Slow-grilling over indirect heat keeps this chicken moist and tender. Giving the drumsticks a long rub with seasonings makes them taste great. Always baste at the end of grilling to prevent the legs from burning.

2 tablespoons brown sugar
2 large cloves cloves garlic, chopped
2 teaspoons salt
1 teaspoon black pepper
10 chicken drumsticks
2 tablespoons vegetable oil
½ cup finely chopped onion
¾ cup ketchup
2 tablespoons white wine vinegar
2 tablespoons Worcestershire sauce

Steps:

  • Mash brown sugar, garlic, salt, and pepper together in a mortar and pestle to form a paste. Spoon paste into a resealable plastic bag. Add the chicken, coat with the paste, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours to overnight.
  • Heat oil in a small saucepan over medium heat. Cook and stir onion in hot oil until softened, about 5 minutes. Stir ketchup, vinegar, and Worcestershire sauce into onions; bring to a simmer and cook until flavors blend, about 10 minutes.
  • Preheat grill for medium heat and lightly oil the grate. Remove chicken from bag and discard marinade.
  • Cook chicken on the preheated grill until lightly browned on all sides, about 1 minute per side.
  • Turn off one of the grill burners or move the coals and move chicken so there is no heat source directly below it.
  • Baste drumsticks with the sauce and cook another 10 minutes; turn again and baste chicken with sauce. Continue to grill drumsticks until juices run clear, 10 to 15 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

3/4 cup milk

3 tablespoons black pepper
5 cups all-purpose flour
1 tablespoon onion powder

1 4-pound chicken, cut into pieces
Nonstick cooking spray
1 cup (8 ounces) favorite barbecue sauce
1 can (22 ounces) BUSH'S® Bourbon and Brown Sugar Grillin' Beans

Steps:

  • An American classic with a little twist from below the South, this crisp and smoky chicken is sure to become a barbecue favorite.
  • In a large bowl, whisk together the eggs, water, milk, 2 tablespoons of garlic salt and 2 tablespoons of pepper until smooth.
  • In a large flat pan stir together the flour, remaining tablespoons of garlic salt, pepper, onion powder and mesquite seasoning.
  • Fill a large heavy skillet or wok halfway full with oil and heat over medium-high heat to 365 degrees Fahrenheit on the barbecue grill or side burner. Use tongs to dip each chicken piece into the egg mixture, then into the flour mixture, back into the egg mixture and back into the flour mixture again. Set on a platter until all pieces are coated.
  • Cook the chicken in batches, do not overcrowd the skillet. Brown on each side.
  • Coat a large baking dish generously with nonstick cooking spray then arrange the fried chicken pieces in the pan. Pour the barbecue sauce over the chicken.
  • Bake in the oven at 365 degrees Fahrenheit for 10-15 minutes in the barbecue sauce, until the sauce has bubbled and caramelized and a meat thermometer inserted into the thickest part of the chicken breast has reached an internal temperature of 165 degrees Fahrenheit.
  • Serve with one can (22 ounces) BUSH'S® Bourbon and Brown Sugar Grillin' Beans.

2 cups cider vinegar
1 cup canola oil
1 large egg, lightly beaten
2 tablespoons hot pepper sauce
1 tablespoon garlic powder
1 tablespoon poultry seasoning

1 broiler/fryer chicken (3 to 4 pounds), cut up

Steps:

  • In a large saucepan, combine the first eight ingredients. Bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, for 10 minutes, stirring often. Cool., Pour 1-2/3 cups marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate overnight, turning occasionally. Cover and refrigerate remaining marinade for basting., Prepare grill for indirect heat, using a drip pan. Drain and discard marinade from chicken. Place skin side down over pan. Southern Barbecued Chicken (Grill, Broiler or Oven) image

I got this recipe from a booklet from Domino Sugar with recipes using their brownulated sugar, and according to the booklet, this type of sauce, which does not have a tomato base, is a Southern tradition. It can be made on the grill, in the oven, or using a broiler. I think it's very good, and I hope you enjoy it. Time does not include marinating, and is for broiling or marinating. Baking time is included in recipe directions. NOTE: I prefer not using the marinade for the sauce, so I usually double it and use half to marinade and half when preparing the chicken. But you can just follow the recipe as is, and use the marinade to prepare the sauce if you prefer. If you do not have brownulated sugar (which is a granulated brown sugar) you can substitute the 1/3 cup brownulated sugar with a mixture of 4 tbs. plus 2 tsp. of packed brown sugar mixed with 2 tsp. of granulated white sugar.

1/4 cup butter or 1/4 cup margarine
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
1 lemon, thinly sliced
1 tablespoon Dijon mustard
1 garlic clove, minced
1/8 teaspoon hot sauce
1 tablespoon cornstarch
3 -4 lbs chicken pieces (with or without skin)

Steps:

  • SAUCE: Combine all the sauce ingredients except for the cornstarch and place in a shallow dish or plastic bag.
  • TO PREPARE THE BARBECUED CHICKEN.
  • Place the chicken in the marinade in the pan or plastic bag and make sure the chicken is coated with the marinade; cover the pan or seal the plastic bag, and place in the refrigerator for several hours or overnight.
  • When ready to cook, remove chicken from marinade.
  • Pour the marinade into a saucepan and blend in the 1 tablespoon cornstarch.
  • Cook on medium to high heat, stirring very often, until thickened and smooth.
  • Cook the chicken on a grill or under the broiler, about 4 inches from the heat, for 10-15 minutes on each side (depending on thickness), turning once, or until cooked through, basting often with the sauce.
  • Or you can bake the chicken in the oven at 350°F for 1 to 1 1/2 hours, basting often, and glazing briefly under the broiler once it's done.
  • Serve any remaining sauce along with the chicken.

1 (4 lb) whole chickens, cut up (6-8 pieces)
11 1/2 ounces tomato puree
1 cup cider vinegar
1/2 cup canola oil
1/3 cup Worcestershire sauce
2 1/2 ounces brown sugar
4 tablespoons molasses
2 tablespoons French mustard
2 -3 garlic cloves, minced
4 tablespoons lemon juice

Steps:

  • In a saucepan, combine tomato puree, cider vinegar, canola oil, Worcestershire, brown sugar, mustard, garlic and lemon juice.
  • Stir to combine.
  • Bring to a simmer and continue to simmer over low heat 15-20 minutes, stirring often.
  • Let stand for 1 hour to cool and allow flavors to blend.
  • Heat barbecue to a moderate heat and oil the bars.
  • Lightly sear the chicken pieces on all sides over direct heat, about 2 minutes each side,.
  • Remove to a plate.
  • Place half the sauce in a small pan and place by the barbecue.
  • Place a sheet of silicon paper over the bars and prick at intervals between the runs to allow ventilation.
  • Place the chicken onto the baking paper and brush all pieces with the sauce.
  • Cover the barbecue with the lid and cook for 5 minutes.
  • Repeat this process every 5 minutes for 40-45 minutes until chicken is rich brown in color and cooked through.
  • If chicken is cooking too fast lower heat.
  • Heat remaining sauce in a small saucepan on the barbecue.
