SPICY CHILI



Spicy Chili image

Bold and flavorful Spicy Chili made with ground beef, diced veggies, spices, and a definite kick of heat.

3 lbs ground beef
1 green pepper (, diced)
1 red bell pepper (, diced)
1 medium onion (, diced)
3 small jalapeno peppers (, diced (seeds and veins removed for less spice))
salt and pepper
2 teaspoons garlic powder
1/3 cup chili powder
1 1/2 Tablespoons cumin
1 1/2 cups ketchup
3 Tablespoons lime juice
2 Tablespoons brown sugar
1 Tablespoon Worcestershire sauce
2 teaspoons vinegar
1 1/2 teaspoons mustard
3 cups spicy hot V8 (, or regular)
16 oz can kidney beans
1 14.5 oz can fire roasted tomatoes
salt and pepper

Steps:

  • In a large saucepan, brown the ground beef and ground sausage, using a wooden spoon to break it into small pieces as it cooks. Drain most of the grease and remove meat to a plate.
  • Add onion, bell peppers, and jalapeño peppers to the pot and sauté on medium high heat for 2-3 minutes.
  • Add spices, ketchup, lime juice, brown sugar, Worcestershire, vinegar, mustard, and V8. Stir well. Add beans, tomatoes, and salt and pepper.
  • Return the ground meat to the pot and bring the mixture to a low boil. Turn to a low simmer, cover, and cook for 1-2 hours.

1 medium green pepper, chopped
1 medium sweet yellow pepper, chopped
1 jalapeno pepper, seeded and chopped
1 medium onion, chopped
1 tablespoon olive oil
3 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes with mild green chilies, undrained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 cup vegetable broth
1 teaspoon chili powder
3/4 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 can (16 ounces) spicy fat-free refried beans
1/3 cup shredded reduced-fat cheddar cheese
1/3 cup thinly sliced green onions

Steps:

  • In a Dutch oven coated with cooking spray, saute the peppers and onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, kidney beans, black beans, broth, chili powder, cumin and cayenne. Bring to a boil. Reduce heat; simmer, uncovered for 10 minutes. , Stir in refried beans; simmer 10 minutes longer. Garnish each serving with 2 teaspoons each of cheese and green onions.

This is a recipe that I made from several recipes put together that I have or have had. I just used up some ingredients that I had on hand. Nothing better than making something from scratch!! :)

1 lb ground beef
1 lb Italian sausage (I use Seasoning for Ground Pork (Italian-Style Sausage))
1 medium onion, diced
1/2 cup green pepper, diced
2 tablespoons minced garlic
1/4 cup Mexican chili powder
2 tablespoons self rising flour
1 tablespoon sugar
1 tablespoon dried oregano
1 teaspoon kosher salt
1 (28 ounce) can diced tomatoes (I used Hunt's)
2 cups small kidney beans, cooked
1/2 teaspoon Accent seasoning (optional)
1 teaspoon black pepper

Steps:

  • In a large saucepan, fry up Italian sausage (if you using recipe#178446 add spices now and stir well to combine) add hamburger and brown until no longer pink. Drain well.
  • Add meat back to saucepan pan and add onion and green pepper. Saute together well.
  • Add flour, chili powder,sugar, oregano, salt, accent(opt) black pepper. Blend well.
  • Add diced tomatoes and kidney beans, stir well to combine.
  • Cover pot and let simmer 1 hour, stirring every 15 minutes.
  • Longer it simmers the better it gets.
  • Serve on hot dogs or just as a bowl of chili with garlic bread and some cheese.

Spicy 3-Bean Chili Salad image

This bean salad celebrates all the bold flavors of the hot chili we enjoy during the year's colder months. Three kinds of beans are tossed with a vinaigrette made with tomato paste- and spice-infused oil (which gives the salad surprising depth of flavor). Stir a dollop of sour cream into the chilled salad to cut through some of the spiciness.

1/2 small red onion, halved and thinly sliced (about 1/2 cup)
One 15.5-ounce can black beans
One 15.5-ounce can kidney beans
One 15.5-ounce can pinto beans
1/2 cup vegetable oil
3 tablespoons tomato paste
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
2 cloves garlic, grated
2 tablespoons finely minced pickled jalapenos plus 1/3 cup pickling juice
Kosher salt
1 small red bell pepper, cut into 1/2-inch dice (about 1 cup)
1 small yellow bell pepper, cut into 1/2-inch dice (about 1 cup)
1/3 cup sour cream
1 scallion, thinly sliced

Steps:

  • Soak the onions in a bowl of ice water to mellow their sharpness and set aside. Strain and rinse the black, kidney and pinto beans.
  • Add 3 tablespoons of the oil, the tomato paste, chili powder, cumin and oregano to a medium skillet. Turn the heat to medium-low and cook, stirring frequently with a wooden spoon or heatproof spatula, until the tomato paste and oil have come together as a dark brown paste, 6 to 8 minutes. Stir in the garlic and cook for 1 minute more. Turn off the heat, and stir in the remaining 5 tablespoons oil. Let cool for 25 minutes so the oil can absorb the flavors of the tomato-paste mixture.
  • Pour the oil mixture into a fine-mesh strainer set over a liquid measuring cup with a spout. Do not press down on the tomato-paste mixture, just let the oil drain until there is at least 1/4 cup of it in the measuring cup, 5 to 7 minutes. Discard the tomato-paste mixture. Put the pickled jalapeno juice and 1 teaspoon salt into a large mixing bowl, and slowly whisk in the flavored oil.
  • Strain the onions, and add them to the bowl with the dressing. Add the jalapenos, all the beans and the red and yellow bell peppers. Stir to combine, and add salt to taste. Cover with plastic wrap, and refrigerate for at least 30 minutes or up to overnight. Serve with a dollop of sour cream, and garnish with the sliced scallions.

I found this in a crock pot cookbook. The original recipe doesn't call for corn, but I added it anyway. If you don't like it so spicy, don't add so much chili powder and/or pepper. We never use the salt; I used it the first time and we couldn't taste it anyway.

2 (10 1/4 ounce) cans corn, drained
2 tablespoons chili powder
2 teaspoons pepper
1 teaspoon salt (optional)
2 (10 1/4 ounce) cans Rotel Tomatoes
1/4-1/2 cup minced onion
2 teaspoons minced garlic
1 (10 1/4 ounce) can tomato soup

Steps:

  • Cook hamburger.
  • Add the rest of the ingredients.
  • If you like it more saucy, add a can-or-two-full of water.
  • Simmer on stove until hot/boiling.
  • Serve.
  • You can also cook this in a crock pot on low for up to 10 hours.
