LA ISLA'S STUFFED FRENCH TOAST

Steps:
- In a medium bowl, using a hand beater, beat the 2 tablespoons of butter, and the cream cheese until combined. Add the marmalade and mix until incorporated, then fold in the strawberries and guava shells, using a rubber scraper. Transfer the mixture to a pastry bag fitted with a large tip.
- Make an incision (pocket) on the crust side of the 4 pieces of bread about 3/4 of the way through. The incision will allow you to stuff the pocket. Leave the slices with the incision, covered, at room temperature before stuffing. Gently stuff the room temperature slices with the filling. Refrigerate the stuffed slices with the pocket opening facing up for 20 to 30 minutes.
- Preheat oven to 375 degrees F.
- Egg batter:
- Add all the ingredients to a medium shallow bowl and mix well.
- French Toast:
- Add the corn cereal and almonds to a sheet pan and crush together. Dip the bread slices in the egg batter and then into the cereal mixture.
- Put a large skillet on medium-high heat and add 3 to 4 tablespoons butter. When the butter has melted add the stuffed bread slices and brown on 1 side, then flip and put the skillet in oven for 8 minutes. Remove the skillet from the oven and transfer the toast to a serving platter. Drizzle with guava marmalade and a dusting of powdered sugar before serving.
STUFFED FRENCH TOAST I
Serve warm with a dollop of orange marmalade on the top and a good cup of coffee. Even though orange marmalade isn't a particularly popular preserve in my area of the country, it really makes this special. You can replace the liqueur with any flavored liquid non-dairy coffee creamer.

- Slice the French bread on a slant, giving each side of the slice a nice surface area. Slice the brick of cream cheese into 1/2 inch thick slices. Make a slit in each slice of French bread through the crust to form a pocket. Place a slice of cream cheese in each pocket; set aside.
- In a small bowl, beat together eggs, Irish cream liqueur, cinnamon and nutmeg.
- Melt butter in a griddle or frying pan over medium-low heat. Briefly dip the bread slices in the egg mixture and place on the griddle. Brown on both sides and serve warm with a dollop of orange marmalade on top.

BAKED STUFFED ORANGE FRENCH TOAST
This is one of our favorites... it's great for Christmas morning! It's got all the Christmasy flavors, and it's assembled the night before. You can use any kind of marmalade/jam for the filling. I have used regular and sugar free jams. You can also use light cream cheese, 2% milk in place of the cream, egg beaters in place of the eggs... to lighten it up a bit. Hope it becomes one of your family traditions!

Steps:
- Butter a 9x13 baking dish.
- Whisk together eggs, half and half, maple syrup, cinnamon, nutmeg, and vanilla in a medium bowl. Set aside.
- Beat the cream cheese and marmalade until smooth.
- Spread the cream cheese mixture on one slice of bread, and cover with another slice, making sandwiches. Place in baking dish, and continue to assemble sandwiches until the dish is full. (I usually do 1/2 sandwiches as well as whole to fill up the dish).
- Pour egg mixture over the bread slowly, making sure each piece gets some mixture.
- Refrigerate overnight.
- Bake covered @ 350 for 40 minutes. Uncover and bake another 15 minutes, or until browned.
- Enjoy!

- Peel and finely chop 7 of the oranges, discarding the pips. Reserve the skin of 3, discarding the rest, and finely chop into fine strips. Halve the remaining orange, skin-on, and finely slice. Add this to the pan with the cardamom seeds and 400ml water. Add the vanilla seeds and throw in the pod.
- Boil for 10 mins until the skins are softening, then add the lemon juice and sugar, stirring constantly. Once the sugar has dissolved, simmer for 30-35 mins. Turn up the heat and boil to set (about 10-15 mins) - the boiling point of jam is 105C. If you don't have a cooking thermometer, try the 'wrinkle test' - spoon some marmalade onto a cold saucer and leave for a minute. If it wrinkles when you poke it and has a fine skin on top, it's ready to set. Pour the marmalade into sterilized jars, top with wax discs and lids, and store for up to a year.

- For the syrup:
- Combine the sugar and orange juice in a medium high-sided saute pan over high heat and cook until caramelized, about 2 minutes; do not stir. Whisk in the butter and vanilla extract until melted.
- Stir in the oranges and zest.
- For the French toast:.
- In a baking dish, whisk together the eggs, cream, milk, orange juice, vanilla extract, orange zest and salt until combined.
- Soak the bread slices in the egg mixture until completely soaked through, at least 15 seconds per side.
- Heat 2 tablespoons butter and 1 tablespoon oil in in a large saute pan over medium-high heat until it begins to sizzle.
- Add 3 slices bread at a time and cook, turning once, until golden and crisp on both sides, about 2 minutes per side.
- Repeat with the remaining bread.
- Serve the orange marmalade syrup over the French toast.

- Preheat oven to 300°F. Place baking sheet in oven. Cutting through top crust of each bread slice, make 4-inch-long by 2-inch-deep pocket. Stir cream cheese and marmalade in small bowl. Spoon 1 generous tablespoonful cream cheese mixture into each bread pocket.
- Whisk eggs, milk, vanilla extract, cinnamon and nutmeg in pie plate.

CARDAMOM FRENCH TOAST CASSEROLE
I love cardamom, and I thought I'd play with recipes featuring it. I came up with this one after having made cardamom braids, a Norwegian sweet bread. Cardamom braids are the best for this, but French bread or Italian bread will work, too.

- Preheat an oven to 350 degrees F (175 degrees C). Prepare a 9x12-inch baking dish with cooking spray.
- Place the bread cubes in the prepared dish. Sprinkle the pecans over the bread.
- Beat the eggs, 1 1/2 cup milk, almond extract, 1 tablespoon cardamom, cinnamon, and brown sugar together in a bowl until thoroughly combined; pour the mixture evenly over the bread cubes and pecans. - 1. Prepare Apricot and Orange Marmalade sauce. Preheat oven to 475 degrees F.
- 2. Beat cream cheese in medium bowl with electric mixer at medium speed until smooth. Beat in ricotta, marmalade and sugar.
- 3. Trim ends from bread; discard. Slice into 8 (1 1/2 inch thick) slices. Cut pocket in each slice by cutting through top crust and almost to bottom. Carefully fill each pocket with 3 tablespoons cream cheese mixture.
- 4. Beat eggs in large shallow dish. Add milk and vanilla, whisk until blended. Dip 1 piece of bread at a time into egg mixture; turn over and allow to soak up egg mixture.
- 5. Place filled slices onto lightly greased baking sheet. Sprinkle with nutmeg. Bake 5 minutes or until golden on bottom. Turn slices over sprinkle with nutmeg. Bake 3-5 minutes or until golden on bottom . Baked toast should feel just slightly crisp on surface. Serve with Apricot and Orange Marmalade Sauce. Makes 6-8 servings

- To prepare the filling, core and slice the nectarines to appropriate wedges. Heat a tbsp of butter in a large pan and add the nectarines to briefly cook. Scatter a tbsp of sugar over them and remove from the heat. Set aside to cool. Chop the remaining butter into small cubes and mix it with flour and 2tbsp sugar with your hands or a fork until resembling breadcrumbs. Add a tbsp of water at a time, until the dough comes together and could be gathered into a ball.
- Heat the oven to 180 C. Divide the dough in half. Flour a rolling pin and work surface, then roll out half of the dough pieces onto a circle larger than size of your pie dish. Transfer onto your dish and scatter the prepared nectarine along with sliced almonds and pinch of salt over the pie base, then evenly pour over 3 tbsp of marmalade. Carefully roll out the second part of the work surface onto 2 mm thickness. Cut the long ribbons out of the dough and arrange them in a lattice poi crust.
- Mix the remaining marmalade with milk and brush over the pie with the mixture. Scatter the remaining sugar over and bake for 30-40 min, until the top is golden and the filling is bubbling. Cool briefly and enjoy as a light dessert or fancy breakfast. If desired, dust with confectioners sugar before serving.
