BANANA-OAT-APPLESAUCE COOKIES (OIL AND SUGAR FREE)
Steps:
- Preheat oven to 350 degrees.
- Mash bananas well in a medium size mixing bowl. I use a bean masher.
- Mix in applesauce.
- Stir in oats and cinnamon. Add more oats if it appears too wet. This photo shows the consistency I like.
- Add in your mix-ins of choice if desired, and optional sweetener.
- Use a medium sized cookie scoop to form rounds onto a baking sheet fitted with a non stick liner.
- Flatten rounds slightly with water dampened hand, to the thickness you like. (Getting your hand wet prevents the dough from sticking to your hand). These will not spread, so they will remain the same size.
- Bake in your preheated oven for about 15 minutes. They should be lightly brown. Cool on tray for a couple of minutes, then transfer to a wire rack to cool completely. They are delicious warm or cold, especially with a tall glass of ice cold Almond Milk! Enjoy! :)

Steps:
- Place the apples, banana and raisins in a 3-qt. slow cooker coated with cooking spray. In a small bowl, combine the orange juice, brown sugar, honey, butter and pie spice; pour over apple mixture. Cut ends off lemon. Cut into 6 wedges and remove seeds. Transfer to slow cooker. Cover and cook on high for 3-4 hours or until apples are soft. , Discard lemon. Mash apple mixture. In a small bowl, combine oatmeal and water. Let stand for 1 minute. Stir into applesauce. If desired, top with dried banana chips.

BANANA-APPLE CHOCOLATE CHUNK COOKIES
I have searched for gluten-free, sugar-free cookies that didn't taste like hockey pucks and couldn't find any. So I made my own. The banana and the applesauce make these cookies very moist and tasty. They are almost Palo friendly.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Mash banana, applesauce, and honey together in a bowl; add almond butter, butter, egg and stir until combined. Add coconut flour, oats, chocolate chunks, tapioca flour, baking soda, cinnamon, and salt to banana mixture, stir until dry ingredients are moist and form a dough.
- Drop rounded tablespoonfuls of dough onto the prepared baking sheet.
- Bake until lightly brown, about 15 minutes. Let cool to room temperature, about 30 minutes.

- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, cream butter and sugar together until smooth. Stir in the eggs and vanilla. Sift together the flour, baking soda, cloves and cinnamon, stir into the creamed mixture. Then add the mashed bananas, rolled oats and chocolate chips, mix until well blended.
- Drop dough by rounded spoonfuls onto unprepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven. Remove cookies from pan to cool on wire racks.

BANANA-CHOCOLATE CHIP COOKIES
Saw this recipe by Cary Neff of the Miraval Spa on the Oprah show. It is supposed to be a more healthy alternative to the 'purist' chocolate chip cookie. I made these but was skeptical that the purists around me would eat them. They did. Had to hide them to save them for a dinner gathering. These are moist and chewy and the banana taste didn't seem to be overpowering. I used all-purpose flour as I couldn't see going out to buy another type of flour (already have 3 different kinds at home) just to make these. We will have these again. I didn't get 8 dozen cookies but mine may have been larger than the recipe intends.

BANANA APPLESAUCE
I read about this side dish on another site and was intrigued. I had never heard of this combination before, you see. When I googled for the recipe, I got two versions, the one below which is from vegweb.com, and a much simpler one, which, I confess, is the one I tried. For this version you peel a banana and mash it in a bowl with a fork or potato masher. (You can soften the banana in the microwave by heating it for 20 seconds, if needed.) Add a can of applesauce to the mashed banana. You can puree the mixture or simply mash it with the potato masher which will usually get the mixture smooth.

- Peel, quarter, core and slice apples. Chop bananas. Combine both in in a large saucepan; add remaining ingredients.
- Bring to a boil; cover and simmer for 5 minutes or until apple is pulpy. Reduce heat to low or medium and whisk/stir until pretty well mashed; remove from heat and continue whisking/mashing until it is as smooth as you like it.
