Adapted from an old Quick Cooking. A great bread to serve with a soup meal. I have also used the thin crust boboli with success. Leave off the cheddar and after baking top with fresh grated romano and you can almost image you are eating Chicago Oven Grinders Mediterranean Bread!

1 (1 lb) loaf frozen bread dough, thawed
olive oil
2 -3 teaspoons paprika
1/2 teaspoon dried basil
1/2 teaspoon garlic
1 1/2 cups shredded cheddar cheese

Steps:

  • Pat dough onto the bottom and up the sides of a greased 14-inch pizza pan or 15 x 10 x 1 inch jelly roll pan.
  • Brush olive oil over bread.
  • Sprinkle with paprika, basil and garlic.
  • Sprinkle with cheese.
  • Cover and let rise for 30 minutes.
  • Bake at 375 for 20-25 minutes or until golden.

8 ounces cream cheese, at room temperature
2 garlic cloves, minced
1 tablespoon freshly chopped basil leaves
2 tablespoons freshly chopped chives

Flour, for work surface
3/4 pounds store-bought pizza dough
1 medium red onion, sliced thin
1 zucchini, cut into thin rounds
1/4 cup olive oil
1 teaspoon red pepper flakes
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl fold together the goat cheese, cream cheese, garlic and herbs. Season with a pinch of salt and pepper.
  • Line a sheet tray with parchment paper and lightly flour a work surface. With a rolling pin, roll the dough into an oval shape that fits a half sheet tray and lay out on the parchment paper.
  • Spread dough with the goat cheese mixture, leaving a 1/2-inch edge. Arrange the red onion in a row, overlapping slightly. Repeat with the zucchini.
  • Brush the red onion, zucchini, and crust with olive oil. Sprinkle with red pepper flakes, salt and pepper, to taste, and the Parmesan. Bake in the oven for 25 minutes.
  • Remove from oven and using a pizza cutter, slice into thin strips for serving.

4 egg whites
1 teaspoon salt
1 teaspoon granulated sugar
1 teaspoon active dry yeast
2 1/2 cups all-purpose flour (approx)

1 teaspoon dried thyme
1 tablespoon poppy seed
1 tablespoon sesame seeds

Steps:

  • In bowl, combine water, egg whites, salt, sugar and yeast. Using wooden spoon, stir in 2 cups (500 mL) of the flour, cheese and thyme; beat until smooth. Add enough of the remaining flour to form soft dough. Turn out onto lightly floured surface; knead several times to form ball. Place in greased bowl, turning to grease all over. Cover with plastic wrap; let rise for 45 minutes.
  • Punch down dough and turn out onto lightly floured surface; divide into 4 portions. Roll out each portion into 1/8-inch (3 mm) thick circle or oval. Place on lightly greased baking sheets; prick all over with fork. Brush lightly with water; sprinkle with poppy and sesame seeds.
  • Bake in 400°F (200°C) oven for 10 to 15 minutes or until golden brown. Transfer to racks and let cool. Break into shards. (Flatbread can be stored at room temperature in airtight container for up to 3 days.).

1/2 teaspoon sugar
1 3/4 cup all-purpose flour
1 teaspoon coarse salt
1 tablespoon fresh thyme leaves
3/4 cup water (might need more)
1 teaspoon oil

Steps:

  • In the bowl of a food processor combine the yeast, sugar, flour, salt and thyme. Pulse to combine. Add the water in a steady stream until the dough begins to form a ball, turn it on to a board and knead with the heel of your hand until the dough is smooth and elastic.
  • Coat a bowl with oil. Place dough in bowl, and cover with a damp cloth. Put in a warm spot to rise until double in size, about 1 hour.
  • When the dough has doubled in size, punch the dough, scrape it onto the counter and knead it lightly into a smooth ball. Cut into 20 pieces and with a rolling pin roll out to form very flat 5 to 6-inch circles.
  • Preheat a stove top grill pan over medium high. Do not oil. Place bread on hot grill and cook without touching it until you see bubbles on the surface, about 1 to 2 minutes. Turn and continue to cook 1 to 2 minutes more or until bread has puffed up. Serve immediately.

1/4 cup warm water (110° to 115°)
3/4 cup warm whole milk (110° to 115°)

1-1/2 teaspoons salt
2-1/2 to 3 cups all-purpose flour
1/4 cup butter, melted
2 tablespoons dried minced onion
1/2 teaspoon dried oregano
1/2 teaspoon paprika

1 cup shredded cheddar cheese

Steps:

500g strong white bread flour
7g sachet/1.5 tsp fast-action yeast
1 tsp salt
2 tbsp olive oil
1 tbsp clear honey
2 garlic cloves , crushed
25g soft butter
100g mature cheddar , grated
handful thyme leaves

Steps:

  • Measure the flour, yeast and salt into a large bowl. Mix 300ml hand-hot water with the oil and honey in a jug, then pour into the dry mix, stirring all the time to make a soft dough.
  • Turn the dough out onto a lightly floured surface, then knead for 5 mins until the dough no longer feels sticky, sprinkling with a little more flour as you need it. Now stretch it to fit the Swiss roll tin.
  • Mix the garlic with the butter, then dot over the dough. Sprinkle over the cheese and snip over the thyme. Cover the bread with lightly oiled cling film, then leave in a warm place to rise for 40 mins.
  • Heat oven to 200C/fan 180C/gas 6. Remove the cling film, then bake the bread for 30 mins until golden and risen. Leave to cool for 10 mins, then cut into 12 pieces and serve.

1 cup lukewarm water
2 cups bread flour
1 teaspoon salt

⅓ cup butter or margarine, softened

¼ cup grated Parmesan cheese
⅓ cup shredded mozzarella cheese

Steps:

  • In a cup or small bowl, sprinkle yeast over the surface of the lukewarm water. Let stand for 5 to 10 minutes to dissolve.
  • In a large bowl, stir together the flour, salt and sugar. Pour in the yeast mixture along with the olive oil. Beat with a sturdy spoon until dough is stiff enough to pull away from the sides of the bowl. Cover, and set aside until doubled in size, about 35 minutes.
  • Remove the dough from the bowl and knead briefly on a floured surface. Roll the dough out to 1/4 to 1/2 inch thickness or to the size of your baking sheet. Let rest while you preheat the oven to 350 degrees F (175 degrees C).
