8 Oreo cookies, crushed
2 tablespoons butter, melted
1/2 cup hot brewed coffee
16 marshmallows
1/2 cup heavy whipping cream
1 tablespoon confectioners' sugar
1/2 teaspoon vanilla extract

Steps:

  • Combine cookie crumbs and butter; set aside 1 tablespoon for topping. Press remaining crumb mixture onto the bottom and up the sides of two lightly greased 10-oz. custard cups; set aside. , Place coffee and eight marshmallows in a blender; cover and process until smooth. Add the remaining marshmallows; cover and refrigerate in the blender for 2 hours or until cold. Process again until smooth; transfer to a bowl. , In a small bowl, beat cream until soft peaks form. Gradually add sugar and vanilla, beating until stiff peaks form. Gently fold into coffee mixture. Spoon into prepared cups; sprinkle with reserved crumbs. Refrigerate for at least 1-2 hours before serving.

This toasty simple syrup is an instant classic, and excellent addition to any latte, milkshake or martini.

6 jumbo marshmallows
1 cup sugar
1/4 teaspoon vanilla extract
1/4 teaspoon kosher salt

Steps:

  • Thread the marshmallows onto 2 disposable chopsticks and cook over the open flame of a stove until toasted all over, about 2 minutes. (Alternatively, line the baking sheet of a toaster oven with foil coated in nonstick spray, add the marshmallows and broil, flipping once, until golden brown, about 2 minutes per side.)
  • Combine the sugar and 1 cup water in a medium saucepan. Bring to a boil and simmer over medium heat until the sugar is dissolved, about 3 minutes.
  • Reduce the heat to low and add the toasted marshmallows to the saucepan. Cook, stirring continuously and turning down the heat if the mixture starts to bubble up around the edges of the saucepan, until the marshmallows are completely dissolved into an opaque mixture, 5 to 7 minutes.
  • Strain the mixture through a fine-mesh strainer and whisk in the vanilla extract and salt. Cool completely Store in the refrigerator in an airtight container for up to 1 month.

  • To make a batch, whisk 1/2 cup each sugar and buttermilk, 1/4 cup vegetable oil, 1 egg and 1/2 teaspoon vanilla in a large bowl until smooth. Whisk in 1⁄3 cup flour, 2 tablespoons unsweetened cocoa powder, 1/8 teaspoon baking soda and a pinch of salt. Butter 4 small microwave-safe mugs and divide the batter among them. 3 tablespoons unsalted butter, plus more for greasing pan and hands
1 (10-ounce) package mini marshmallows
2 to 3 tablespoons instant coffee or espresso
6 cups rice cereal (recommended: Rice Krispies)

Steps:

  • Lightly butter an 8-inch square pan.
  • In a large pot, melt the butter over very low heat. Stir in the marshmallows, getting them all coated with the butter. Slowly melt the marshmallows, stirring frequently. When the marshmallows are melted and smooth, remove the pan from the heat. Stir in the instant coffee (2 tablespoons for a rich coffee flavor, 3 tablespoons for a real kick) and mix until it is dissolved into the melted marshmallow. Gently fold in the rice cereal. When it is completely coated, lightly press the mixture into the prepared pan with your buttered hands. When cool, cut the treats into bars and serve.

Not very many recipes, lots of ads, especially perscription drug ads which I am on a personal crusade against! BUT, hold on to your hats! I wish you could see the picture of this! This was a $400 winner. I'm going to try to make it soon, but it will have to wait for a special occasion, since we are on a big fat diet after ZWT3! Cooking time is chilling time.

2 cups crushed chocolate wafer cookies (about 35 cookies.)
1/3 cup butter, melted
2/3 cup chocolate fudge topping
1 teaspoon instant coffee crystals
0.5 (7 ounce) jar marshmallow creme
1 (8 ounce) container frozen whipped topping, thawed
1 quart coffee ice cream
1/3 cup chopped pecans, toasted
1 ounce semisweet chocolate, grated and divided
1/3 cup caramel ice cream topping
pecan halves (for garnish) (optional)

Steps:

  • In medium bowl combine cookie crumbs and butter. Press into bottom and about 1 1/2 inches up sides of a 9-inch springform pan; set aside.
  • In small saucepan combine hot fudge topping and coffee crystals. Heat and stir over low just until smooth; cool slightly. Spread topping over crumb mixture.
  • In large bowl stir marshmallow creme into whipped dessert topping until combined; set aside.
  • In chilled large bowl stir ice cream with a wooden spoon until softened. Fold in whipped topping mixture. Spoon into crust. Sprinkle with chopped pecans and half of the grated chocolate. Cover and freeze for 6 hours or until firm.
  • Before serving, let stand at room temperature for 10 minutes before releasing the pan. Drizzle with caramel topping and remaining grated chocolate. If desired, garnish with pecan halves.

Rich, intensely-flavored dessert from Fine Cooking. I made this especially for my husband, whose #1 drink of choice is espresso. You'll definitely want to use top-quality chocolate and, of course, good, fresh coffee beans. I used 8 ounces of bittersweet chocolate, rather than the semisweet/unsweetened combination, and refrigerated overnight before serving. The original recipe listed double-strength coffee as an alternative to the brewed espresso, but I would only use this if you have no means to brew espresso, or, at least, access to purchased shots.

5 ounces semisweet chocolate, chopped
3 ounces unsweetened chocolate, chopped
1/4 lb unsalted butter (8 tablespoons, cut into pieces, plus more for the pan)
4 eggs, at room temperature
1/2 cup sugar
1/4 cup brewed espresso, cooled to room temperature
1 tablespoon sifted finely ground espresso beans
1/4 teaspoon salt
1/4 cup all-purpose flour, plus more for the pan

Steps:

  • Preheat oven to 350°F Butter an 8-inch cake pan (I used a springform pan) and line bottom with parchment paper. Butter the parchment and lightly flour (or use cocoa) the pan, shaking out excess.
  • In a small, heavy-based saucepan, melt chocolate and butter over medium heat, stirring frequently. Set aside.
  • Using the whisk attachment of a stand mixer, whip the eggs, sugar, brewed espresso, ground espresso beans, and salt on medium-high speed until thick and voluminous, at least 8 minutes (I mixed about 10 minutes). Turn the mixer to low and mix in the chocolate-butter mixture. Turn off mixer and sift the flour over the batter and fold until all the ingredients are fully incorporated.
  • Pour batter into prepared pan and bake until a skewer inserted in the center comes out clean, 25-30 minutes.
  • Cool in the pan on a rack for 10 minutes. Set a plate over the torte and carefully invert the torte onto the plate; peel off the parchment. Flip the torte back onto the rack to cool completely before slicing. (Since I used a springform pan, I let it cool completely in the pan.).

QUICK CHOCOLATE COFFEE TORTE (AKA FAKE TIRAMISU)

I wanted to try my mom's homemade kahlua in a dessert, but honestly didn't expect it to come out. Now it's a family favorite!

1 (1 lb) poundcake
1 cup coffee liqueur
1 (4 ounce) box instant pudding mix (I recommend Jello)
2 cups milk, cold
1 tablespoon Dutch-processed cocoa powder
1 tablespoon amaretto liqueur
2 cups graham crackers, crushed
2 cups ginger snaps, crushed

Steps:

  • Gather all ingredients! This recipe goes so quickly that you really need everything within arm's reach.
  • If your poundcake comes from the freezer aisle, go ahead and defrost it according to the package.
  • Cut poundcake into 1"-2" cubes.
  • Set poundcake cubes on a plate or in a bowl and drench with that coffee liqueur! (I typically use more than 1 cup, but adjust according to taste).
  • While poundcake is getting drunk, take this time to make that box of instant pudding mix. Just like the package says, stir the mix into 2 cups cold water with a wire wisk.
  • Now, as the pudding begins to set, I like to add the dutch process cocoa (any unflavored cocoa powder will work), and then the amaretto. If you add the amaretto, MAKE SURE you don't add it directly to the milk--the alcohol might curdle the milk!
  • Set your setting pudding aside to set, and mix the graham crackers and ginger snaps. I use a food processor for this, but a blender or even a meat tenderizer and a plastic bag will work. (at this point I also check the poundcake and add a little more liqueur if it looks dry).
  • Now for that last beautiful step! Line the bottom of a casserole (a large bowl also works) with half of the cookie crumbs. Pour/spoon/scoop half of your pudding in over the cookie crumbs and carefully spread to cover the crumbs. Place (or dump) your poundcake into the casserole, making sure to press it down into the pudding. Don't be afraid to leave out whatever doesn't fit, or to tear the poundcake cubes in half to fill up gaps. Cover the poundcake with the rest of your pudding, spread it nicely, and finish with the rest of the crumbs, also spread nicely. You're done!
  • Now cover and refrigerate for at least three hours before serving. This gives the alcohol time to disperse within your torte, and lets the pudding get nice and firm.
  • Enjoy with friends and family!
  • Take an aspirin with a glass of water and call me in the morning. Hey, this stuff's pretty potent! ^_^.

2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, chopped, divided
10 Tbsp. butter or margarine
2/3 cup sugar
3 eggs
1 tsp. vanilla
1/3 cup flour
1/4 tsp. salt
20 KRAFT Caramels
2 Tbsp. milk
1 cup JET-PUFFED Miniature Marshmallows

Steps:

  • Heat oven to 350°F.
  • Spray 9-inch round pan with cooking spray; cover bottom of pan with waxed paper. Microwave 1 cup chopped chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Add sugar; mix well. Blend in eggs and vanilla. Add flour and salt; mix well. Pour into prepared pan.
  • Bake 40 min. or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool in pan 5 min. Run small knife around side of pan to loosen cake. Invert cake onto platter. Remove and discard waxed paper. Cool cake slightly.
  • Microwave caramels and milk in microwaveable bowl on HIGH 2 min. or until caramels begin to melt; stir until caramels are completely melted and mixture is well blended. Sprinkle marshmallows and remaining chopped chocolate over torte; drizzle with caramel sauce.

  • Preheat oven to 350°F. For crust, in a food processor combine graham crackers, almonds, and sugar. Cover and process with on/off pulses until crackers are finely crushed. Add melted butter; cover and process with on/off pulses until crumbs are moistened. Press mixture onto the bottom of a 9-inch springform pan. Bake for 10 to 12 minutes or until edges start to brown.
