SPINACH AND BACON QUICHE



Spinach and Bacon Quiche image

This Spinach and Bacon Quiche is baked in a tender and flakey pie crust and is one of my favorites brunch on the weekends.

5 large eggs (, beaten)
1 1/4 cups half and half
salt and pepper
1/2 cup chopped onion
1 1/2 cups baby spinach leaves (, loosely measured, then chopped)
6 slices bacon ((or turkey bacon), cooked and crumbled)
1 1/4 cups shredded cheese (Swiss, mozzarella cheese, cheddar or Monterrey jack)
1 9 inch homemade pie crust (, fitted in a 9'' glass pie plate)

Steps:

  • Preheat the oven to 375 degrees F. Roll out one disc of pie dough into a circle, 12 inches in diameter. Place in 9 inch pie dish and crimp edges.
  • Blind bake crust: Place a piece of parchment paper inside the pie pan and add 2 cups of pie weights, dry beans or rice. Bake at 375 degrees F for 15 minutes. Remove parchment paper and pie weights. Prick pie crust all over with a fork, then return to the oven for 8 more minutes.
  • Meanwhile, cook bacon, in a skillet. Once cooked, remove to a plate and chop. Remove most of the grease from the pan and add onion and spinach. Saute for 2 minutes. Add cheese, onion, spinach, and bacon to the bottom of the partially baked pie crust.
  • Combine the eggs, half and half, salt, and pepper in a blender, then pour the egg mixture into the pie.
  • Reduce oven temperature to 350 degrees. Bake quiche for 40- 45 minutes until the egg mixture is set. Allow to cool for 10 minutes, or even to room temperature, before slicing. Store leftovers, covered, in the fridge.

A lovely mid week dinner, simple but very delicious!

250g plain flour
150g butter- cubed
1 egg yolk
a drop of water
450g spinach
6 rashers bacon
1 onion, chopped
a knob of Butter

Steps:

  • Process the flour and butter together until you have a crumb consistency (a few seconds should do it).
  • Add the water and egg yolk and process again until it combines. Use your hands to work it into a ball, wrap in clingfilm and let it rest in the fridge for 30mins.
  • Preheat the oven to 180C/fan 160/ gas 4.
  • Wilt the spinach in a frying pan with a couple of tablespoons of water, this should only take a minute or so. Drain and squeeze all the green juices from the spinach- you want this to be as dry as you can make it.
  • Cook the bacon and onion together until they are both golden. Combine this lovely mixture with the spinach in a large bowl. Add in your eggs and swirl the mixture together adding a generous pinch of salt and pepper
  • Get the pastry from the fridge. Roll 2/3 of the pastry out on to a floured surface, line a 23cm fluted pie dish with the pastry and cut of any excess. Brush a little of the egg wash around the side of the pastry.
  • Roll out the remaining pastry out and cover your pie. Pinch the sides together to form a seal. Brush the top of the pastry with a liberal helping of egg wash.
  • Pop this beauty into the oven and bake for 50 minutes to 1 hour or until golden brown.

SPINACH, BACON, AND MUSHROOM SAVORY PIE



Spinach, Bacon, and Mushroom Savory Pie image

Of course, you can make many a variation on this savory pie (aka quiche), but this is my family's favorite. And a great dish to make ahead for guests (served at breakfast or brunch) or frozen and brought out on a night when cooking is the last thing on your mind. It is delicious! Tossed spinach salad is a wonderful accompaniment.

1 (9 inch) pie crusts (I use frozen)
6 -8 slices bacon, crumbled
6 ounces mushrooms
Baby Spinach, washed
3 large eggs
3/4 cup milk
1/2 cup monterey jack pepper cheese, shredded
sea salt
ground black pepper

Steps:

  • Preheat oven to 400 degrees. Bake frozen pie crust according to directions (10-12 minutes or until just starting to color). Remove from oven and lower temperature to 375 degrees.
  • Fry bacon until crisp, drain on papertowels, and use tablespoon of bacon drippings to cook mushrooms (8-10 minutes). Add spinach for last couple of minutes, just until tender. Turn off heat and add back crumbled bacon.
  • Whisk eggs and milk together. Stir in spinach-bacon-mushroom mixture plus 1/4 cup cheese. Sprinkle other 1/4 cup cheese on bottom of pie crust. Pour mixture into pre-baked pie-crust and set on cookie sheet to bake for about 35 minutes.
  • Let pie rest for 10 minutes before cutting it into wedges.

12 slices bacon
1 cup shredded Swiss cheese
⅓ cup chopped onion
2 cups milk
4 eggs
1 cup baking mix
⅛ teaspoon ground black pepper

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease a 10-inch glass pie plate.
  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Pat dry on paper towels and crumble the bacon. Sprinkle bacon, cheese, and onion in the pie plate.
  • In a medium bowl, stir the milk, eggs, baking mix, and pepper with fork until blended. Pour into pie plate.
  • Bake 35 to 40 minutes or until knife inserted in center comes out clean.

Individual shortcrust pastries that fall somewhere between a Scotch egg and a Gala pie - super for a summer spread

little oil , for the tin
500g pack all-butter shortcrust pastry
little flour , for dusting
good knob of butter
1 small onion , finely chopped
8 rashers back bacon , trimmed of any fat and diced
½ tsp ground mace
2 large eggs
2 tbsp crème fraîche
12 quail eggs
few pinches poppy seeds

Steps:

  • Heat oven to 200C/180C fan/gas 6. Grease each hole of a 12-hole muffin tin, then line each with a long strip of baking parchment. Roll out two-thirds of the pastry on a lightly floured surface and stamp out 12 x 10-11cm circles (you may need to re-roll trimmings). Press a circle into each hole to line. Wrap the remaining pastry in cling film.
  • Melt the butter in a frying pan and fry the onion and bacon until the onion is softened and the bacon crisping and browning. Stir in the mace for 1 min, then transfer to a bowl to cool for 5 mins. Stir in 1 egg and the crème fraîche with plenty of seasoning. Divide mixture between the holes and press down firmly with the back of a spoon to make a dip in the middle. Crack 1 quail's egg into each hole, then season lightly. Beat the remaining egg, then brush over the edges of the pastry.
  • Roll out the remaining pastry and stamp out 12 x 6-7cm circles. Add a top to each pie, carefully pressing pastry edges together to seal - don't let the egg escape. Brush with remaining egg and sprinkle with poppy seeds. Bake for 25-30 mins until golden. Cool in the tin, then carefully lift out using the parchment strips to help.

Spicy Bacon-and-Egg Pie image

Bacon-and-egg pie is a rustic specialty from New Zealand, here zipped up with a mixture of sriracha and cream. Made from whole eggs that hard-cook under a pastry crust lid, with fat chunks of bacon, it is closer in feeling to steak-and-kidney pie, that sturdy pub staple, than to quiche. It is terrific picnic fare.

2 1/2 cups all-purpose flour
3/4 teaspoon coarse kosher salt
2 sticks (8 ounces) unsalted butter, chilled and cubed
6 ounces Canadian bacon, diced
2 scallions, white and greens parts, thinly sliced
9 large eggs
Kosher salt, as needed
Cracked black pepper, as needed
6 tablespoons heavy cream
1 1/2 tablespoons Sriracha or other hot sauce
1 1/2 tablespoons ketchup

Steps:

  • In the bowl of a food processor fitted with the blade attachment, pulse together flour and salt until combined. Add butter and pulse until pieces are the size of lima beans. Add ice water, 1 tablespoon at a time, just until dough comes together (anywhere from 4 to 8 tablespoons). There should still be flecks of butter left in the dough. Shape dough into two evenly sized discs and wrap with plastic wrap. Refrigerate at least one hour before baking. (Dough can be made up to 1 week ahead.)
  • On a lightly floured surface, roll out one disc to a 12-inch circle. (Leave the other disc in the fridge.) Transfer rolled dough to a 9-inch pie plate; trim and crimp edges. Chill for 30 minutes.
  • Heat oven to 375 degrees. Prick bottom of pie with a fork. Line with foil or parchment paper and fill with pie weights or dried beans. Bake for 20 minutes. Remove foil or paper and pie weights or beans. Bake until pale golden and dry to the touch, about 5 to 7 minutes more.
  • Increase oven temperature to 400 degrees. Evenly scatter half of the bacon and half of the scallions on bottom of pie. Carefully crack 8 eggs over mixture, distributing them evenly around pie with their yolks intact. Season eggs generously with salt and pepper. Whisk together 5 tablespoons heavy cream with Sriracha and ketchup. Use a teaspoon to dollop it on top of the eggs and then sprinkle with remaining bacon and scallion.
  • Lightly flour the counter. Roll out remaining disc of pie dough until 1/8-inch thick (it should be thinner than the previous dough round). Trim into 10-inch circle. Carefully place on top of the pie, pressing the edges into the side of the pie, if possible. There should be no overhang and the dough should fit almost perfectly. Use a fork to whisk together yolk from remaining egg and 1 tablespoon heavy cream. Brush top of pie with egg wash and cut 4 shallow slits in the middle of the top crust (don't go deep, you don't want to puncture the eggs). Bake for 25 to 30 minutes, or until pastry is golden brown. Let cool for at least 20 minutes for serving.
