whisk together heavy cream and powdered sugar until stiff peaks form. Take out and set aside.
- In the bowl of the stand mixer fitted with the paddle attachment, whisk cream cheese until smooth then add strawberry puree and melted white chocolate. Mix at medium speed until smooth and thick. Fold in the whipped cream with a spatula.
- Spread the mixture on top of the graham cracker crust and smooth the top. Place in the fridge and chill overnight.
- Just before serving, decorate with whipped cream and strawberries.

- Combine wafer crumbs and butter; press onto bottom of 9-inch springform pan sprayed with cooking spray. Refrigerate until ready to use.
- Add boiling water to gelatine; stir until completely dissolved. Beat cream cheese, condensed milk and lemon juice in large bowl with mixer until blended. Add dissolved gelatine and chopped strawberries; mix well.
- Pour over crust.
- Refrigerate 3 hours or until firm.
- Microwave jelly and cold water in microwaveable bowl on HIGH 20 to 30 sec. or until jelly is softened; stir until blended. Cool slightly.
- Run knife around rim of pan to loosen cheesecake; remove rim. Arrange sliced strawberries over cheesecake; brush with jelly mixture.

I had fresh strawberries one day so I decided to play around and here's what I came up with! The fresh strawberry sauce that is used in the cream cheese layer and as a topping really makes this fruity and delicious.

Steps:
- Crust.
- 1. Grind graham crackers in food processor until fine.
- 2. Mix in bowl with melted butter, sugar and salt.
- 3. Press in the bottom of a spring form pan lined on the bottom with parchment paper.
- 4. Refrigerate while making strawberry sauce and cheesecake.
- Strawberry Sauce.
- 1. Add chopped berries and sugar to a saucepan and cook over medium heat until berries are soft, about 10 minutes.
- 2. Mash berries with a masher and stir in vanilla.
- 3. Mix cornstarch and water in a small bowl then stir into strawberry sauce.
- 4. Continue to cook, stirring regularly, until sauce has thickened, about 5 minutes.
- 5. Remove from heat and cool.
- Cheesecake.
- 1. Mix together cream cheese, sugar and vanilla.
- 2. Stir in ½ cup of cooled strawberry sauce.
- 3. Fold in cool whip.
- 4. Add cheesecake mixture to spring form pan and refrigerate 2-3 hours.
- 5. Remove from fridge and use knife heated with hot water to loosen up the sides. Open spring form pan.
- 6. Decorate with remaining strawberry sauce (and extra whip cream, fresh strawberries, and graham cracker crumbs, if desired) either on full cake or individual slices.

NO-BAKE STRAWBERRY CHEESECAKE BARS
Steps:
- For the cookie crust: Line an 8-inch square baking pan with parchment, leaving about a 2-inch overhang on all sides.
- Whisk together the cookie crumbs, sugar and melted butter in a medium bowl until combined. Press the cookie mixture into the bottom of the prepared pan. Refrigerate until firm, 45 to 60 minutes.
- For the cheesecake filling: While the cookie crust chills, add the cream cheese, strawberries, sugar and vanilla to a blender. Blend mixture starting at low speed and bring it up to high until smooth. (If needed, use the tamper to push all the ingredients down towards the blades. This will ensure everything is blended evenly and smoothly.) Pour the mixture into a medium bowl. Add half of the whipped cream to the cream cheese mixture and gently fold in using a rubber spatula. Repeat with remaining whipped cream.
- Pour the cheesecake filling over the chilled crust, spread and smooth with a spatula.
- Freeze the cheesecake for at least 4 hours. Use the parchment overhang to remove cheesecake from the pan and use a hot knife to cut into 9 bars. Keep frozen and put in refrigerator for about 30 minutes before serving.
- To serve the bars, place the whipped cream in a pastry bag fitted with a star tip. Pipe a rosette of whipped cream on top of each bar. Gently place the blueberries and strawberries on top of the whipped cream. Serve immediately.
GUILT-FREE NO-BAKE STRAWBERRY CHEESECAKE

- Coat an 8 X 3-in. springform pan with nonstick spray.
- Crust: Mix crumbs with butter mixture until evenly moistened. Press firmly over bottom and 3/4-in. up side of prepared pan. Place in freezer.
- Filling: Stir gelatin and the boiling water in a 1-cup measure until gelatin has completely dissolved. Puree cottage cheese in a food processor until creamy. Add gelatin, cream cheese, sugar and extract; process until blended and smooth. Pour into prepared crust; smooth top. Cover pan and refrigerate about 4 hours, or until Filling has set.
- Topping: Wash and dry strawberries; remove stems. Cut each in quarters lengthwise and place in bowl; add jelly and gently toss to coat.
- Remove sides of springform pan and transfer cheesecake to a serving platter. Spoon berry mixture on top and sprinkle with mint leaves.
