- In a small bowl whisk together olive oil, lemon juice, Dijon mustard, honey, Worcestershire Sauce, paprika, oregano, garlic powder, onion powder, thyme, and black pepper. Add salt to your preference.
- Pour the marinade into a large storage bag along with the drumsticks. Place in fridge for at least 30 minutes up to overnight.
- Preheat oven to 425°F. Line a baking tray with aluminum foil and spray with non-stick cooking spray.
- Remove chicken from the marinade, pat dry. Place chicken on the prepared baking sheet. Bake in center rack of oven for 20 minutes. Turn chicken and bake another 20-25 minutes. Internal temperature of chicken should be 165°F when cooked through.

- Mix all the ingredients in a plastic bag and marinate the chicken overnight. It helps to knead the bag every now and then to make sure the chicken is completely covered.
- Preheat the oven to 140°C/fan 120°C/285°F/gas mark 1.
- Arrange the drumsticks in a dish in a single layer. Drizzle a bit of marinade over them to keep them moisturized. Cover with foil and bake in the oven for 40 minutes.
- Take the chicken out of the oven and increase the temperature to 180°C/fan 160°C/350°F/gas mark 4.
- Remove the foil and pour a bit more marinade to the chicken and make sure the drumsticks are well-coated.
- Return the chicken to the oven and bake for another 20 minutes, turning several times, until the chicken is tender and nicely glazed.
- Let the chicken rest for a few minutes before serving.

- Pierce a few holes in the chicken wings with a skewer to help the marinade infuse into the flesh.
- Put all the marinade ingredients into a big ziplock bag, then add the chicken pieces to the bag. Massage the bag to make sure all the chicken gets well coated in the marinade. Leave for the flavours to infuse for at least half an hour (overnight is even better!).
- Preheat oven to 180C/350F. Line a rimmed baking tray with foil or baking paper and put a metal rack on the tray. Spray the rack with oil.
- Shake any excess marinade off the chicken (reserve the marinade) and place on the rack (skin side up if using wings or thighs). Bake for 35 to 55 minutes or until sticky and golden and the juices run clear when the chicken is poked.
- Mix the tablespoon of honey into the reserved marinade. Then turn and baste the chicken all over 2 to 3 times during cooking.
- Pile the cooked chicken pieces into a bowl. Drizzle with the juice of ½ a lemon and garnish with lemon slices and the feta and olives, if using.

- Clean them drumsticks. Sometimes they have small pieces of bones and fat which you need to remove.
- Put all the drumsticks in a large plastic bag.
- Make a batch of BBQ marinade. We have made a very easy recipe for BBQ marinade which only requires a few and simple ingredients. Find it on our blog.
- Pour most of the barbecue marinade into the bag with the chicken. Save some of the marinade for later. Close the bag and shake it so that all the chicken is covered by marinade.
- Put the bag, with the chicken, in the fridge and leave it for a couple of hours - we normally prepare the chicken the day in advance so that it marinate for about 24 hours. If you are busy you can skip this step.
- Fire up the grill and grill the drumsticks for about 15-20 minutes. Pour the last of the barbecue marinade over the chicken. Alternatively, you can cook them in the oven at 200 C (400 F) for about 30 minutes.

- Combine the balsamic vinegar, oil, garlic, salt, pepper, and oregano into a gallon sized ziplock bag or a mixing bowl and mix well.
- Place the uncooked chicken into the marinade. Zip up the bag and carefully shake it around until the marinade coats the chicken evenly. If using a bowl, you can use tongs to mix the chicken into the marinade.
- Place the marinated chicken drumsticks into to fridge to sit. Mix the chicken around in the marinade every few hours. Allow the chicken to sit in the marinade for 24 hours if possible.
- Preheat the oven to 425°F.
- Line a baking sheet with parchment paper (optional for easy clean-up) and place a wire rack on top.
