EASY MASOOR DAL
This Vegan Masoor Dal is a simple and easy lentil recipe made with split pink lentils (dhuli masoor dal). It goes well with roti or rice.

Steps:
- Pick and rinse the pink lentils (dhuli masoor dal) well.
- Pressure cook the pink lentils in a 2-litre pressure cooker with 1.5 to 1.75 cups water, till they become soft and mushy. Pressure cook for 5 to 6 whistles on medium flame.
- When the lentils are cooked, beat with a wooden spoon or wired whisk lightly.
- Keep the cooked pink lentils aside. If lentils are not cooked, then add some more water and pressure cook for a few whistles more.
- In another pan or pot, heat oil. Fry the cumin seeds till golden.
- Then add onions and fry till they are light golden.
- Add chopped ginger and garlic. Stir and fry for 10 to 15 seconds or till the raw aroma of ginger and garlic goes away.
- Add green chilies and red chilies. Stir.
- Add all the dry spice powders one by one including asafoetida (hing) and stir.
- Add the tomatoes and fry till the oil separates and the tomatoes become soft.
- Add the cooked pink lentils. Pour 1 to 1.5 cups water. You can adjust the quantity of water as required.
- Add salt and stir. Simmer for 6 to 7 minutes more on a low or medium flame till you get the desired consistency.
- This dal is neither thick nor thin and has a medium consistency.
- Lastly add kasuri methi and simmer for 1 minute.
- Towards the end add lemon juice and 1 tablespoon chopped coriander leaves and stir. Switch off the flame.
- You can also garnish the dal with coriander leaves if you want while serving. Serve this masoor dal hot with steamed basmati rice or roti or chappati.

- Rinse lentils thoroughly and place in a medium saucepan along with ginger, turmeric, salt and cayenne pepper. Cover with about 1 inch of water and bring to a boil. Skim off any foam that forms on top of the lentils. Reduce heat and simmer, stirring occasionally, until beans are tender and soupy.
- Meanwhile, in a microwave safe dish combine oil, dried onion and cumin seeds. Microwave on high for 45 seconds to 1 minute; be sure to brown, but not burn, onions. Stir into lentil mixture.

- Masoor Dal is one the most commonly consumed Indian delicacy that goes well with rice and chapati. Here's an easy recipe of Masoor Dal, which will give this usual dal a nice innovative twist. To prepare this dish quickly and save time, soak the dal for an hour, then wash and rinse properly. Drain the excess water.
- Take a pressure cooker and add dal with two cups of water and a pinch of salt. Pressure cook it till turns soft and mushy and keep aside. Take another pan or pot, heat oil or ghee. Fry cumin seeds till they become brown, similarly, add onions and fry for a while.
- Stir and fry for a few seconds, before adding green chilies and stir again. Add the tomatoes and fry till they become soft. To make this delicacy more flavoursome add some finely chopped garlic, this will add a piquant aroma to this dish, fry till the mix turns golden
- Now add the cooked dal from the cooker and pour about two cups of water. Add salt, stir and keep on low flame for about 10 minutes till it settles down nicely and blends well with all the ingredients. If you want to add some tangy flavour to this dal you can squeeze some lime juice, you can add some amchoor powder as well to make it more spiced up.

Steps:
- Bring dal to boil in a large stock pot with 4 cups water and bring to a boil.
- When it comes to a boil, there will be a gray surface scum.
- Skim this away and then add the ginger and turmeric.
- Turn the heat low and simmer partially covered for 1 hour.
- When done, a thick puree settles on the bottom.
- Make sure you stir the dal several times in the last 15 minutes.
- Heat the oil in a small skillet and when it smokes add the pinch of asafetida.
- One second later, add the cumin and peppers.
- Cook until the peppers until both sides turn dark (a few seconds).
- Pour the oil spice mixture into the dal with the salt and stir for 1 minute.

Steps:
- wash dal in a few changes of water, until the water runs clear.
- soak in cold water for about half hour
- drain.
- place in pot with water, salt, red chilli powder and cook for 20 to 30 minutes or until dal is very tender.
- when dal is tender it should resemble a creamy soup (you might have to add more water if the its not creamy and cook for furtur 10 to 20 minutes).
- For the temper - heat oil in a frying pan add the garlic and fry until light brown , at this point add cumin and fry for few seconds and pour over the lentil and stir and cook for few minutes.
- cover and take off heat.
- serve hot.
- garnish with coriander and green chillies.
- Sprinkle a little garam masala on top.
- serve with boiled rice or chapatis.
