This easy-to-prepare recipe from the *Dinner Party* cookbook of the Australian Women's Weekly cookbook series is part of a menu titled *Slimmers Delight* & turns ordinary cod fish fillets into an elegant masterpiece! *Enjoy* (Time does not include time to marinate fish fillets)

30 ounces cod fish fillets (6 5-oz & relatively thin fillets)
12 baby new potatoes (washed & left unpeeled)
1/4 cup olive oil
2 garlic cloves (crushed)
1 teaspoon cracked black pepper
2 tablespoons lemon juice
2 teaspoons fresh dill (chopped)

Steps:

  • Combine all marinade ingredients in a bowl, mix well & set aside.
  • Remove any skin from fish fillets. Place fillets in a shallow dish & pour the marinade over them. Cover & refrigerate at least 4-6 hrs or overnight.
  • When ready to assemble dish, preheat oven to 400°F.
  • Drain marinade from fish fillets & reserve. Pat top side of fish fillets dry w/paper towels & place them in 9x13 in baking dish sprayed w/PAM.
  • Using the slicing blade of a food processor, a mandoline or a very sharp knife ... slice the potatoes into uniformly thin slices no thicker than 1/8-inch.
  • Overlap potato slices on the surface of the fish fillets & drizzle reserved marinade over the "potato scales".
  • Bake fish fillets (uncovered) for 20-25 minutes or till tender (If the potatoes & fish appear to be done & you want a crisper texture or browner color, put the fillets under your broiler for a cpl of minutes).
  • NOTES: 1) The thickness of the fillets & potato slices + the tendency of oven temps to vary can cause cooking times to vary as well -- 2) Although written for the use of cod, IMO other white fish varieties will also work well (sole, flounder, snapper, haddock, etc) -- 3) Patting the tops of the fillets dry is very important as it prevents the potato slices from slipping out of position once cooking begins.

90 g butter
1 onion, chopped finely
1 cup long grain rice, washed
2 1/2 cups chicken stock
1/2 cup dry white wine
salt and pepper

Steps:

  • Heat butter in a pan, add onion and cook gently until onion is tender and lightly golden.
  • Add rice and stir for 3 minutes.
  • Add 1 cup of hot chicken stock to pan and stir until almost completely dissolved.
  • Add remaining stock & wine, bring to the boil, reduce heat & simmer gently for approximately 10 mins until rice is tender.
  • Season with salt & pepper & serve.

12 ounces smoked salmon (or trout)
3 cups bibb lettuce (or iceberg variety, shredded)
6 ounces alfalfa sprouts
1 medium carrot (grated)
3 green onions (finely chopped)
6 marinated artichokes (jar variety in pieces, chopped)
6 pita pockets (sml size)
1/4 cup mayonnaise

Steps:

  • Remove any skin or bones from salmon (or trout) & flake or chop the flesh.
  • Combine salmon (or trout) w/lettuce, sprouts, carrot, shallots & artichokes in a lrg bowl.
  • Cut pita pockets in half, spread ea half w/1 tsp mayo & stuff w/equal amts of the salmon (or trout) mixture. Done!
  • NOTE: Salmon (or trout) mixture can be made several hrs b4 filling pita pockets & kept stored in refrigerator (covered).

1 lb fresh asparagus (May sub canned & amend prep accordingly)
3 tablespoons butter
2 sticks celery (chopped)
1 medium red bell pepper (chopped)
1 lb prawns (uncooked, shelled & chopped)
2 tablespoons flour
1 1/4 cups milk
1 cup cheddar cheese (grated)
1 1/2 cups white breadcrumbs (stale)
5 tablespoons butter (melted)

Steps:

  • Preheat oven to 375°F.
  • Cook asparagus till crisp-tender, cut into 1-in pieces & set aside.
  • Melt 1st butter amt in med saucepan. Add garlic, celery, bell pepper & prawns. Stir constantly over med-heat for about 3 min or till prawns are tender.
  • Add flour, stir for 1 min & remove from heat.
  • Gradually stir in milk & return to heat, stirring constantly for 3 min or till mixture boils & thickens.
  • Remove from heat & stir in asparagus + half the cheese. Spoon mixture into shallow oven-proof dish.
  • Combine remaining cheese, breadcrumbs & 2nd butter amt in bowl & sprinkle evenly over the prawn mixture.
  • Bake for about 20 min or till golden brown. Allow to cool slightly & serve.

60 g butter
125 g tasty cheese
2 tablespoons chopped chives
1/2 cup milk
1/2 cup water
1 egg yolk, lightly beaten
1 teaspoon garlic salt

Steps:

  • Sift flour and garlic salt into bowl.
  • Rub in butter till looks like breadcrumbs.
  • Add cheese and chives.
  • Stir in enough milk and water to make a sticky dough.
  • Turn dough onto lightly floured surface.
  • Knead till smooth.
  • Shape into 4 portions in a bread roll shape.
  • Cut 3 slits across top.
  • Place on greased oven tray.
  • Brush top of rolls with egg yolk.
  • Cook at 190 degrees celsius /375 degrees fahrenheit.
  • Cook for 20 - 25 minutes till lightly browned and cooked through.

This is a very simple yet elegant dinner when served with some steamed broccoli, small wedges of baked squash, a tossed salad and french bread. the sauce keeps for a few days and is great on other seafood, or just eaten out of the bowl with a spoon. Don't let the anchovy paste scare you....I hate anchovies, but it gives the sauce a great flavor, you don't even know it's in there. I had this at a friends house when I was in Oregon on business, and she used fresh salmon filets. it was sooooooooo good, so I begged her for the recipe.

1 -2 lb salmon fillet
1/2 cup dry white wine
1/2 cup olive oil
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon thyme
1/4 teaspoon marjoram
1 tablespoon fresh parsley, chopped
1 cup spinach leaves
3 sprigs fresh parsley
1/4 cup watercress leaf
2 tablespoons lemon juice
2 tablespoons green onions
1/4 teaspoon dry mustard
1 teaspoon dry basil
1 teaspoon anchovy paste
3 dashes Tabasco sauce
1 cup mayonnaise
1/4 cup capers, rinsed and drained

Steps:

  • Mix wine, olive oil, lemon juice, salt, pepper, thyme, marjoram and 2 tbsp parsley together and pour over salmon filets.
  • marinate at least three hours, turning occasionally.
  • bake salmon at 400 degrees for 15-20 minutes.
  • while your salmon filets are marinating, make the sauce.
  • place spinach, remaining parsley, watercress and green onions in a food processor and blend will.
  • add lemon juice, mustard, basil and tabasco and blend again.
  • add mayonnaise and blend.
  • fold in capers.
  • taste for seasoning and refrigerate until chilled.
  • NOTE~~~~PREP TIME INCLUDES MARINATING TIME.
