Number Of Ingredients 9

2/3 cup sugar
1/3 cup water
1/2 cup light rum
2 tablespoons lime juice
1 teaspoon grated lime zest
2 cups each cantaloupe, honeydew and seedless watermelon balls or chunks
2 cups cubed fresh pineapple
3 mint sprigs
Fresh mint leaves, optional

Steps:

  • In a small saucepan, combine sugar and water; cook and stir over medium heat until sugar is dissolved. Remove from heat. Stir in rum, lime juice and zest. Cool completely., In a large bowl, combine melons, pineapple and mint sprigs. Add rum mixture; toss to coat. Refrigerate, covered, overnight., Discard mint sprigs. Spoon fruit with syrup into serving dishes. If desired, top with mint.

2 Cups strawberries (hulled, halved, and quartered)
2 Cups seedless green grapes
2 Cups seedless red grapes
2 Cups blueberries
2 11- ounce cans mandarin oranges (drained)
20 ounce can pineapple chunks (drained and 1/4 Cup juice reserved.)
1/4 Cup reserved pineapple juice
1/4 Cup lemon juice
1/4 Cup honey

Steps:

  • Combine all fruit in a large serving bowl. Drizzle marinade over fruit; toss gently to combine.
  • Cover and refrigerate for several hours to overnight. Toss again before serving.

  • In a bowl, combine the cantaloupe, honeydew and kiwi. Add juice concentrate; toss to coat. Refrigerate for at least 2 hours, stirring occasionally. Serve with a slotted spoon.

4 fresh peaches (peeled, pitted & quartered)
1 fresh pineapple (peeled & cut in lrg chunks)
4 bananas (peeled & cut in quartered chunks)
2 grapefruits (peeled & sectioned)
4 apples (peeled, cored & quartered)
1 cup grapefruit juice
2 tablespoons Cointreau liqueur or 2 tablespoons Grand Marnier
1/2 cup honey
1 teaspoon of fresh mint, chopped or 1/2 teaspoon dried mint

Steps:

  • Combine fruits & marinade in lrg bowl, mix gently to coat well & refrigerate for 30 minutes to 1 hour. Drain & reserve marinade.
  • Alternate fruit on 8 skewers, place in a shallow roasting pan & broil 6-8 minutes. Turn skewers & baste w/reserved marinade at mid-point of cooking time.
  • Serving Suggestion: Serve w/vanilla yoghurt or vanilla ice cream -- or -- atop shortcake w/whipped cream.

1 cup fresh orange juice
1/3 cup Splenda sugar substitute

Steps:

  • Cut fresh fruit into bite sized pieces (I use melon, peaches, apples, plums, grapes, etc).
  • Mix the orange juice and Splenda together until the Splenda is well dissolved.
  • Pour the orange juice mixture over the fruit, cover and chill for several hours.
  • This is great for fruit that isn't quite as sweet as you like it, and is very refreshing for an addition to any meal.

I wish I could think of a catchier name, because I think if you try this recipe you will love it! Compared to other recipes I looked at this one is low in fat and sugar! You can use any combination of fresh summer vegetables (equal to about 7 cups). I listed my favorites. I made this in a 7 cup Rubbermaid container.

2 small zucchini
2 small yellow squash
1 small vidalia onion
1/2 small green pepper
1/2 small red pepper
1 tomatoes
1/2 cucumber
1/2 cup broccoli floret
1/2 cup canola oil
2 tablespoons white vinegar
1/2 teaspoon dried basil
1/2 teaspoon dried Italian seasoning
1 tablespoon sugar
1/2 teaspoon celery salt
1 dash pepper

Steps:

  • Mix together marinade ingredients.
  • Chop vegetables in a small dice. I like little squares.
  • Pour over vegetables.
  • Stir until vegetables are well covered.
  • Marinate overnight. Stir or shake a couple of times.
