ONE-POT MEDITERRANEAN CHICKEN AND FARRO
This one-pot chicken and farro dish is packed with Mediterranean flavors, marrying briny olives, tangy feta and sweet sun-dried tomatoes.

Steps:
- Preheat the oven to 400 degrees F.
- Heat a large braiser or large Dutch oven over high heat and add the olive oil. Pat the chicken thighs dry and season with salt and pepper on both sides. When the oil is hot, add the chicken thighs, skin-side down, and cook, undisturbed, until golden brown, 6 to 8 minutes. Flip the chicken, cook for 2 more minutes and remove to a plate. (The chicken will not be cooked through at this point.) Pour off the excess fat from the braiser, leaving behind 2 tablespoons of it.
- Reduce the heat to medium high, add the onions, garlic and red pepper flakes and cook, stirring often, until softened, about 3 minutes. Season with salt and pepper. Stir in the farro until combined. Add the wine and cook for 1 minute, scraping up the brown bits from the bottom with a wooden spoon. Add the chicken stock and bring to a simmer, about 2 minutes. Stir in the sun-dried tomatoes and olives. Place the chicken on top, skin-side up, in a single layer and add any residual juices from the plate.
- Cover the braiser and bake until the farro is tender, most of the liquid has evaporated and the chicken is cooked through, 30 to 35 minutes.
- Meanwhile, add the lemon zest, feta and dill to a small bowl and toss to combine.
- Remove the braiser from the oven and squeeze the juice of the zested lemon over the top of the dish. Sprinkle with the feta and dill mixture and serve.
GRILLED HERB CHICKEN AND ASPARAGUS
Steps:
- 1.Place chicken in large resealable plastic bag. Add ¼ cup of the marinade; turn to coat well. Place asparagus in a second resealable plastic bag. Add remaining ¼ marinade; turn to coat. Refrigerate chicken and asparagus 30 minutes.
- 2.Remove chicken and asparagus from marinade. Discard chicken marinade; reserve asparagus marinade.
- 3.Grill chicken over medium heat 6 to 7 minutes per side or until cooked through. Grill asparagus 4 minutes or until tender-crisp, turning occasionally. Brush chicken and asparagus with reserved marinade. If desired, grill lemon slices 30 seconds per side. Serve chicken with asparagus. Garnish with lemon slices.
THE BEST GRILLED ASPARAGUS
We found that the best way to grill asparagus is to lay it right on the grill grates at an angle--no foil packet or grilling basket necessary. We jazzed ours up with tangy, creamy feta and fresh mint. To get a good char, be sure to use medium-sized asparagus -- no pencil-thin stalks here!

- Prepare a grill for medium heat. Chop the tough, woody ends off the asparagus (about 1 inch) and peel another inch of the stalks.
- Whisk the lemon juice, olive oil, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper together in a large bowl. Add the asparagus and toss until well coated.
- Put the asparagus on the grill at an angle so the stalks don't fall through the grates. Grill, flipping halfway through cooking, until the asparagus begin to char, the pointy ends start to crisp and the stalks are just tender, 3 to 5 minutes. Remove to a platter and sprinkle with the feta and mint.
MARINATED CHICKEN OVER FARRO AND GRILLED ASPARAGUS
Steps:
- in a small mixing bowl add the zest of a whole lemon and 2 cloves minced garlic. Add 2tbs oil. Add plenty of salt, pepper and dried herbs. Mix well. Marinate the Chicken: In a small sealable plastic bag combine whole chicken breast with 1/3 of the marinade. Add the simple syrup and mix the bag to coat evenly. Seal bag and let it rest in the fridge for 1 hour At this point, you'll want to add the juice of 1 whole lemon to the marinade. Marinate the Asparagus: In a tupperware container add the asparagus and half the remaining marinade Seal Tupperware and let it rest for 1 hour For the Farro (30-45 min to prep and cook): In a small mixing bowl combine the bellas and chard, coat with the remaining marinade. In a medium saucepan bring the broth to boil Add herbs or spices to taste. While the broth is heating up, Lightly oil a large pan and place on medium heat. Add Onion and saute for 5 minutes until they begin to soften. In a Grill-Pan grill the asparagus till tender and plate (in an attempt to keep warm this can be done toward the end) When the broth has started to boil, add the farro and cook on medium heat till the broth has evaporated. While the farro cooks, turn up the heat on the onions. Add the contents of the mushroom bowl and stir the pan well. Saute on medium high for 5 minutes till caramelized and well browned. When the broth has evaporated Farro should be tender but not too soggy. Add the cooked farro to the mushroom-onion pan. Add some oil and saute the faro till it has slightly browned. Preheat the oven to 450 Lightly oil that grill pan and get it real hot. Sear the chicken for 5 minutes per side. pop it in the oven (make sure your pan is ovenproof) bake for 10 minutes (or until chicken is fully cooked) plate it with some daaaank garlic bread on the side. you might want a balsamic reduction to dip it in...
MARINATED GRILLED ASPARAGUS
Great to throw on the grill with your choice of meat. Cook time includes time to marinate the veggies.

- Remove the bottom third of the asparagus (woody parts of the stalk) and discard. Place asparagus in casserole dish.
- Add remaining ingredients.
- Marinate at least 1 hour, turning frequently.
- Place skewers (make sure you soak them in water) through the middle of the asparagus spears, or place spears in a greased grill basket.
- Grill over hot coals until tender but still crunchy.
- Garnish with diced red bell peppers and lemon slices, if desired.

Steps:
- Snap off tough ends of asparagus and wash well through 2-3 changes of cold water.
- Combine all ingredients in a large zip-top plastic bag, seal and marinate for 30-60 minutes.
- Preheat grill on high heat.
- Remove asparagus from bag (discard marinade) and place on preheated oiled grill rack.
- Grill 5 minutes on each side or until asparagus is done.
GRILLED ASPARAGUS AND FARRO SALAD

- Preheat a grill to high. In a large bowl, toss together almonds, lemon zest, dill, and scallions; set aside.
- Drizzle asparagus lightly with extra-virgin olive oil and season with salt and pepper; grill, turning once, until just tender, 4 to 6 minutes.
