1/2 cup Italian salad dressing
2 tablespoons minced fresh basil
2 tablespoons minced fresh chives
1/2 teaspoon coarsely ground pepper
2 cartons (8 ounces each) miniature fresh mozzarella cheese balls, drained
2 cups cherry tomatoes
12 slices French bread baguette (1/2 inch thick), cut into quarters
2 teaspoons olive oil
1/8 teaspoon salt

Steps:

  • Preheat oven to 450°. Combine salad dressing, basil, chives and pepper. Add cheese and tomatoes; toss to coat. Refrigerate, covered, at least 3 hours to let flavors blend., Meanwhile, toss baguette pieces with oil and salt; arrange on a baking sheet. Bake until toasted, 4-5 minutes. Cool completely. Just before serving, add toasted bread to cheese mixture; toss to combine. If desired, thread tomatoes, cheese and bread on skewers for serving.

The most delicious summer salad! This marinated mozzarella tomato salad is quite possibly the best summer salad I've ever eaten! Loaded with garlic and herb marinated mozzarella, ripe summer tomatoes, fresh basil, and a healthy drizzle of balsamic glaze!

⅓ cup basil, chopped or torn
½ cup extra virgin olive oil
2 teaspoons lemon juice
2 small cloves garlic (or 1 large), grated
¾ teaspoon Maldon salt
¼ - ½ teaspoon red pepper flakes
2 (8-ounce) pearl mozzarella (small ball sized)
1 ½ pounds cherry tomatoes (or quartered plum tomatoes)
Prepared balsamic glaze (store-bought or homemade, see notes)

Steps:

  • MARINATE: Combine the olive oil, lemon juice, grated garlic, salt, red pepper flakes in a bowl and stir until mixed. Add 1 -2 torn basil leaves to the mix along with the mozzarella. Cover and allow to sit at room temperature for at least 1 hour and if possible, cover and refrigerate for 24-36 hours.
  • TOMATOES: An hour before serving, add the tomatoes to a medium bowl. Remove the mozzarella from the marinade and add to the tomatoes (don't toss out the oil!) Add the torn basil leaves, along with another big pinch of Malden salt and drizzle roughly 2 tablespoons of the oil on top and toss to combine. Allow the salad to marinate for 1 hour before serving. Taste and adjust with additional marinade oil or salt if the salad needs it before serving. Drizzle with homemade balsamic glaze and serve!

6 cups diced tomatoes (such as roma or cherry tomatoes)
4 Tbsp. olive oil
2 Tbsp. red wine vinegar
2 tsp. Dijon mustard
2 cloves garlic
1/2 tsp. Italian seasoning
1/4 tsp. kosher salt (plus more for garnish)
1/4 tsp. pepper (plus more for garnish)
1 8 oz. package marinated mozzarella balls (or fresh mozzarella)
1/3 cup fresh basil

Steps:

  • Dice tomatoes until you have enough for 6 cups (the amount of tomatoes used will vary depending on the variety of tomato used). You can dice the tomatoes as large or small as you like.
  • Place the diced tomatoes in a large serving bowl.

2 tablespoons apricot nectar
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon each dried basil, oregano and thyme

4 ounces part-skim mozzarella cheese, cut into 1/2-inch cubes
6 cups torn romaine
1 cup grape tomatoes, halved

Steps:

  • In a small bowl, whisk the vinegar, apricot nectar, garlic, salt, basil, oregano, thyme and pepper. Slowly whisk in the oil. Add cheese cubes and toss to coat. Cover and refrigerate for 1 hour., Just before serving, toss the romaine, tomatoes and cheese mixture in a large salad bowl.

1 teaspoon fennel seed
1 lemon, zest of, grated
15 basil leaves, shredded
2 teaspoons chopped fresh oregano
2 teaspoons best-quality extra virgin olive oil, plus extra to finish
2 teaspoons grapeseed oil or 2 teaspoons olive oil
1 garlic clove, crushed
1/2 teaspoon maldon sea salt
1/2 teaspoon fresh ground black pepper
8 -9 ounces buffalo mozzarella
2 medium ripe tomatoes (red, yellow or mixed)
crusty French bread, sliced and toasted

Steps:

  • To make the marinade. Scatter the fennel seeds in a small frying pan over medium heat and dry-roast until they begin to pop. Transfer to a mortar and pestle and crush roughly. Place the crushed seeds in a small bowl and add the remaining marinade ingredients.
  • Break the mozzarella roughly with your hands. Smear it with the marinade and set aside for 15-30 minutes to absorb the flavors.
  • To serve, cut the tomatoes into wedges and plate along with the marinated mozzarella. Drizzle with extra olive oil. Serve along with crusty French bread slices.
